So not a very good night last night. Family gave me a hard time last night about my woe. I was really discouraged and upset. Actually thought about giving up on it. But TOM hit during the night and I chalked my mood up to it. So started today with a fresh look. I had a stall at 180.8 for a week then yesterday up a pound to 181.8. This morning it was out of the .8 finally - 181.6.

My DD had a field trip today. It was fun. We went to a fishing center and learned about Georgia's fish habitats, and got to fish in their pond. All around pretty nice day and a least the cold weather stayed away. But we are supposed to wake up freezing tomorrow morning. I will have to bring in some plants tonite.

Girl, I picked those leaves up and last night we had a snowstorm. Another is on the way I have been freezing here all week!

Sometimes family and friends don't get it. Sometimes they are a "little jealous" that we are improving ourselves. Sometimes it makes them feel like maybe they should do the same. There are friends and family of mine that will say, wow, you look great, what are you doing? I should start that...and then 15 minutes later, they want me to taste this "amazing drink", this new "recipe"..etc. I don't even think they KNOW what they are doing, just that it is on autopilot. If they admit that we are changing ourselves for the better, it may force them to realize that maybe they need to change for the better too, but they might not mentally be ready for that yet. Low carb is a completely different lifestyle. Society is programmed to think that fats and protein are the enemy, and that a bowl of cereal is best for breakfast, or better yet, a bagel or toast. Our new WOE bucks that system. Be prepared for resistance. It goes against what your loved ones know as common sense. Be prepared for sabotage by loved ones. They might not all embrace you bettering yourself. My dad once told me if my mom lost weight, she might want something better than him. CAN YOU BELIEVE THAT??? He has always encouraged her to stay overweight It's sad.

I understand that. My husband, although I was a skinny minny when he met and married me, always has said he likes BIG women. He was very happy when I gained weight. So I am bursting his bubble I guess by losing the weight. My mom and dad well they have never been supportive of anything I do, so I should be used to it by now. Their faults, not mine and nothing I can do or say will change them. I usually deal with it just fine. But my emotions got the best of me that night which I learned was due to TOM.

Anyways, I am not doing this for them. I am doing this for me. I had a scare before I started this woe when I was smoking and it made me reevaluate a lot of my ways. I want to be around for my DD as she grows up and be here to see her children. To do that , I have got to start taking better care of myself and it starts with this woe. So they will all just have to get over it.

I posted on my facebook about how I felt and my husband apologized, but didn't hear from my mom. Here's what I posted:
"I was hurt and discouraged by your words. But I know I am doing what is healthy for me and it is working. I don't understand how you can not respect me enough as someone you care about to be supportive instead of negative. I am always there trying to be supportive for you and helping to try to find ways that may help you with your health issues. I just wish if you can't do that for me and really feel so negatively about my choice, out of respect or at least common decency, you keep your opinion to yourself instead of intentionally or unintentionally trying to make me feel like crap."

Well, I am sure that woke your husband up. He may not have realized how much it was hurting you emotionally. As for your parents, well none of us can change our parents, just learn to accept them for who they are. It makes life easier. I was much happier when I stopped expecting my parents to be perfect, and just accepted them. And, they are happier too.

Personally, I think you look great. I would never have the guts to wear a dress! I think my knees are just way too fat But, you, you look amazing!!

Hey! I read that article on the Dreamfields pasta. I know that it is questionable about the protected carbs. It is the process in which they make the pasta. I found this article.

It might not be a good alternative for some people, but for me, I have steadily lost weight. Sometimes, I eat it 4-5 times a week. I am not diabetic or anything like that, and I don't check glucose levels, but I know that the scale has steadily moved in the right direction. I stay in ketosis. I have never had problems with it. BUT...I measure it out carefully, I set a timer for the exact minutes (depending on the pasta shape) and I only make one portion at a time. Depending on the shape, that can be from 1/2 c dry to 3/4 c dry. I never reheat it. I have read that the pasta changes if you cook it too long, or reheat it up. My kids even eat it. They don't even know the difference.

Thanks Lisa,

I am just the opposite. When I was thin, I would never wear a dress because I was a stick figure. Now I have curves and love them.

Tomorrow is my Bday! Tomorrow is my BDAY!!

My dh is taking me out to a steakhouse for dinner tomorrow night. I am loving the idea. I also just got done researching no carb eggnog for TG and Christmas. Found some pretty good recipes I am going to try and let you know how they turn out. And some chocolate peanut butter cookies that are SF and LC. WhooHoo! Hope they taste good.

