Sandra's Journal
I am 57 but feel like forty lol, I am retired and loving it apart from bits of boredom here and there which I have yet to figure out.

I have done low carb before about seven years ago and got really skinny and felt amazing, my energy levels were amazing as well, but after about six months I slipped into the usual not so good eating....to lose it the next time which was about 18 months ago, I became vegetarian, I adopted the raw food diet and started juicing, it was amazing and my energy levels were off the charts....unfortunately after about 14 months I ended up being anaemic, and also my blood cells became overly large and flat, then I became B12 deficient,
So I am trying low carb again as it worked once before for me and I felt and looked great, I really did enjoy the vegetarian lifestyle and juicing was amazing but what it did to my health wasn't to good at all....I think I would like to get back into incorporating green juices though at some point when I am closer to my goal.
So today I started at 165 and my goal would be around 148 I think, depending on if wrinkles start appearing on my face lol, I will see how it goes.
I am looking forward to keeping a journal so I can keep a log of what I am eating, hopefully it will keep me accountable.

I forgot to post that I walked for nearly three hours yesterday with hubby and the dogs, just to the beach and walked along the seafront, we were lucky that the weather was nice, not warm but around 9 degrees with bits of sunshine, anyway it didn't help me lose any weight lol.
I am wondering if my eating wasn't on plan yesterday which is why I didn't lose any weight, or am I just impatient, or does it take a few days to get into ketosis fat burning, I have read so much over the past month with researching that now I can't remember lol.

So yhea the scales finally decided to move for me, I felt so full this morning when I woke up that I was sure that I had put on weight, so was really shocked to see it had gone down.
Breakfast: yesterday was crustless quiche for breakfast and lunch
Dinner: Pork chops with some Heinz low sugar ketchup smeared on to make them a bit moist, had the chop with cauly mash and green beans.
I walked to town and back as just needed to stock up on veggies from the greengrocers.

Your walk on the beach sounds lovely!! (But I'm not sure about the 9 degrees part! :p )

That is very interesting that you were vegetarian for a while and really enjoyed it...I need to branch out and try more veggies...right now I'm pretty much salads, green beans & maybe cauliflower.

There was a time a few years back I was making some spinach shakes...with coconut oil...That didn't last long...but I know they were good for me...I think I just tired of making them...I don't seem to enjoy cold shakes as much as a warm drink. But it gets so hot here in the summertime that I might need to revisit the shakes come June!

Thanks Becky, hope you are feeling a bit better and that the nausea has gone now, that must make things so much harder as quite often when we feel ill we crave toast, anyway hope you are doing good I will check your journal tomorrow to see how you are doing lol.
Yes trying to be a vegetarian was interesting at the time, I also gave up pasta and rice and bread so it wasn't easy but it really didn't do me any good lol, are you eating cabbage and brussel sprouts and asparagus, I think I would get fed up of green beans and cauly, tomorrow I am buying kale just to have something different, and I have a recipe to try one of the days where you make cauly cakes and fry them, sounds yummy so I will definitely try it, I will have to keep my eating really varied as otherwise I know I will crumble, but I have to much time on my hands so at least all the experimenting will keep me busy lol.

By the way what is your temperature where you live as now I am curious lol.

Hey Sandy! Your stats are extremely close to mine! How tall are you? I'm 5" 4" and currently weigh 161.2 - my lowest 145 was in September 2012 and I felt super skinny. Then 2013 rolled in and so did my "rolls".
Weight continually went up as the year went on and I slowly got to 168 by this past December. Got back on the LC wagon in January 2014 and it has been so going to get to 161.2 as of today. I'm determined to get to 155 by the end of February. Maybe we can cheer each other on!

Well I was thinking about going on Atkins 72, but this is working out so well for me that I think I will stick with whats working for now.
Yesterdays food was
B: Cheese and Ham crustless quiche...so yummy
L: One Flax muffin and last piece of quiche.
D: Lamb casserole in the crock pot, with mushrooms, celery, onion, four tomatoes, leeks, broccoli, peppers red and green, one chilli pepper, I am sure there was more in there lol, and it was amazing, I didn't make gravy but it was still amazing, I am thinking next time I might throw some shredded kale in there.

I didn't go for a walk yesterday as the weather was gale force winds and rain brrrrr, I don't do cold, so I stayed home and just was busy in the kitchen, I think the lamb casserole is going to last about two more days so it will be nice not to have to cook.
I feel really fortunate that this is working so far, every morning I wake up and convince myself I have put on weight as I am eating more than usual, its amazing really lol.

