Thanks Gail:-)
Hi Wish! I do track my carbs on an app on my phone. I try to do 40 carbs. Im sorta doing a mix of Atkins and Paleo. But i see you ladies have such great luck with the Atkins and can you tell me more about this Fat Fast? Im thinking of trying it.

I don't weigh myself every day. I feel discouraged since water weight changes everything. I do it every 2 weeks or so. I am down 6 more lbs since a couple of weeks ago. I'll take it:-)

Ok I need to vent. So i was having a conversation with a coworker and my boss at lunch today. The coworker has a 7 month old baby. She was saying how she still needs to lose the baby weight. Asking us how long does it normally take. Then my boss steps in and says "well over 5 yrs since Melissa hasn't lost it yet" Are you kidding me? Was that some sort of harrassment? I feel sad from this comment. I know and Im trying but she was kicking me while i was down:-(

Your boss is a jerk. I wish I could go to Washington DC and punch her in the face. Sorry, but I can tell by your avatar that you are absolutely beautiful. Moreover, you are a super nice person with good manners -- the type of person who is always kind. You don't deserve that kind of treatment. Also I cannot a woman would say that to another woman.

But don't let her rude comment discourage you. You are doing really well on low carb. And even if you are not at your ideal weight in your mind, you are gorgeous. Your husband loves you and thinks you are beautiful. You are a great wife, mom and professional and you ARE losing weight to boot.

One more thing -- I know you have to continue to work with your boss so you probably can't get and stay angry with her. Just ignore her foolishness and don't take it personally. When people make rude comments like that, it is about THEM and their issues - not about you. Down deep, she must feel some jealousy towards you OR she is angry about something and is taking it out on you. Really, you just have to feel sorry for people like that. She is missing a sensitivity chip for sure.

Oh and when you go to the Italian restaurant tonight, if you want to stay on low carb, you may find that you have more options that you think. Our favorite place here makes their dishes without pasta if you request it -- like they have seafood or chicken dishes that are pasta based and they will just give you extra protein or veggies in lieu of the pasta. Also, you can ask them for grilled chicken or meats. Usually salads and antipasto are perfectly low carb too. Also, chicken or veal marsala is a good option.

That is harsh! Ugh...you controlled yourself well. It always hurts when people put things like that out there. Like WE don't know already that we are overweight. Like WE don't see ourselves in the mirror. Nothing like re-emphasizing our weaknesses. In my mind, I already think people feel this way about me, but it is still always shocking when it is vocalized. Shame on her. And, don't fret, soon enough, she will see your progress, and be jealous. No matter her size. People get jealous that you are improving your life, and they are in a stand still. I have the smallest women at work asking me what I am doing, and wanting to do low carb as well because of the progress I have made. It will happen to you too, it just takes time. That is the perfect vengeance

Thanks ladies for all the support xo!\

Gail-Thank you so much for your support and kind words. I know its hard having to work with that lady everyday. I was just so taken aback by her comments!!!! Glad i have you ladies to vent too:-) I started out really healthy at dinner, salad, mussels, but then i just couldn't resiste the lobster linguini!!!!!

Beth-Thanks for the advice on my Valentines dinner! . I started out strong with mussels and a salad then got the lobster and linguini for dinner. I also had 2 glasse of vino which makes me make bad food decisions. I hope you had a great Vday too:-)

Lisa-Great advice thanks! I hope the next thing my boss says to me about my weight is "wow you looking good":-)

I just made her TUSCANO SOUP - Linda's Low Carb Menus & Recipes. I pulled half out for myself, then added frozen tortellini for the boys in the other half.

Later this week, I am making CHICKEN CORDON BLEU CASSEROLE - Linda's Low Carb Menus & Recipes.

Since I really don't care about calories at all yet, these are perfect for me I used spicy italian sausage and skipped any additional seasoning all together on the soup. With the casserole, I will probably make broccoli as a side dish.

Thats a great idea Lisa to make the soup with the tortellini for the kids and the other half for yourself! That way everyone has a meal! The Chicken Cordon Blue looks good too.

Im going to try Linda's Spinach Lasagna tonight.

Your quiche looks delicious. We are having pretty springy weather here with no snow on the ground (knocking on wood).

Hi Beth,

Glad I could help you with ideas:-) I always love breakfast for dinner.

I used Lisa(greengeeny's recipe)
Original recipe

2 8oz. pks. philadelphia cream cheese
1/2 cup splenda
2 eggs
1/2 tsp. vanilla

Soften cream cheese in microwave. Blend in ingredients until very smooth. Pour into 12 lined cupcake pan. Sprinkle with cinnamon. Bake at 350 for 20 minutes.

I made a really delish dinner last night. Just used what i had in the fridge. Kinda reminded me of chicken caccatiore. I cooked cut up chicken and onions and peppers in a pan. Then added a LC pasta sauce. Made Dreamfields pasta. Mixed everything together and some parm cheese on top. Baked at 375 for like 20 minutes. YUMM. Husband loved it.