Tomorrow is my BDay so I am making a cheesecake low carb of course. It smells SO GOOD!

24 ounces cream cheese, set out to room temp.
2tsp Stevia toffee flavored liquid
5 eggs, set out to room temp.
2 teaspoons vanilla
16oz sour cream

Grease two deep dish 9" pans and set aside.

Beat the cream cheese on lowest setting for 5 mins. Add the Stevia and Vanilla flavoring and beat lightly. Add one egg at a time and beat lightly, repeat for all eggs one at a time. Next, add the sour cream and beat well.

Pour mix into pans. Bake at 325║ (300║ for dark, glass or nonstick pan) for 55 minutes. Start checking at 45 mins. If it's getting brown, turn the oven off. When the time is up, prop open the oven door, turn off oven and leave the cheesecake in the oven for another hour. After 1 hour, remove from the oven and allow to cool completely. Chill 12-24 hours before serving. The longer you can chill the firmer it will set.

Makes 12 nice sized slices. Top with fresh whipped whipping cream.

I should heed my own advice and check beginning at 45 mins. Here are two pics one at 60 min and one at 75 mins. I changed the recipe to cook 55 mins. The 60 min was overdone. It doesn't effect taste as they are still delish! But the looks will be smoother and more evenly browned if cooked only the 55mins.

Happy Birthday honey! I hope you are having a great day today! I love that you are a Scorpio -- many of my favorite people are born under that sign. Scorpios are smart, intense, loyal, passionate and driven. Limetwist (Cristin) who posts on this board is a Scorpio too.

wonderful time and no diet talk!

I did go off plan a little - had a nibble of a sf chocolate cookie on my daughter's plate before thinking - threw it down and pushed the plate away; and I made some nocarb eggnog, but it had almond milk which is not on plan. I may gain a little but it was worth it.

I got a new pair of cowgirl boots from dh and dd which I absolutely love, a food processor from my mom, a collector plate, and a reaggedy ann and andy porcelain collector dolls about 2.5feet tall and some clothes that I think are to big.

All in all, very nice! Oh the cheesecake, if you make it - use only one dish. It shrunk overnight and was to thin.

We had Hannah's Chicken Special tonite and My Family ABSOLUTELY LOVED THIS!! My DD and I came up with the recipe. (will add pic later)
Makes 8 servings
31.41 fat/24.12protein/4ncarbs/388cals per serving
2cups shredded italian cheese
1cup lc gravy
10 medium slices bacon
1 medium yellow squash
2 breast quarters chicken breast quarter large
1 stick butter
1/2 cup chopped celery
1 medium zucchini squash

Directions
Boil chicken until done. Chop into 1" pieces.
Cut up squash into slices; chop celery if not already chopped; slice butter.
In a large casserole dish, pour in LC Gravy. Layer half squash, half celery, and half of butter. Layer half chicken, cover with half cheese. Cover with Bacon. Repeat layers ending with cheese.
Bake at 425 for 30 mins.


Recipe for LC Gravy I created awhile back. I use it for everything, a mainstay, especially for salads instead of dressing.
5.9fat/1.21protein/.04carb/59cals
1lb sausage ground or 1 lb bacon
2cups chicken broth
1cup whipping cream
2 tsp season salt
  1. fry ground sausage or bacon in med fry pan. Leave in grease when done.
  2. Add in remaining ingredients and reduce to simmer for 5 mins.
  3. Serving size is 2 tablespoons

Didn't realize I hadn't posted in awhile. A lot has been going on. My father thought he might have cancer so I took the opportunity to start smoking again.. Uggh. He got the test results back yesterday and he is ok, all clear! Thank God! But now I am back to being a smoker.

My dd ill be gone this weekend with her gp's. They are taking her to Disney and will come back Tuesday night. I don't really want her to go, but I understand their need/want to take her right now.

I haven't really been menu planning with everything going on, just winging it. Luckily I have only good food in the house so no off plan meals.

Found out my 13yo niece has been contemplating suicide. It seems she is being picked on at school by the 'popular' girls about being flat-chested. One girl is actually making her pay up a $1.00 a day just to go by her. My niece for some reason has the insatiable desire to be part of the 'popular' crowd and this has been really bothering her a lot. She has a lot of real friends, is very outgoing, and really loves to be the center of attention. I've always thought of her as a 'prima donna'. She is also very religious so the only advice I could offer her parents was to explain to her about suicide being the only unforgiveable sin, let her pastor talk with her, and get her some counseling. That is the discussion my preacher gave me when I was a teen and it helped keep me straight. I know I should be more sympathetic than I sound. I was made fun of in HS because my illness caused my hair to fall out and my scalp would bleed. HS was excruciating for me, so I know it is super real for her. I am glad she felt she could speak up about her feelings, I never did. My mom just knew I was depressed and had our preacher talk to me. I guess part of me feels this is just an attention getter for her, not like she is serious. But sometimes those you don't expect it from .... She definitely needs counseling either way.

