I long for some beans and thought about how much I love Popeye's red beans. Of course, a big NO NO on any low carb diet. So I fidgeted around to see if I could come up with a suitable alternative using the beloved Eden's black soy beans. Here it is. Please let me know if it works for you or if you have suggestions on how to improve this. I don't know how to calculate the carbs, but perhaps someone else does. Popeye's Red Beans 1/4 C bacon grease 1/2 vidalia onion 1/4 red pepper 1/4 yellow pepper 2 cans organic soy black beans, drained of liquid 1/4 tsp cumin 1/4 tsp garlic powder 1/8 C liquid smoke 2 C chicken broth salt and pepper to taste Drain beans. In pot heat bacon grease on medium heat. Add onions and peppers and begin to saute. Throw in beans. Pour in chicken stock. Add cumin, garlic powder, and liquid smoke. Reduce heat to low and simmer for about an hour. After an hour or so, check and stir ingredients. Taste test. Add salt and pepper. Continue cooking about another 1/2 hour. You want the beans to be soft, and this takes some time with the organic soy beans. Remove about 3/4 of the beans from the pan and put them through a food processor or blender to break them down to a smooth consistency. It is your preference on how much to process and how smooth to make the beans. Add them back into the pot with the remaining 1/4 of the beans. Continue to cook about 15 more minutes. Add more stock if they become too thick. Test the spices and seasonings. I had to add salt. When serving I added a dash of red hot, it was perfect!! Hope you like it! I live at 7,000 feet altitude and this recipe is very reliable here; you may have to adjust. I make this bread nearly weekly for my daughter, Emily, who suffers from insulin resistance. She loves this bread and uses it for toast and sandwiches. It is moist and dense, but not crumbly. I slice it, separate the slices with wax paper and freeze the entire loaf so Emily or her mom can take a slice at a time. I do not know how well it would keep without refrigeration or freezing. All the “special” ingredients are from netrition.com I do this all without stopping, but I do things in this order. I measure most ingredients with a kitchen scale; if you put your bowl on the scale and re-zero the scale for each ingredient, it goes very quickly. Step One: 2 t yeast 1 T granular sugar 1 1/2 cups warm tap water (about 110 degrees) Mix yeast and sugar into water and set aside to proof while you work. It should bubble while you work. Step Two: 2 whole eggs, uncracked Place the eggs in hot tap water to warm (I assume you got them from the fridge and not from under a hen). Step Three: Mix together 120 grams flax seed, ground (I grind my own in a blade coffee grinder, but you can buy it ground) 50 grams “Oat Fiber 500” (from Netrition) 130 grams “Wheat Protein Isolate 8000” (from Netrition) 180 grams “Carbalose Flour” (from Netrition) 2 t salt Step Four: 3 T butter (I use salted) Place the butter (cut in pieces) in the microwave and melt until liquid. Crack the two warmed eggs into the bowl with the butter and thoroughly mix together with a fork. Step Five: Put egg-butter mix into the bread maker. Put bubbly yeast into the bread maker. Put dry ingredients into the bread maker. Start it up. Bake it. Slice it. Eat it. Our bread machine. It’s old. It wasn’t expensive. It isn’t programmable. But it did tell me what the cycle times are for the “Wheat Large Med Crust” cycle I use. I hope this helps. Slow knead: 6 min Fast knead: 25 min Rise: 79 min Punch (motor turns): 15 sec Rest: 30 min Shape (motor turns): 3 sec Rise 2: 45 min Bake: 55 min. rockymtnrick Thu, 24 Jan 2013 19:05:58 -0800 Meet The Press Sunday Brunch Chili http://www.lowcarbfriends.com/recipereview/showproduct.php?product=4938

by: nomorepepsi

Description: This is my Sunday Brunch low-carb chili... perfec on to simmer on the stove while you watch the pundit shows :) nomorepepsi Sun, 13 Jan 2013 07:07:02 -0800 Chocolate_Spritz_Cookies http://www.lowcarbfriends.com/recipereview/showproduct.php?product=4937

