Tonight I am making taco salads I am using Linda Sue's taco seasoning mix LINDA'S TACO SEASONING - Linda's Low Carb Menus & Recipes, and making those chips I posted a picture of. The chips are in the oven right now. Please, please, please let them turn out delicious I am feeling mexican tonight!!

Okay...skip the chips I was so disappointed. They smelled good. They looked good. But, I was wanting tortilla chips, and they just tasted like melted crisp cheese, and not even as good as the cheese crackers you make in the microwave. You couldn't taste the seasonings on them. I made my taco salad and surrounded the plate with the chips. I had already tasted two of them, and was still questioning whether I would like them or not. I ate one with the taco salad, and granted it was sturdy and crisp, but it just didn't taste good. I ate one more, and thought, why am I wasting my carbs on a chip that I am really not enjoying. I threw the rest away I did finish my salad which was delicious. I might look on Linda Sue's site and see if she has a tortilla recipe that is different.

Also, they needed a lot more cooking than the recipe suggested. I baked them 8 minutes. Let them cool. Cut them. Broiled them for 2 minutes watching carefully. Let them cool and only the ones on the outer edge got hard. So, I rearranged the softer ones and broiled two more minutes. I had to repeat this process 2 more times It was a lot of work and watching constantly and not very good results.

It has been almost a year since my first spot was found in my left breast. After long days of testing, a minor surgery and a little chemo, I was okay by Christmas. Last week, I took another mammogram, and they found new spots I got the letter today. They said not to panic, that it might be benign. But, I have to schedule more in depth tests. I am trying not to freak out.

On September 13, 2013, I weighed 216 lbs.
My neck was 14".
My upper arm 14 1/2".
My wrist 6".
My bust 43 1/2".
My rib cage underneath my bust 38".
My waist 39".
My stomach 43".
My hips 47 1/2".
My upper thigh 25".
My ankle 9 1/2".

Today I weigh 193.6 lbs.
My neck is 13 1/2".
My upper arm is 13 1/2".
My wrist is 6".
My bust is 42 1/2".
My rib cage under my bust is 36".
My waist is 37".
My stomach is 40".
My hips are 46".
My upper thigh is 25".
My ankle is 9".

That brings my total loss to 22.4 lbs and 11.5". Tomorrow morning is my appointment to get my hair done. That was my reward for the last goal being reached. My next goal is to hit 180 lbs and 18". When I do that, I think I will treat myself to the opera house. Sweeney Todd is going to be showing soon. Plus all of the Christmas plays are on the way. That would be a fun night out

Just checked my BMI...and as of right now, I am still obese, but well on my way to becoming overweight. At 174 lbs, I will be considered overweight, and at 145 lbs, I will be considered normal.

My prayers are with you. I can imagine how scary this must be for you.

COngrats on all the weight and OMG the inches!! WTG! Have a wonderful time getting your hair done and definitely treat yourself to the opera! Get your mind off all the stress you are facing. Sweeney Todd - is that the new Johnny Depp movie? He just never seems to age. Weird, but I love his movies.

Oh, so mad about those chips.... I wanted them to be Great!.. I saw a post somewhere about new chips at wallyworld that are supposed to be good - Kitchen Table Parmesan Crisps, supposedly all cheese and made in 5 different flavors. They are already baked, so maybe try them and see if they are better. I am using you as my guinea pig

Have you made a list of your LC recipes that your family likes? I am starting to do that so I know what I can fix again that everyone here likes to eat, so I don't have to cook two separate meals.

I hope your tests come back saying everything is all right. I've read that low carb diets can help keep cancer from growing. I'm hesitant to link because I've been reprimanded for that already, but if you're interested in reading up on it, search for "caveman doctor cancer" in google it should bring you to the source. Please don't freak out :hug:

Congratulations on all your progress! That's amazing for just one month. Enjoy the theater!

Thank you everybody! I had my mom and my sister come over today. They really made me feel better. My sister brought my two little nieces over. Bella is 10 months, and Juli is 4 years old. They always brighten me up.

Made 4 pans of brownies today for Andrew's team dinner tonight. This is how I know I am in a good place. Life has been crazy lately, and I wasn't even thinking about tasting a brownie. I wasn't even craving one. That is where I am one month after starting low carb, and it feels magnificent!!

I did make the gumbo today. My mom and sister loved it. Andrew had some when he came home, and he did say, where is the rice, but I told him no rice or I wouldn't be eating it, and then he said it was pretty good without the rice

Tonight is parent teacher conferences. I have to talk to Christian's teachers. He is slacking a little. Mostly A's, but then a big old D in Science. I need to know what is going on. Hopefully it is something that he can fix before the end of the marking period.

Once again, thank you for all of your support. You ladies are really amazing to me

Very sorry to hear about the letter, I'm sure that must be scary but you seem to be handling it well by staying calm -- I hope all turns out well.