Hi Susan, you are right we are close on everything lol, even age, although I am one year older. your weight is 161.2 and this morning I was 162.6 ....my height is 5.5 so only a tiddly bit taller lol.
I would like to join your challenge for 155 by the end of Feb, do you really think its possible....I guess for you its only six more pounds and for me seven....ok I am in lol...it would be amazing, ok I am off to peek in your journal now lol, have a great day.

Oooh, Sandy you sound like an awesome cook!! I am a terribly dysfunctional cook...so my menu is very basic. The boys and my DH eat the starches & I eat the meat & veggies...

That quiche sounds so yummy...

I'm so happy for you and your loss! That is so wonderful! It is amazing that we can be so satisfied...that healthy fat is good stuff!!

I am in Mississippi...the deep south of the US. We have had a colder winter than usual. (Last year at the time the Japanese Magnolia Trees were already blooming! It was crazy warm...) The states north of us are having a much colder winter with ice and snow...

The high today is going to be 45...we had below freezing temps in the daytime last week with some snow. Our whole state practically shuts down in ice and snow...we really don't know how to drive in those conditions!

What's the normal temps where you are? Is this an extra cold winter for you too?

I do need to expand my menu...I may get some good ideas from reading your journal!

Hi Becky, I just had to look up what your temperature was as I didn't understand 45 degrees lol, anyway so it came up as 7.2 degrees, does that sound right....we are still at 9 degrees at the moment so we are virtually the same temp wise I think, its nice walking weather, only at the moment England is going through some crazy weather over the past few months with gale force winds and heavy rain, last night I thought the roof was going to blow off lol it was that bad, so I don't think I will get any walking in today, I think the temperature is normal for this time of year, sometimes it gets a bit colder but not by much, although after saying that I have only been back in England for two years , but we live in the south of England on the isle of wight, its just a little island off the mainland, the boats and hovercraft haven't been running much for ages now which causes problems for people that work on the mainland, but I quite like being stuck lol.
Can you let me know what your normal temperature is for Mississippi, it sounds like an amazing place to live, deep south wow that sounds so cool... I think I will have to go and look it up now lol.
England is the same if it snows, everything shuts down, I find it quite funny after living in Canada, everyone here panics and no one knows how to drive, but it doesn't snow very often here which I am glad about as I had enough of that for twenty years lol.
I am going to do some reading on Mississippi now lol, I am amazed I can even spell it, I think we used to play a ball game or a skipping game that taught us how to spell it, I am sure it went something like....m I double s I double s I double p I...funny.

Susan..Oh my gosh...you are in the 150's.....what a little devil you are lol...so slow down and wait for me...just kidding...well I was the same this morning 160.8, and I have to go to my sisters house for about four days, I am not sure what I can make or cook or eat at her house, so I am panicking that I am going to have to go off plan for a few days....I could just eat eggs and cheese, my sisters life etc is muddled so it would make cooking impossible, not sure what I am going to do at this point...hoping I can figure it out but i'm not sure, what a pain it is.....anyway I will be back to let you know how I am doing....and well done you, you are inspiring me not to give up, so big thank you's for that x

Just want to make a note...in case I ever go through this again....that yesterday and today I have felt really not well, dizzy, palpitations, no energy, I just want to lie down and die to be honest, I have looked up induction flu and I guess this is what is happening....but I have to say it is really awful, yesterday I couldn't hardly eat, today I have made myself eat more hopefully to get some energy, anyway have to go and lie down again.....on a good note I thought I was going to have to go and stay with my sister for a few days which would have taken me right off plan, but feeling so poorly I have cancelled her.....anyway I am sticking with it and hopefully will be bouncing around again tomorrow, this is day 2 of feeling yuk.

Hang in there Sandy. It takes some people about 3-5 days to get thru it. Once you do you will start feeling a lot better. You are really doing good. You will make it. I promise.

If it is the carb flu you will snap out of it in a few days. It feels just like the real flu almost. Hope You feel better later in the day. Your numbers are great. Keep on doing what you are doing and you will go far. Praying you feel better later. I have to work till 7 tonight so I will check later tonight on you. I'll pray it is not the real flu but I bet it is the carb flu and if it is that means you are clearing those old carbs out of your system. That is a good thing. Love ya Judy

Susan & Judy...thank you so much for those words, I have done some research into carb flu and I think that's what it is as I haven't been ill in years, its the dizziness I think that's the worst, slight headache and feel a bit weird in my stomach...another day or two and I am sure I will be fine...its a funny thought what you said Judy about clearing the old carbs out of my system....so that has given me something to think about, I think my body is in a state of shock and confusion lol, anyway thank you both, it really does help when you have caring people supporting you, ..sending hugs x and fingers crossed I am feeling back to normal tomorrow lol.

