We had a wonderful night out on the town and I stayed LC the whole time. I'm quite proud of myself because eating four meals out makes it really hard to stay on plan.

I made fish tots tonight for tomorrow and they are pretty good. My DD thought they sounded gross but DH liked them. I have been wanting to make this recipe since I saw it last week. It's like a white fish and hush puppy rolled into one.

Sorry the fritters didnt turn out. I hate it when that happens.

Oh, and I made Carolym Ketchums skillet chocolate chip cookies today and they are delicious.

Hey, cfine ! How'd your day go ? Fish tots sound good to me ! Did you fry them ? I saw that post for the cookies but I don't have a skillet I can do that with.

I didnt fry them. I baked them in the oven. I also made the cookies in a 8x8 pan and cut them into little squares.

I need a redo button! I had a horribly stressful situation with a family member yesterday and ended up pigging out. Ugh! I feel like crying because now I feel awful and will have to try and get over my cravings. We leave to go out of town in a week and I always have a hard time staying on plan. I pray that I can get on track and stay there!

hi cfine! I too have been battling some major cravings! Perhaps it's the weather...the coming of the spring or something! But lets stay strong! We can do it! Shopping splurges instead of binge eating seems to be helping in my case, although I'm not going to be happy about my credit card bill for the next 2 months!!! But hey, a new season is coming, a new beginning, and I WILL wear some purrrty clothes this summer, darn it!!!!

Imgonadoit, I love shopping almost as much as I love eating!! My poor hubby...lol! Yes we need to stay strong!! I don't know what's gotten into me. I didnt eat off plan one time in January. February was bad. I am hoping that March will be much better. I am doing a fat fast today to try and get my cravings back under control. It's like a monster inside of me just telling me to eat eat eat!

I had a total hysterectomy at age 30 so I get my hormones from a pill so I don't really have a good excuse. Ugh! I did make it thru the day with only macamadia nuts, beef jerky and SF jello.

Way too many nuts yesterday!! Today has been a good day. Hopefully I can make it thru without nuts the rest of the day. My friend had peanuts in the shell and I couldn't quit eating them! Glad I can't have peanuts in my own house because they are so tasty!

My favorite nuts are cashews ! But i never realized they had carbs ! I bought a bag of raw almonds so I can make my own almond butter.

I love cashews too!! I buy mixed nuts that have cashews in it. It's 5 net carbs for 1/4 cup. I save the cashews for last. I make my almond butter with coconut oil and salt. Yum!

My DH has been gone all week. He usually is home today and tomorrow, but unfortunately had to work. He won't be back until tomorrow afternoon and then has to leave again tomorrow evening. He is my weekend partner and I am missing him like crazy! I don't mind him being gone most of the week, but I hate it when our business interferes with family time. So...no, I don't really have any plans. My DD and I might go to a movie or something. Do you have any big plans for the weekend?

Nope, no plans. My DH used to drive for Swift. I told him it wouldn't suit his personality. He likes talking and being around people. Plus it is hard on the prostate sitting all day. Eventually he stopped. He used to be so sad calling us on holidays. Now he is in barber school which is perfect for him.

My hubby loves truck driving. It's the only thing he ever really wanted to do, and I am thankful that he finally got his dream job. The problem is that we started our own business along with him working for a company and sometimes it gets very busy. Things will calm down soon though and I will have him back. If he was home every day I would go crazy.

I forgot to tell you I made the almond butter and added a few tablespoons of coconut oil - perfection !! Thanks for the idea !

It is always great when they find something they love. My dh is the type of person who changes his mind a lot but he is starting to settle down the past few years. I know that feeling (the bolded) !

Well.....the job didnt work out. He ended up not needing me although he did make me an offer if I could get some bookkeeping business, he would help me learn the ropes and we could split any business we get. I have been putting some feelers out there trying to solicit some small businesses. I'm glad it didnt work out because I am so busy with family members different needs.

Back on track today after derailing while out of town.

I have been having a horrible time lately with food issues. If I stop to really think about the stressors in my life it's not hard to understand why. Food is my comfort. Period. I don't really know what to do about it. My parents failing health is a huge issue for me. Just want to cry. Trying to eat a good, clean induction for now. My heart is not in it though. The only thing that is keeping me from going totally off LC right now is the fact that I get so sick on any other WOE. I need to be at my best to care for others around me and I can't do that if I'm sick. Just needed to vent because what I really want to do is eat some ice cream.

Sorry to hear you are stuggling. Having ailing parents has got to be incredibly hard and I don't blame you for feeling like you need comfort through food, I would too!!

So sorry for all you are going through right now. You definitely have a lot of responsibilities. Can you make yourself some low carb ice cream or a shake ? I use 4 frozen strawberries, 1/2 cup hwc and sweetener then blend in the ninja for ice cream. Or make you a chocolate shake with 1/2 avocado, cocoa, 1/2 cup hwc and sweetener plus 4 ice cubes. You can sub hwc for coconut cream or whatever you prefer.