Thanks for letting us know the chips were not that great, I have had hit or miss results with all of the "chip" recipes I've tried.

Wow that jalapeno popper chicken looks great. A LC blogger I follow has a tasty sounding recipe for jalapeno popper cauliflower that I wanted to try - maybe I can combine the two into a casserole for lunch next week.

I finally got some cinnamon so I can make the pumpkin bake -- I have been meaning to make it since October began!! Finally! Yay!

I'm not around much on the weekends, so I will say have a good one!

and hey!! very cute hair!! I just had lowlights and highlights put in mine last weekend, too impatient to wait for my next goal.

Thank you everyone. Ha ha, that picture is without a lick of makeup on. My face is nice and bright rosy red I made my son take it as soon as I got back from the beauty school. I do love the new highlights though!!

Tonight is Andrew's football game. Including tonight, he has 3 left. He has had several colleges chasing him to play football for them next year, and last night, he announced to me that he is not interested in playing football after high school. Kudos to him. He is a smart kid, and doesn't really need a sport in college to earn free money, he can do that all on his own. This senior year, he has been hurt so much. He has busted out his front teeth (they are rebuilt now), he has pulled his lower left calf muscle, he has had a concussion. I could not be happier that he is thinking about hanging up his cleats. He also plays basketball and baseball too. He told me he is thinking about not joining the basketball team this year and only playing baseball. This boy is now 18, and my only rule is if he started something that he needed to finish it. Don't quit in the middle and let your team down. So, if he doesn't want to play bball either, I won't be upset. It is a refreshing thought that I have raised a young man that is not afraid to stand on his own, to buck the system(but in a good way).

I have been secretly weighing myself and just not posting it because I said I wouldn't weigh myself except once a week, but this morning I was down to 191.8 So close to hitting the 180's!!!! I am just too excited to keep it to myself!

Work was pretty good today. Prosperous And, I had to train a new manager that I thought was going to be annoying, but he ended up being pretty cool. He was nice and we ended up chatting for quite a while. I got out a little early because the Browns are playing and everyone in Cleveland does ABSOLUTELY nothing when football is on. lol. The restaurant turned into a ghost town! Anyway, it was nice to have the evening free.
Food was a little unconventional today. I stopped at the grocery store on the way to work, and found a beef jerkey that was only 1 carb. Wild Bill's. Never heard of it before, so I got it. It was a little salty for me, but not horrible.

My house is so cold I tried to turn the heat on, but I think my pilot light needs to be relit. We had a party for Andrew's birthday, and the little ones kept going in there wanting to play. They might have hit that switch. I gotta figure out how to get that done now lol. I am horrible at home repair stuff.

Probably going to enjoy a movie with the boys and relax the night away. Might take a hot bath first

Holiday appetizers or breakfast on the go???



Easy Sausage Ball Recipe
Makes 48-50 small breakfast balls

2 pound ground pork breakfast sausage
1 pound ground meat (beef, chicken, turkey)
3 eggs
2 tablespoons of dried onion flakes (or onion powder)

2 tbsp garlic powder (optional)
1/4-1/2 tsp red pepper flakes
1/2 tsp pepper
1/2 pound shredded cheese (I usually use sharp Cheddar, get the good stuff)

Directions

Mix meat and eggs together.
Add seasonings.
Mix in cheese.
Use small or medium scoop and place balls on foil lined baking pan (or measure 2 tbsp amount and roll into ball).
Bake at 400 degrees for 15-20 minutes or until slightly brown.
Store in refrigerator and reheat in microwave for 45-60 seconds.Nutrition: Basically none! The only carbs you get are from the cheese and it is insignificant over the entire recipe!

This one looks delicious too~

Coconut-Chipotle Chicken Stew
Serves 4-6

2 tbsp coconut oil
2 lbs chicken boneless & skin-less chicken thighs
2 bell peppers, cut up into 1” chunks
1 sweet onion, cut in 1” chunks
15 oz diced tomatoes
1/3 cup fresh lime juice
2/3 cup coconut milk
6 cloves garlic, chopped
1 individual Chipotle in Adobo, chopped, plus 1 tbsp sauce (less if you don’t want as much heat)

Additional Toppings: Avocado, more lime juice, chopped cilantro and more coconut milk.

Directions

Stove Method

Season liberally chicken thighs with salt and pepper. Add oil to dutch oven or large pot and bring to medium-high heat. Add seasoned chicken thighs and brown on each side for 5 minutes. ( You are not trying to cook chicken thighs all the way.)
Add onions and bell pepper. Cook for an additional 5 minutes, stirring occasionally.
Add tomatoes, lime juice, coconut milk, garlic and Chipotles in Adobo. Stir.
Reduce heat to med-low. Cover and cook for 1 hour on top of stove or finish off in oven for 1 hour at 300 degrees F. After turning oven off, you can let it stay for a few more hours until we were ready to eat.
