Well, I am sitting up at 5am because I woke up in pain. Although I had told the doctor about my Lupus, I forgot to mention that I was supposed to take antibiotics and steroids before any procedure. So it got bad. Now with the antibiotics, it is doing much, much better. But for some reason the covers at night hurt my foot and although I try to keep my foot out of the covers for that reason, once I fall asleep I always end up snuggling it under them. I should probably take the loritab before I go to bed, but I hate meds so I just take some tylenol. Still a med I know, but some how I feel better using it mentally. Crazy huh?

I am slowly introducing new food items in my diet, testing the water so to speak. Tonite my dh stopped and got Taco Bell. I got the supreme burrito and scrapped off the inside onto a bowl of romaine, threw away the tortilla wrap, added in some beef strips and mayo. It was pretty good. That's my way of trying refried beans, everything else on it I knew I could have. It only had maybe a tbs of the beans. We shall see in a couple days how it did.

On other news, my son may becoming here to stay for awhile. I haven't seen him in 4rs since he was 16. We had a falling out and he went to live with his dad. Long story there. Well, he pm'd me on FB a few days ago out of the blue and asked what I thought about him coming back here. I am on the fence about it. I love him. He is my son, but I also have to put my dd first as she is still a child. Even though he is only 20, all I ever read about with him on FB is how he's been out drinking. I know he only wants to come here because he feels he has no other options on where to go. I won't turn him away, but I will be upfront with him about my expectations. Wish me luck and the knowledge to do what is best.

Well my friend, just make sure you lay the law down before he comes into your house. Set a curfew up. If he stays out past, make sure he gives you a heads up. Is he going to be contributing to household funds? Set an amount, even if it's just $20 a week. Make sure the rules are outlined so he knows when he does move in what is expected and what will be tolerated. Also, maybe set up a timeframe. Tell him you will help him find a better job, or help him find his own place. Is this something permanent or temporary? Is he in college or in the workforce? And, as a 20 year old adult, I doubt he will be expecting the same treatment as your daughter. She is still a kid. I wouldn't worry about that too much. Good luck

Somehow people just always know they can come here if they need to. we moved here in 2007 and since then we have had my dh's daughter live here, my dh's nephew live here, then both again at different times with their bf or gf, then we inherited my dh's brother who has become a permanent house guest. We seem to be the go-to for a place to stay.

I have been very upfront and told him he will get a job - he doesn't have one yet and not going to college, said it wasn't for him. He wants to go into the military but they told him he has to gain 50lbs as he is 6foot and only 115. I said no alcohol/drugs at all, he can't come home drunk, no overnight guests, in the house by 9pm unless he has a night job as that is when we all go to bed because we are up between 530 and 6am. Once he has a job he will have to start contributing like everyone else has at 200 a month and pay gas money to take him to/from work etc until he can get his own transportation. He wanted to gripe about the alcohol and no overnight guests and I told him those are non-negotiable. He says it will be temporary until A) he can get in the military or B) get his own place. So I guess we are going to meet him tomorrow to pick him up. I don't think I am making it easy for him hopefully and that is my point. I don't want him to think he is going to come here and veg out for a free ride and just do as he pleases. We shall see....

Well, it has been a week with my son here. I do enjoy seeing him again even though I know he is Not here because he wants to be or missed us. I wish it was different, but it is not. I have to keep that in mind and not become over-emotional. It just sucks when you love your child and know it is not returned. Before I would do anything for him, but I am being strict and not allowing my heart to rule this time. He asked if I would let him drive my car and I said no, nobody drives it. He tried to wiggle out of applying for a job because his dad said he had one lined up for him. Well, he didn't hear from them all week so Friday, I went online and started the application process for him and called him over to help fill it out. He tried to say he already had one on file with that company, but I knew he hadn't because they only did online apps and he didn't know you had to choose what store and that there was a questionnaire to complete. My brother had some work for him to do today so I was surprised that he did actually go with him. So that is good.

