Not your average Weightress

My weigh-in this morning was the same lol. 198.4. Today I think I am going to measure myself, and maybe see if I am shedding inches My sister is coming for lunch today, and I have decided to make bacon cheeseburgers on oopsie rolls and a cheesecake. I am trying to talk her into taking this low carb journey with me and want to impress her with the delicious food you can still eat while lc. So...because I am so busy baking and stuff this morning, breakfast has been a hodge podge of leftovers from the fridge. Heated up 2 kosher hotdogs, topped them with lc chili, drizzle of low sugar ketchup, drizzle of mustard, sprinkle of shredded cheddar and a tsp of pickle relish. I am eating this right now as I type I am not a big hot dog person...what so ever. But, these kosher hotdogs have a nice bite to the casing and taste pretty delicious.

Today and tomorrow are my days off. Every thursday I make food for my son's football team. We have a big dinner for them Thurs night before the game on friday. This week, the mom's have decided to have a taco bar. I am in charge of the meat. 15 lbs of ground meat~not only was it expensive, but it is going to literally take me all day to cook that much ground meat lol.

I am excited to have these oopsie rolls. They smell so delicious baking. I took someones advice and added parm cheese, garlic salt and oregano to them. I hope they are as good as they smell

Last night, Andrew (my son) was determined to watch the Indians game. We haven't had October baseball in Cleveland in YEARS. So, ofcourse, Christian ( my 11 year old) did not want to watch baseball To avoid an argument, I asked Christian to go on a walk with me. And, walk we did. I was trying to make peace and instead gained so much more. We walked for almost an hour. And talked. And, I loved it. Not only was I getting my exercise, I was bonding with my son. He asked me if we could do it again today. My heart is just beaming!!

ooh...I hope so too I am excited for lunch..I know that!!! This is my first time trying an oopsie roll and they look pretty good to me! I decided to try them out with her and have a simpler lunch than steak lol. I am saving the steak for dinner!!!!

I agree with Laura -- your lunch sounds really good. I hope you can convert your sister to the low carb WOE. It is not always easy but it works!

On September 13, 2013, I weighed 216 lbs.
My neck was 14".
My upper arm 14 1/2".
My wrist 6".
My bust 43 1/2".
My rib cage underneath my bust 38".
My waist 39".
My stomach 43".
My hips 47 1/2".
My upper thigh 25".
My ankle 9 1/2".


Today, October 3, 2013 I weigh 198.4 lbs.
My neck is 14".
My upper arm 14".
my wrist 6".
My bust 42 1/2".
My rib cage under my bust 37".
my waist 38 1/2".
My stomach 43".
My hips 47".
My upper thigh 25".
My ankle 9".


That is 17.6 lbs and 4" so far!!!! I am starting to walk a little more so maybe more inches will come off next time I compare my stats Twenty days down...a lifetime to go!

Once I hit 20 lbs and 6" I think I am going to have my hair done professionally. I could use a little color to cover some of these grays!!

Tonight I sort of improvised dinner. I was volunteering at my son's football team dinner. We did a taco bar for the boys and it was an amazing success! I cooked 15 pounds of ground meat today for tacos. Also, I made two Icebox cakes for dessert. Not once did I even lick my fingers. I was so busy consumed with my task at hand that I didn't even sneak one strawberry.

After all of the boys eat, the parents who volunteer eat as well. So...I successfully bypassed the Icebox cake, the danish, the tortilla chips, the hard crunchytaco shells, the soft fluffy taco shells, the doritos, the spanish rice...and instead, I piled up some of that delicious smelling taco meat, shredded lettuce, diced tomatoes, shredded cheese, jalapenos, guacamole, salsa and sour cream. My plate was full. And, it was delicious. That was around 6:30 this evening. It is now around 9:30 and I have just made two deviled eggs for myself and taken a few slices of dried sausage. I did take one teensy sliver of the cheesecake again...I didn't take a full slice at lunch just so I could finish the rest tonight


So...with 2 kosher hotdogs covered in lc chili, little bit of relish, low sugar ketchup, mustard and cheese as breakfast, lunch was a bacon cheeseburger on an oopsie roll with tomato slice and mayo, and dinner consisting of this big salad, then this late night snack...do you think I stayed within my carb allowance???? IT is so hard for me to decide if I just made the best decisions tonight based on what I had to work with...or if I REALLY made a great low carb meal.

