You could easily make this a little thicker than I did, I was making enough for DS and I to have a BLT. This would be good with my Spicy LC chicken tortilla soup. If I had mushrooms in the house I would have used them. This recipe could be easily tweaked with your own favorites. It's a one pot or pan dish and so good! You could impress any dinner guest with this and a side salad. I put my leftover coffee in a tupperware like container in the fridge.