I have been doing more fasting this week that I should or really want to. With so many people here - 5-9 depending on the day and with limited food supply, I have not been eating much to make sure everyone else has enough to eat. Normally you only have to worry about everyone at dinner, but my bil works night shift so he eats all 3 meals here plus snacks, same with my son because he is not working, and I am here of course all day. Then bil has his daughter here often, son brings his gf over sometimes, and parents drop by to eat sometimes. Horrible I know, but I usually am not hungry so not a big deal for my appetite when I know everyone else loves to eat. My dh has started to notice though - he reminded me yesterday that he hasn't seen me eat dinner in three days. I lied and said I ate while I was cleaning up after supper. Really, I didn't know it had been three days, but I guess it had been. That is the bad thing about having no appetite, you really forget when you ate last. And that is also part of the reason I gained weight from not eating because my body would just store everything. So I have to work on that somehow. I guess I will start buying the higher carb foods again - pasta, potatoes, rice...they stretch farther to feed more people.

Oh well, things will work out and get better.

My dd had a school spelling bee yesterday. We knew about it for months, but didn't study for as she is not that good with spelling anyways. I thought they would just choose the top students to participate, but everyone in the class had to do it. Anyways, Hannah was called up 4th for her class. She was given a very easy word that I knew she knew how to spell, but messed up on it. So she was out of the competition. When I asked her about it afterwards, her response was that she didn't want to go to a different school. ????

It seems at the beginning of the competition, they told everyone how the winners would go to another school to compete with them. In her mind, she thought if you won, you wouldn't get to stay at this school and have to start going to another school permanently. She liked her school and wants to stay there. ....lol...the mind of an 8 year old.

I made Coconut Chicken over Spaghetti Squash with a Ginger and Orange sauce. It was SO Delish!!! The picture is only 1/4 of a serving. A full serving is only 5.8 net carbs!



3 chicken leg quarters
1/4c mayo
1tbs dried parsley flakes
1tsp season salt
1/4 tsp cayenne pepper
1tsp hot sauce
1 egg
1/4c shredded unsweetened coconut

1 small-medium spaghetti squash

1c chicken broth
1c heavy whipping cream
1.5 tsp ginger powder
2tbs orange marmalade
1tsp sea salt


1. Boil chicken until done. Allow to cool then remove all meat and set meat aside.
2. Using a small to medium spaghetti squash, poke holes all around squash and microwave for 15 min. Remove seeds and then fork strand squash into a bowl. Set aside.
3. Mix mayo, parsley, season salt, cayenne, hot sauce, and egg together. Place mix and chicken meat into a food processor and process well.
4. Place coconut into bowl. Make chicken meat mix into small balls and dip into coconut. Place balls on a plate and refrigerate for 15-20 mins.
5. In small soup pot, pour in chicken broth and heavy whipping cream. Heat on med-low. Stir in ginger spice, orange marmalade and sea salt. Turn sauce down to low and simmer until ready to serve.
6. In fry skillet heat oil to med-high. Place chicken into pan once hot and press down with a fork. Fry chicken turning over occasionally until browned on all sides.
7. To serve, place a cup of spaghetti squash on plate with several chicken patties and then cover lightly with sauce.

Well kids are out of school again today. We did end up getting about an inch and a half of snow and a lot of ice. But the snow was very dry and not good to make snowballs or snowmen....uuughghh,. I had to take my bil to work last night and our truck doors were frozen shut. Same with the windshield wipers and windows. How crazy is that! I think I drove about 20mph the whole way because they do not salt the roads here and I was worried about black ice. You would think my dh would have taken him for me instead of having me and our 8yo out in it at night. But we made it home safe and sound.

We actually had a nice day yesterday playing in the snow. We went out for 10min max each time. JUst to cold for more than that. Our noses and hands were turning red. Tried to slide down our front hill with cardboard, a laundry basket lid, and a plastic trash bag. None of them worked very well at all. But it was funny to watch everyone trying and having to scoot themselves down the hill. Hannah finally gave up and just starting rolling around in the snow. My ds made some beautiful snow angels. Yep, I got lots of pics. So all in all not a bad day at all.