Breakfast this morning was an odd concoction trying to remake a non lc fave of mine. I blended 2 packets of splenda with a pinch of cayenne pepper and some water to make a sort of "glaze". Prior to, I would always use brown sugar, but since I haven't bought the lc brown sugar yet, I used regular splenda. You lay slices of bacon on a cooling rack. Cover a rimmed cookie sheet w heavy duty foil, and then place the cooling rack inside of the cookie sheet. Bake for 20-25 minutes at 375. The best bacon in the entire world. Nice sweet and spicy taste to it. That was my breakfast today. I also had a handful of spicy pork rinds dipped in homemade ranch.

Lunch is marinating right now. A Delmonico steak seasoned with olive oil, thyme, garlic, salt and pepper. I think I am going to make some cauliflower with cheese as well. My sister was supposed to come for lunch again today, but she canceled. She also mentioned something called South Beach to me. I don't really know what that is, but seems that is the approach she is wanting to take instead of the less than 20 carbs a day approach I am taking. Either way, she is on her way

Tonight is my son's football game. He is a beast. He plays hard. He has been hurt a few times this year already, but nothing serious. It is his senior year and it scares me to pieces. I love him so much. I am nervous about him becoming 18 in just 5 short days. I remember when he was my baby. So small and needy. And, now he is so big and independent. Because of the football game I have no idea what I am eating for dinner. One of the reasons I am having a big steak for lunch....to hold me over. I do plan on taking snacks to the game with me. Or else the smell of the popcorn may take me over, and I don't want to ruin my streak of non-bingeing. I may even take a few sugarfree candies with me

So...I love cooking. My days off are every thurs and fri. Today, being my day off, I am baking two cakes for my friend's daughter's birthday. This cake I have made many times, and it is my most requested cake. The aroma in the house is amazing. BUT...I am an oak. I have not even licked my fingers when the frosting got on them. WARNING>>>this picture may send you into sugar shock.

Thank you They are my pride and joy. It is heartbreaking to me that he is turning 18 soon. Sort of bittersweet. I am excited to see him blossom as an adult, but my heart is breaking as well.

I know!!! I still find it hard to believe that I have lost 17 lbs already. EVery morning I check the scale..I probably will tire of that soon, but for now I like weighing everyday.

Laura, I feel your pain about your children. Sometimes I feel like no other parents around me love their children the same way that I do. They often talk about how it's an inconvenience, or complain about them. Life isn't perfect in my house, but I can't imagine them ever making me so miserable. My younger son and I both know the dynamic will soon change in our house when Andrew goes to college. He is a great role model for Christian. He helps me in ways that other single moms just don't get. These boys have never been a burden to me. ANd, you are right, when he does leave the nest, I will be reassured that I did my best while he was under my wing

I just got back from the game, and was perusing the main lobby. Saw a post about eating sugar free gummy bears. Um...that is what I was eating at the game!!! And, now my belly is doing freaking flip flops!! I didn't know that was why, I was hoping I wasn't coming down with something. I hope this doesn't put me out of ketosis. Needless to say I was running to the bathroom as soon as I got home. I work tomorrow and hope this is over and done by then. That would really suck if it wasn't!!!!

So, my stomach feels better now. I just checked and I am knocked out of ketosis I probably will never get sugar free candy again. I weighed myself and i weigh 197.6. Not bad on the weight, but oh what a night. Never again.

Honey forget that sugar free candy junk -- it is full of chemicals and will only stall you. If you want something sweet, here are some safer options that won't stall you and won't make you run to the bathroom every five minutes:

*Cup of flavored coffee with splenda and cream or half and half (I have one cup of German Chocolate Cake flavored coffee most mornings --it does have 1-2 carbs but no sugar and the taste is great)
*Cup of flavored tea (still sugarless but great)
*Cup of fresh strawberries or blueberries or blackberries with a dollop of whipped cream
*You can also make homemade sweet and spicy nuts -- put a few cups of nuts in a bowl, cover with melted butter, add splenda, cinnamon and nutmeg and coat well. And then you bake them in a hot oven for a few minutes

Linda Sue and Sugar Free Sheila also have some great legal sugarless dessert recipes that are great and will keep you on plan. Lots of folks make those cream cheese clouds and add DaVinci's sugar-free syrup to them.

