The only thing I have done differently is the soy sauce, yes I think I am nutty and had it again last night on my veggies to go with my curry.....ok lesson leaned.
Even though I walked a fair amount at the beach I think I need to dance to those three songs again.....so todays plan...no soy sauce....need to dance.

Ugh! Sorry the scale was not friendly today . Somethings gonna "click" soon for both of us. Did you taste the coconut oil....it doesn't taste like anything to me, just smoothiness in my mouth.

Hi Sandy! You're doing great! I'm sure the gain is just temporary water weight, so don't be too discouraged. It was funny to read your comment about wanting to get back into the 150s because I'm in the same exact situation! I want to go down to the 140s so badly where I used to be before the holidays.
But we'll get there!!

I have no idea why the scale is going up.....its really disheartening when I am craving chocolate and not giving in....but I have read so much research about the scale so I am going with water weight....there that makes me feel better lol....I will have a whoosh soon and those scales are going to say 158 any day and then I am going to be so happy that I stuck to this.....
No Susan I haven't tasted the coconut oil yet, I keep going to but then change my mind, I just don't think I can do it lol....I hope your scales move down for you today, my fingers are crossed.

Imgonadoit...thanks for the encouragement, yes I agree with what you said....water weight, as what else can it be, and I feel a bit thinner lol....I hope you get it in the 140's soon....and me into those pesky 150's.

Hi Sandy, thanks for popping over to my blog.

Please don't get disheartened with the scale (easy for me to say - it frustrates me so much that I only weigh myself once a month! But I have a lot more fat to lose, compared to you). I read that it takes the body about 2 weeks to switch from sugar burning to fat burning, during which time a lot of fluid is also released. In the third week, the body tends to store more water to compensate for the slight dehydration of the past fortnight, so the answer is to drink more and make sure you're well hydrated.

Think about it - you've lost weight in the past, you know this WOE works, stay positive and let it do its job.

To change the subject, creamy leeks are easy peasy. Just melt a knob of butter on medium/lowish heat, add sliced and rinsed leeks, a bit of water and some double cream (to almost cover the leeks), salt and pepper (I love coarse ground black, but if you don't like contrasts then white pepper is good for this). Put a lid on for about 10-15 mins, stir once or twice, and when they're creamy and soft they're done! In case the sauce splits a bit at the end, just stir in a glug of fresh cream and it'll be perfect.

Thanks Larissima for letting me know about the water weight...that was pretty cool to read....I am so glad you posted it as I will keep reading it every morning now, especially when those scales start to go up....so it is definitely water weight....so good to know....thank you.
Creamy leek recipe, wow it sounds really easy, I have all the ingredients, and have checked my menu for the week, I think it will go well with Wed or Frid dinner, can't wait to try it, thank you so much.

Well yesterdays eating was good, quiche for lunch, stuffed peppers for dinner....but something is definitely going on with my scales....so I am thinking is it water weight....or is it to many carbs in the vegetables...

Anyway today I am catching the hovercraft over to the mainland which I am looking forward to as its my daughters birthday tomorrow and my grandsons 18th birthday today....I just hope there is no birthday cake going around while I am there lol.

Susan I do hope the scales are better for you than they have been for me.

Enjoy your family, I know I will when mine get here tomorrow. If you eat off plan just make it a small portion and you will do fine.. It's when you least expect it that the scale moves down....

Well I had an amazing day, and totally surprised myself by not eating any of the food or any of the cakes....yep there was more than one cake lol....but what I did was take an atkins bar with me so when everyone was eating chocolate cake I was eating my chocolate atkins bar, otherwise I think I would have caved and eaten some and then would have eaten chips etc etc.....so for me it was just one glass of diet coke and one atkins bar....although this evening after getting home I discovered chocolate bark made from coconut oil.....oh my gosh it is lovely, I have only had two small pieces so far as I don't want to over do it.....but wow what a healthy way to get your chocolate fix without the sugar......

Congrats for resisting the carbs!! That is awesome!! And the coconut bark is a great way to get that healthy CO! I may look into that...one time I made some with cocoa, CO, PB & coconut flakes...that was REALLY good! I'm trying to keep my sweet tooth settled down though...

I have enjoyed a few diet cokes this week...I REALLY like the taste...I struggle with that too!

I may look into making some quiches...I haven't made that in years! Thanks for the inspiration!

Well today is Thursday....its raining...whats new lol.
My scales are stuck at 160.8 so I really have to make an effort, to either walk up some hills, cut down on veggies, dance to music....I have to do something.....I am going to make those scales move tomorrow if its the last thing I do lol...

The chocolate bark was really quick to make, I used
3tbsp coconut oil
2 tsp cocoa powder
2 tblsp cream
2 small pkts of sweetener
1tsp vanilla extract

I heated the coconut oil in the microwave until it was hot, then I just beat in everything else, and threw it in the freezer, 30 min later.....total bliss

Today my experiment is going to be no veggies, apart from a tiny bit of onion....I am going to make burgers with bacon and cheese, but not one tiny veggie only a bit of onion....its my experiment to see if its to many veggies that are making the scales not move...tonights dinner was supposed to be chicken and prawn stir fry but I have to do something to get these scales moving again so I am changing my menu....I will see in the morning.......

