So...the zucchini fritters turned out great! The boys loved them. The bacon beef rolls were a little too much though. Too much meat. They tasted good, but none of the three of us could get through one. I have 4 left in there and will probably use them up as lunch the rest of the week.

They should have been about 5oz each, maybe a little less after being cooked. We had two left out of the six. I had one for lunch today with cabbage. They are definitely meaty, like mini-meatloafs. Sorry you didn't like them so well, but glad your fritters were a hit!

The recipe called for 2 lbs. to make 6 of them. I ended up making 7 out of the 2 lbs. I guess we just aren't used to having that much ground meat in one bite. They tasted good, just a little much. Next time, I might make meatballs and cut the string cheese into little pieces. Stuff a cheese into each meatball. I love the concept, just maybe not so much meat in one serving. To be honest, my boys and I are NOT meatloaf types. I rarely make it, and every time that I do, we end up eating something else, so maybe that is where the issue was for us. I'm gonna work with that meatball idea though. Maybe make some dreamfields pasta with the meatballs.

Ah! Need to make 'em smaller, put some other stuff in 'em too... I LOVE meat! When I saw the pic I was wondering what the cheese was... that I'd leave out, since I don't eat cheese. Nice you like to experiment.

Who's an oak? Me. Yeah, that's right. ME!!! I baked 60 cupcakes today for Andrew's team dinner, and didn't even lick one finger. They look pretty, but I don't even want one to taste!!

Also, I toasted some pumpkin seeds this morning. Everytime I walk by I am tossing two or three in my mouth. I don't even know if these are lc. I have been nibbling on them all day long!!!! Please please please let them be good for me...

Woohoo!! Way to go! That's a huge accomplishment on it's own.

Pumpkin seeds do have some carbs, but it's only 6 net carbs per CUP, so they should be ok to snack on.

Well..I didn't eat much all day long except for the seeds, so I think I will be ok. AND>I know I didn't even eat 1/4 c let alone a whole cup!!

I met my sister tonight for wings. I had 8. 3 were garlic parm. 3 were 6 pepper. and 2 were cajun ranch. I also had two absolute and soda w/ a lime. Delicioso. I guess that will make up for the carbs I missed out throughout the day!

Tomorrow morning I am weighing and measuring Lets see how it goes!!!

On September 13, 2013, I weighed 216 lbs.
My neck was 14".
My upper arm 14 1/2".
My wrist 6".
My bust 43 1/2".
My rib cage underneath my bust 38".
My waist 39".
My stomach 43".
My hips 47 1/2".
My upper thigh 25".
My ankle 9 1/2".

On October 25 2013, I weigh 189.8 lbs.
My neck 13".
Upper arm 12".
Wrist 6".
My bust is 41".
My rib cage under my bust is 36".
Waist 36 1/2".
Stomach 40".
Hips 45".
Upper thigh 25".
Ankle 9".

That brings my total to 26.2 lbs gone and 16.5" gone Yeah buddy!!!

I don't know how it's happening, but it's happening I am so happy. I have never stuck to anything longer than about a week. This time feels different. I am much more dedicated, and definitely not messing around with the food choices as much. I am sticking to what I know, trying new things within the rules of low carb. So far today...

B~mock danish w/glaze, 10 pumpkin seeds
L~3 slices of spicy sausage with peppers, 1/4 of chicken scallopine (from macaroni grill), no pasta, substitute grilled asparagus...I could barely make a dent in the dish, and before I used to be able to eat the ENTIRE thing and still be hungry!!
S~fat bomb


Once again it is game night, so I will probably be making some spiced nuts to take to the game. I am not sure what dinner will be, but probably some popper chicken or a leftover bacon beef roll.

I am not doing any exercising yet, but am tempted to start doing some strength training. I have 3 lb, 5 lb and 8 lb dumbbells. I am still nervous about my bad knees. I tore my miniscus (?) a few years ago, and sometimes I can still hear it crackling when I push it too much. My doctor did give me a few different exercises to do. It has not escaped my attention that my upper thigh has not budged one inch since I started, but everything else has. One exercise he gave me was to stand next to my couch and bend my leg into an L shape then kick back while holding onto the side of the couch. Do it 10 times, then switch sides. I did start doing those.

That's very common, the thigh doesn't lose right away... but it will!
The wts are a good idea! But do be careful. I can't do lunges... it hurts my knees, right off the bat, no matter if I just take smaller ones, or deep. If you have wts you can put on your ankles (or maybe don't need wts at this stage) but lay on your side & do leg lifts... those work the inner & outer thigh.
The one your dr told you sounds like one that would work the behind..

Have fun at the game tonite and be careful doing those kick backs (if they are how I am picturing them). My mom tore hers last year and had some exercises to do but they ended up making it worse. I don't know she may have been doing them wrong.

I have a question - how did you get your picture large-sized in your post? All I have is the icon for adding picture and it asks for a url so I upload on here at the faces photos but then it makes it thumbnail size in my post. I posted a picture of my pizza tonite and it is really tiny.

Hi,
I have advanced editing.... go to user control panel, Click Edit Options, scroll down to the bottom of the page, Message Editor Interface, choose Message Editor Interface WYSIWYG Editing...
Then you should see a 'picture' in your editing choices... click that & paste in your url... it puts the picture in your post.

The picture I want to put up, I just left click on it and copy the url. When I click on add pic here, I paste in the url. That's it.

So, I am just now getting around to making the sausage balls. The recipe is a little confusing because it says you will get 48-50 balls, but then it says combine 2 tbsp of meat and roll into a ball. Doing this, I will end up getting about 38-40 balls. So, the recipe is a little off. The first pan is in the oven baking right now and I can't wait to taste one after they get out.

The game tonight was FREEZING. When I got there at 6:30, it was 45 degrees. That was when the sun was still a little bit out. As the night went on, it only got colder~Andrew got a touchdown tonight They did not win though. Next week is senior night and the last game of his high school career. Going to be a tough night for me!

I had three of them last night, and they were delicious!!! I ended up with a total of 35 from the recipe using her method of 2 tbsp rolled into a ball. I guess you could make them smaller...one tbsp per ball. I can't wait to use this as a go to breakfast for the week!!!

B~4 sausage balls, pumpkin bake w/whipped cream
L~rotisserie chicken dipped in lc bbq sauce, guy fieri's spicy one

I am working tonight, so probably gonna have a snack before work and hope it holds me over. If not, I will get a salad at work with grilled chicken or something. I haven't had any veggies yet today (besides pumpkin). If I can wait until I get home, then I will have a bacon beef roll and some salad.

OMG...so getting ready for work. When we first got the new uniform shirts, I ordered a large, and it was too small, so I put that one away, and got the xtra large instead. Just now I pulled down the large shirt just to see, and it FITS. AND>..well I am so freaking happy!!!!!!