Thank you so much Gail. I did make a cheesecake this week using a low carb recipe. Cheesecake just isn't exactly portable to football games. But, the spiced nuts is a great idea. I plan on buying coconut oil in the near future as well and making these fat bombs I keep hearing about. I love Linda Sue's website, but never heard of sugar free sheila. I will look her up. I am so mad that I thought I was doing good, and am not. I did check after breakfast, and I am back in ketosis, so I don't know if my early reading this morning was a bad one, or what, but it is scary to think all of my hard work could be gone so fast!!

Tonight was a long night at work. I started at 3:30 this afternoon and didn't get home until midnight. I work at Macaroni Grill. Lots of Italian food. BUT...the nice thing about our restaurant is we have something called "Create Your Own Pasta". So...tonight I made one... I did Meat sauce with 1/2 oz. asparagus, 1/2 oz spinach, 1/2 oz mushrooms and added meatballs and italian sausage with NO pasta. The chefs threw it together for me, and that was my dinner. I only could eat about 1/4 of it because it was so filling, but I didn't care. I was happy that I could get something to accomodate my hunger and stay in my carbs

Breakfast this morning was a treat from my son. He took me to Cracker Barrel. I ordered 3 over easy eggs, 2 sausage patties, 3 bacon slices, 2 tomato slices and sauteed mushrooms. AND...I couldn't finish that either lol.

Since breakfast was so big, before I went into work I just had a slice of that yummy cheesecake I made this week. That was my "lunch" I guess. It held me over until around 9 this evening when I ate at work.

When I got home, I had a diet dr. pepper. And, that was my day. I am pretty sure my carbs were ultra low today. Right now I am worn down from working all night, and I feel content. I am not focusing on having another snack. I am happiest that I have not binged all week long. Monday will be one solid week, and then move on to two solid weeks. Thank you Gail and Laura for all your support and kind words

Broccoli Cheese Soup

I tweeked this a bit. Came out to be about 7 carbs. Normally I would sub out the velveeta, but I have a ton of it in my fridge.

1/4 c heavy whipping cream
8 oz. velveeta chopped
2 bone in chicken breast, meat removed
2 oz. cream cheese
2 tbsp butter
1/2 leek
3 c broccoli
1 can chicken broth

In the future, doing away with the velveeta and using shredded cheese will save a few carbs.

I want to make these for breakfast as well I had one a few weeks ago and was pleasantly surprised!

MIM
¼ cup flax meal
½ teaspoon baking powder
1 packet granular sugar substitute (sucralose) <---I use Splenda
1 teaspoon cinnamon
1 large egg
1 teaspoon butter
Directions:
1. Put the dry ingredients in a coffee mug. Stir. Add the egg and the butter. Mix. Microwave 1 minute (or more).
2. Take out and slice, butter and eat.

AND...this is going to be my Sunday night dinner

Roasted Bacon-Wrapped Pork Loin & Cabbage

1 2-1/2lb pork loin roast
6 slices thick-cut bacon
salt, pepper, garlic powder and thyme to taste
1 large head cabbage, shredded

Place roast in large roasting pan. In a single layer, arrange bacon slices over top, tucking under roast. Roast at 350°F for 1 hour. Shred head of cabbage (you can add whatever other veggies you'd like at this point). After roast has cooked for 1 hour, arrange cabbage shreds around roast and return to oven and adjust temperature to 400°F and roast for an additional hour, turning cabbage often.

Linda Sue has a recipe for Grandma's German "Potato" Salad. I think I am going to make that with this as well. Nice, comforting dinner for Sunday

I am off to work for right now. closed the restaurant last night, and opening it this morning Gotta make the money honey!!!!