Weigh in was 161 so up from yesterdays 160.8
I thought taking carbs out from my diet would do the trick but nope it didn't work.

I am thinking of going back to fruits and salads...kind of like the raw food diet which I do enjoy but this time having meat with my salads to keep me healthy....anyway I am not sure at this point what to do...hubby is cooking low carb for the next two days so I have the weekend to think it all over and decide what to do....

Hi Sandy!!

Sorry to hear that you're feeling frustrated with your weight loss. Well, how are you feeling overall? Do you feel worse physically? Or have tried body measurements?

My scale keeps jumping up and down but I have faith that it'll go downward ultimately...
I was a raw vegan for a while and I felt great actually. I ate super healthy with wild greens and organic fruits, but I gave up because it just became too difficult to be raw during winter. As you probably know, with the raw food diet, your body temp goes down a bit, so that's why a lot of raw foodists move to tropical climates. So without being able to live the tropics with an abundance of tropical fruits and veggies, I realized that the only option that I have is low carb due to my body's extreme sensitivity to carbohydrates. Regardless of whether simple or complex carbs, any consumption leads to extreme mood swings and triggers binge eating.

Sandy, you of course will base your decision on how your body feels but why don't you stick it out for just another week and see how it goes? I was told that in the 3rd week of low carbing, your body holds onto a lot of water to compensate for the fluid loss in the previous weeks, but then after the 3rd/4th week, your body returns to a normal state...

Well, regardless of your decision, hope you have a wonderful weekend!!!!

Hi Imgonadoit....thank you so much for your advice....you asked how I am feeling..... really not good again, it feels like carb flu has come back, tired, nausea, no energy, brain fog....I guess its because I cut back on the carbs....I know I should stick it out for another week, I did promise myself I would do it for the whole of Feb, but I just feel so crappy a lot of the time.....yes I agree with you about the raw diet and being cold, that's why I chose atkins at the beginning of Feb, I was to chilly to even think about salads and juicing brrrrr, but over the last few days our weather has gotten really nice, the sun is shining the sky is blue and the temps are perfect for walking, if I only had the energy lol, so I think I am going to start on Sunday and see how I go, I normally lose between 1 and 2 pounds a week.....now I have said that watch me put on weight lol.....I do appreciate what you wrote, its lovely that you took the time, so thank you for that....I do think I am in for a scale drop though as I feel so crappy lol, maybe that might help change my mind as well.....

That really did make me laugh Susan, we do seem to do things the same don't we, up and down on the scale, losing and then getting stuck...
So I think I might start my new eating plan on Sunday, I am still sticking to low carb just for the next two days....it was going to be a whole month of Feb doing low carb so I am only stopping four days early.
I am excited about my salads and my fruits and I might even make some green juice, what I am really looking forward to is the total amazing amount of energy I get when I do this, total clarity, I sleep better and want to run instead of walking lol.....I am going to keep on with my journal so I can log how it goes.
Anyway still two more days of low carb, tonights dinner is lamb with cauly mash.

Lol Susan...you always make me laugh....I am excited about shopping for all things green and colourful, and lots of tasty fruit, there is nothing like some fruit in the morning to make me feel happy, I have hated the total full stuffed up feeling I have had every time I have eaten, it seems to give a lot of people energy but my body is just not happy with it, but on fruits and salads I can feel the energy and lightness and freshness from all of it...its all alive and not dead, I think its made me feel half dead as well lol.....I am looking forward to all of it.....I guess we just all have to know what makes our bodies happy and everyone is different...so for anyone reading this that is on low carb honestly I am not knocking it.....I just need to feel better again for me.

So just to sum things up so I can look back and see....
3 weeks on low carb and I lost 4lbs
I start salads with some kind of meat....and the rest of the time eat fruit and my start weight this time is 161.

Today I have been out and stocked up on everything I need to get through the week...so tomorrow I start.....hopefully downwards I will go.

Hey Judy..I will read your journal tomorrow, I am looking forward to what is going to happen in that house lol....whoooaaaa scary stuff,
I make different mixtures of fruit depending on what's out there, but today I got pineapple, mango's grapes, melon, pears, apples and oranges and banana's, I don't think I tend to eat a lot of it, I used to have one banana for breakfast and then I would chop most of it the rest of the fruit up and have just one bowl at lunchtime which normally fills me up, and then if I get hungry later on in the afternoon just an apple can fill me up for about two hours....I am really looking forward to my salad though, can't wait.....good luck on the scary house lol.

Hey there .....Sandy...I think we all have to do what is best for our bodies...so eat what is best for you right now...I know I have my DH eating some strawberries and cherries (when I can find them right now) for his gout..poor baby...but sometimes you have to eat other things when needed....
I am doing great on my WOE..but I eat some fruit with mine LC anyway...I know if I am not at 20 carbs all the time I am still better than I was most days eating bad stuff...