I have realized since feeling better this morning that my hubby has been feeding me sausages that are high in carbs and sugar lol....even though I told him, oh well they are but mere men lol.
Anyway hoping to actually go out today now I am over this induction flu, a nice long walk at the beach to blow the cobwebs away and hopefully it might help....oh it so good feeling good again,
Today I will be cooking a sheperds pie made with cubes of lamb and topped with cauly mash and veg, I will figure it out, and then on Tuesday have to remind myself to go to the butchers to see if he does sausage meat with no fillers, I seem to be craving sausages for some odd reason, I didn't used to like them much so it seems odd that I am sausage mad at the moment lol.

Sandy I knew you would make it thru. Now a lot of people if they have a high carb day after getting thru the flu will have a really bad next day. It will feel a lot like what you just went thru so that is why they try so hard not to over eat carbs after we get started. You will start getting all kinds of energy now so don't be surprised. I crave odd stuff too. Peanut Butter and chocolate. If I get off lowcarb I don't eat that much of either. Don't know why but it happens every time I try lowcarb.

Oh by the way do you have room for one more at the table tonight? That sounds so good. I love things like that. Have a great day!

How wonderful it must be to go walk on the beach!! We go to Ft. Walton Beach, Florida every May...always a great way to close out the school year...I hear it calling my name!

Susan, we live on the Isle of Wight, its a small island off the southern coast of England, its about 20 miles wide by about 12, so it has tons of sandy beaches, some of them are truly beautiful, we have to catch the boat or hovercraft to get over to the mainland, but I like being stuck over here, but before you imagine this beautiful island lol its made up of towns and villages just like everywhere else, most of the houses are small, just like most English houses are, in fact the house we are in at the moment is so tiny and would fit four times into the house we used to have in Canada, I hate having to live in such a small house, but its kind of worth it to be surrounded by all the beaches. the weather is normally not to bad during the winter but we have been having terrible gale winds and rain on and off for a few months, a lot of the English countryside and villages are under water, its been totally crazy, today the sun is shining thank goodness and the temps are around 9 degrees which is just nice walking weather...anyway sorry for the ramble I can get boring lol.
Judy that was good to know about the bad carb eating days, well that's enough to put me off doing it then lol, I don't think I ever want to go through the flu again, it was really miserable, I was even miserable with my poor hubby, I snapped his head off a few times lol, poor man....
Becky, you are so lucky to be able to go to Florida, that is somewhere I would love to live, I did look up where you live, of course I have forgotten most of it now lol but I remember reading about your hot humid summers and immediately got jealous lol.

Well my fat doesn't seem to want to budge out of the 160's, a bit disheartening when I look at the figures, but I have to look over the whole ten days and see I have lost nearly five pounds in ten days eating food that I like....another way I could look at it is that if I only weighed myself weekly I would see after 7 days I had lost nearly four and a half pounds and my next weigh in wouldn't be until the 14th Feb and hopefully by then the scale would have moved and I would feel a bit happier....I can't help but weigh every day but I think sometimes it would be best to weigh once a week.

My lamb shepherds pie was the best shepherds pie ever, I thought it was cubed lamb but it turned out to be minced lamb, my cauly wasn't a huge one so when I spread it over the top of the lamb it wasn't to thick....the taste was just to die for, I think at the moment Lamb and sausages are my favourite things to eat, anyway there is left overs to save me cooking tonight which is brilliant, I had it with cabbage which I love....I haven't tried frying the cabbage with bacon yet so I might have a go at that later to have with my dinner.
I didn't end up going to the beach for my walk as it rained, but managed to go out to the shops for about 30 minutes, so not much walking done really.
My new washing machine came on Saturday so I have had a slight bit of fun playing with that and catching up on laundry as my other one broke about 2 weeks ago, it really makes you appreciate washing machines lol.
At this point I am not sure what I am doing with my day, definitely have to go to town for some chicken as I am going to make chicken curry tomorrow, definitely have to do more laundry, and hopefully at some point the sun might come out although its still only around 9 degrees but to get a good walk in would be nice....I really wish our butchers were open today as I want to talk to him about sausage meat lol, although I did find some low carb sausages yesterday, but I would like to have a go at making sausage patties and then I can have some for breakfast, he also sells the most amazing double lamb chops they are really big....ok I think I am obsessed with food at the moment lol....either that or I am worried about not being prepared.
Well that is my rambling done for the day....hope to see the 150's some time this week.

Sandy - your Isle of Wight sounds divine! It must be quite lovely as the weather warms up. You will get into to 150's very soon! Your meal planning has me salivating:yummy:. I've only prepared lamb once! Did not grow up with it, but DH did. I made it for Easter one year. It was good, but not something I'm drawn too buy. I'll need to seek it out next time to check pricing.