by: MerryKate

Description: 1/2 cup butter at room temperature
 1 egg
1/4 cup splenda 1/4 cup erythritol 3 packets Pure stevia 2 tsp vanilla extract 3/4 cup Trader Joe's almond meal
 1/4 cup coconut flour
2 TB dark cocoa powder 1/2 tsp baking soda
 1/4 tsp salt
2 pieces (30 g) Theo 86% dark chocolate 1. This is my latest experiment with microwaveable sandwich bread and it made an outstanding tuna sandwich today. Not as filling as my last chia bread, but that one was almost too filling with the chia AND flax. This “white bread” version has a much softer texture, too. It’s not crumbly at all either. I eliminated the flax meal from the other recipe and opted for almond flour instead. This quick bread is suitable for all those who have reached the nuts and seeds rung of the Atkins OWL carb ladder. If you are Paleo-Primal but occasionally allow yourself protein powders, this would be OK for you as well. To make your chia gel, mix 1 part ground chia seed with 9 parts water and shake several times intermittently over 10-15 minutes. It will thicken right up. Store leftover gel in the fridge for about 1 week. buttoni Sun, 02 Sep 2012 12:30:17 -0700 It's Just Like Chocolate Cake Batter! http://www.lowcarbfriends.com/recipereview/showproduct.php?product=4923

by: LisaGergets

Description: This tastes exactly like chocolate cake batter! Just add the mayo and sour cream to taste, my measurments may be a little off, but keep it around 1 part mayo to 2 part sour cream. *~Sweetheart~* Thu, 23 Aug 2012 18:57:34 -0700 Protein Jello Shots http://www.lowcarbfriends.com/recipereview/showproduct.php?product=4921

by: MINTYSHAKE

Description: A sweet treat, hold the guilt! So i decided to experiment, and i have found success this recipe is absolutely delicious, simple, and quick! ---I did not have parchment paper but i had a casserole dish and it worked perfectly( spray with pam for easier removal only if you are using cass. dish ) DoniaM22 Fri, 10 Aug 2012 05:14:36 -0700 Protein Pudding http://www.lowcarbfriends.com/recipereview/showproduct.php?product=4919

by: hotstang_46

Description: Protein Pudding. (Kinda like Caesar dressing, only, it's more greener. ;) ) I saw this recipe in the paper this week and just had to try it!! Oh my gosh it's soo good, it's supposed to just go on romaine but I made it and now I'm thinking of all sorts of things to put it on.. I want to try it on eggs, maybe on some meat or fish... oh and I want some more on another bowl of salad RIGHT NOW... (Ok, I'm listing the ingredients here because the next section won't let me start new lines.) 1 c. mayonnaise 1 c. sour cream 1/2 c. fresh chives, chopped 1 c. fresh scallions, chopped 1/2 c. fresh tarragon, chopped 1/4 c. fresh parsley, chopped 1 c. fresh basil, chopped 2 cloves garlic, chopped 2 tsp anchovy paste* salt & pepper to taste* heavy cream, if needed Place all ingredients in a blender or food processor and puree until smooth. Adjust thickness by adding heavy cream. I couldn't get all the herbs fresh. So I got what I could, and for the rest I looked online & used this conversion: 1/2 cup fresh herbs = 8 tablespoons dried. (Also, 8 tbsp = 3tsp.) It came out pretty thin for me, no way would it need to be thinned down with hc. But maybe that will vary with different brands of sc or mayo? Also, I cannot imagine adding extra salt. It's already waayy salty! Next time, I'll probably use only 1 1/2 tsp of anchovy paste, instead. fiddlejen Sat, 28 Jul 2012 17:53:20 -0700 Savory Cream Cheese Muffins http://www.lowcarbfriends.com/recipereview/showproduct.php?product=4914

by: Gabby1

Description: I have been waiting to see a post for savory cream cheese muffins but never saw any specific recipes so I decided to join LCF and post my own. I like it even better than the sugary version. I use Truvia in all of my recipes, but i suppose you could use something else. I love Truvia, it never gives me an after taste and it has such a great flavor. Most importantly its not a chemical sweetener, which i have always stayed away from. You can also make this chocolate ice cream by adding 2-4tbsp (depending on how chocolaty you like it) of cocoa powder to some of the milk in a saucepan on med heat, stirring until its dissolved. The warmth helps the cocoa dissolve so you dont get clumps.