One of our goats decided to give birth a couple days before this weather hit. A little doe - but she was cramped in the womb and has to learn to walk on her feet instead of the tops of them. I put braces on her and she is so cute. Funny thing when the weather hit, the goats had never seen snow before and would not walk in it. So we had to carry each one back to their huts because wherever they were when it came down is where they stayed. ...lol...

I have no idea what to do today. I was going to take the braces of the baby today, but with snow and ice still on the ground I will wait until it's melted. Maybe have a movie day. Sounds nice - just stay snuggled up in blankies and have some cocoa and coffee.

Wonderful Meal tonite! I just made my version of LS Coney Island Casserole. There just wasn't enough - everyone wanted more. I will have to double the recipe next time.

  • 3 hot dogs
  • 8oz rotel
  • 1/2c mayo
  • 1/4c heavy whipping cream
  • 8oz shredded nacho taco cheese
  • 1 onion
  • 1.5tbs chili powder
  • 1tsp ground mustard
  • 1tsp hot sauce
  • 2 medium eggs
  • 1 lb ground beef
Directions

  1. Preheat oven to 350. In fry pan cook ground beef until done. Dice onion and grill in same fry pan until done. Slice up hot dogs and set aside.
  2. Add seasonings, mustard, hot sauce, rotel, and hot dogs into ground beef and onion in fry pan and cook, stirring occasionally, for 10 mins. Add in 1/2 of shredded cheese and stir well.
  3. In bowl beat eggs, well. Add in mayo and cream. Whip mix well. Add in remaining shredded cheese and stir.
  4. Pour beef mix into a casserole dish. Pour egg mix over beef mix. Bake at 350 for 30 mins.

So this is what I made for Super Bowl Sunday:

Bacon wrapped Meatballs (I dipped these in some of the LC BBQ Sauce below)

1lb ground beef
1 egg
4oz shredded jack cheese
1tsp season salt
2tsp garlic powder
2tsp chili powder
6sl bacon

Preheat oven to 375. Mix all ingredients but bacon together in bowl. Line a baking sheet with non-stick foil. Roll mix into balls, should make 12. Cut bacon slices in half and then wrap each ball in bacon and place on baking sheet. Cook for 35 mins.


Stuffed Bell Pepper Slices (OMG These were Delish!)

one red and one green bell pepper
4oz ground beef
10oz cream cheese softened
2oz shredded jack cheese
1tsp garlic
1tsp season salt
1/2tsp chili powder

Preheat oven to 375. Line baking sheet with non-stick foil. In bowl, mix all ingredients but bell pepper and shredded cheese. Cut bell peppers in quarters at section. Then cut each quarter into halves on the section line. Fill each with mix and then place on baking sheet. Cover all with the shredded cheese. Bake for 35 mins.


Low Carb BBQ Sauce

8oz can of low carb tomato paste
1.5c water
1/4c apple cider vinegar
4tbs Dales liquid seasoning
4tsp molasses
1tsp garlic powder
1 tsp sealt salt
1 tsp dry mustard
1tsp paprika
3 tsp chili powder
1 tsp celery salt
4tsp low carb ketchup

Mix everything together well. Store in conatianer in refrigerator.


Nacho Cheese crackers

16oz shredded Nacho Taco cheese
1 tsp garlic
1 tsp season salt

Line plate with parchment paper. Make 3-4 rounded 2" circles of cheese spaced apart on plate. Sprinkle with garlic and salt. Microwave for 1min to 1.5 mins depending on microwave. Should turn a light to medium brown on edges. Allow to cool for a minute and then remove and set on paper towel covered plate. Repeat steps until all cheese is used.


I also made some pulled pork for BBQ pork sandwiches for the guys using the sauce recipe above; and some sausage cheese dip for their tortilla chips.

Does the Dreamfields cause you to crave carbs? That's one thing I would be concerned about trying it.
