1 leek sliced (white area only)
1/2 head cauliflower
1/2 tsp garlic
2 tbsp oil or oil and butter mixed.
1 shrimp boulion
salt & pepper to taste
1/4-1/2 c half n half
2 c water
How To Prepare:
saute the leek in the oil till transparent. Dont let it become dark. Add the cauliflower, salt, peper,boulion cube and water. Cook until cauliflower is done. taste for flavor. If it needs something more add the garlic. (some dont like the garlic). add the half n half and let simmer 5-10 minutes. check for flavor again. add more salt and pepper if needed. Serve warm.

Positive aspects of the product (pros):
This definately reminded me of my usual homemade potato soup (minus the carrots Very flavorful, and there are so many other things that you can do with it (onions instead of leeks, add celery, throw in some bacon bits or chopped up ham towards the end, add a sprinkling of cheese) After adding the half & half (or you can use heavy cream), I took out about half of the soup and pureed it in my blender, to make it have a more creamy texture. I also added fresh chives.