Well TG is just a week away! I think I am prepared for it. Got the menu plans anyways. Still don't know if my brother and his family will be coming. His wife's GMa is very ill and they may be going back down to FL to visit her again in the hospital. They just got back from there, had been there two weeks..

Can you tell I am moody today? I feel it. Don't know why. I go through spurts of emotions - days where I am so sympathetic with everything and then days where I just get frustrated with people. I guess what triggered it was yesterday I had someone actually tell me that my 'nasty diet' was going to cause kidney failure and I was basically killing myself slowly. This was from someone who professes to be a dietician.

Wow Missy, you have a lot going on!! That is crazy about your niece. Found out recently that my 16 year old niece was cutting herself. I was so shocked. She has started therapy since. I didn't even know she was depressed, she is always so happy go lucky. It's amazing what is going on in kids heads that we don't see.

Don't worry, everybody has those kinds of days. Might be pms, or just a rough day. All will be well tomorrow.

People knock our diet because it doesn't rationally add up for them. It's okay. I feel sad for them that they don't get it.

I found new thyroid nodules last night. I will find a new primary physician next week and make an appointment to get them checked. I don't much care for my current primary office. I never get to see the doctor just the PA and they haven't done a complete workup in over a year. So that will be Monday's task - find a DO physician.

Well there are no DO physicians on my medical plan. So I have an appt with a regular MD next Monday. Hopefully he won't have any issues ordering the tests I want done. If so, I'll go through the list and find another doc.

There are no endocrinologists in my city on the medical plan. I am in a military town and it is not small so I don't understand that. I ask the doctor when I go if he knows of any that accept my insurance, if not I will be traveling an hour to see one.

I am missing my DD today, but I know she is having a blast. My mom said she doesn't think she will be able to continue going to Disney after this year because of her knee. I told her she needs to just bite the bullet and get the wheelchair. Her doctor and insurance will allow it. She could get the motorized one. But she doesn't want to be confined. So I told her to pay the money at Disney and rent one, at least she could ride it getting to and from other rides in the park. Nope doesn't want to do that either. So what do you do? It bothers her to do all that walking, but not enoughto do something about it! UGGGHHHH>.....

Once older people go to a wheel chair, a lot of times they never walk again on their own. I remember when my Grandma was in the nursing home, and using a walker. Sometimes she would complain and say she wanted a wheelchair, but she told me she was afraid to get one because the other patients never walked again once they got one. Fast forward about a year, Grandma is in a wheelchair, and she was right, she never walked again. Always used the chair.

That sucks about your medical plan!! Maybe if your doctor refers you to an endo your insurance will cover it, whether the endo is on your plan or not?? Referrals sometimes hold weight.

Good point on the wheelchair. I hadn't thought of it that way. I was just thinking she could use it to drive around Disney to the ride areas and then walk to the ride.

This way of eating has really been wonderful!
I think back before October 5th how I was and how I am now. It is just so amazing! Before this woe I was eating once a day at supper forcing myself to eat because I had absolutely no appetite. I would eat 500-800cals a day mostly from high carb foods - mashed potatoes, pasta, rice. And I was gaining at least 3 lbs a month. When I first started this plan I had no appetite and could never see me getting to 1000 cals a day.

Now I have a much better appetite, eat more food - sometimes over 1600 cals, AND I am losing weight and getting healthier. Can't ask for more than that!

I tried to do a total fast today in preparation for TG. Guess what - I did it BUT I was so hungry all day. OMG! That is such a feeling - now I understand when people say they are worried about being hungry. I don't think, not that I can ever remember anyways, I have ever felt hunger pains. Your stomach just rumbles and rumbles - not like a stomach virus but weird! I know everyone probably thinks I am weird, but I LOVE the fact that I actually felt hunger. So Cool! To me, that means my body is becoming into a healthy metabolic state like normal people. Yeah so, I don't know if I could ever do the rotational fast days again haha! Maybe just a once a month or so fast day. I do believe in them and they help purge your system. But oh my the stomach rumbles!
