Mjgh...I think the ingredients you see that aren't listed are the pizza toppings. The recipe is for the crust. I have not tried it yet...but plan on making it this week! I think my kids would love it

Thank you both for all of the compliments. I am eating on plan, but the weight has still stayed the same lol. I think I am going to stop weighing daily and maybe only weigh when I take my measurements. About once a week or so. I really don't need to know if I have gone up or down 1/2 an ounce every day

Today is back to the grind. I go into work tonight and won't be able to lift my head out of the sand until Wed afternoon. I work long days, but then get Wed afternoon until Sat evening off. It works. It's like a long weekend, just not on the weekend

I am making that mock danish again for breakfast, that was pretty yummy. have a great day ladies! I might check back in with my menu for the day after I get out of work, but that will be close to midnight~

I got the recipe from Peace, Love, and Low Carb (blog).

2 Cups Shredded Cheddar
1/2 Cup Parmesan Cheese
1 Tsp Cumin
1/2 Tsp Garlic Powder
1/4 Tsp Chili Powder

Line a cookie sheet with parchment paper and spray lightly with non-stick cooking spray. (It shouldn't stick to the paper anyway but I always give it light spraying.

Pour the cheddar cheese onto the parchment paper and spread out as thin as you can. (In the shape of a rectangle.)

Sprinkle the grated Parmesan evenly on top of the cheddar cheese.

Combine the Cumin, Garlic powder, and Chili powder and sprinkle evenly on top of the cheeses)

Bake on 400* on the middle rack for 8-10 minutes. Check on it constantly as it can go from zero to burnt in no time at all. Set cookie sheet on a cooling rack and let cool for 10 minutes.

Remove from the parchment paper and cut the cheese into strips. (I used kitchen scissors for this) After cutting the cheese into strips, then cut each strip into triangles.

Place "Chips" back on parchment paper and broil on high for 2 minutes. (keep an eye on them... Even though it is only 2 minutes, they can burn very fast)

Let the "chips" cool and crisp up - about 30 minutes


I am so making these chips!!! Obviously you can make whatever taco toppings you want in the middle, but these chips look and sound fantastic

Crab cakes and tarter sauce

Crab cakes

16 oz of canned lump crab meat
2 egg yolks
1 whole egg
1/4 cup of chopped onion
1/8 cup of finely chopped green bell pepper
liberal sprinkling of old bay seasoning (approx 1/4 tsp or more..whatever you like)
sprinkling of celery salt (1/8 tsp or more)
as well as a sprinkling of salt, pepper, garlic powder, and onion powder


Mix egg yolks and whole egg together with fork then add to crab meat and mix thoroughly. Mix in the spices and the onion and green pepper.

Using a round cookie cutter placed on a platter or other flat tray, spoon crab mixture into cookie cutter and pat down. Remove cookie cutter and continue filling cookie cutter and making cakes until all crab meat is used. This method gave me exactly one dozen perfectly sized cakes. Refrigerate the platter of cakes for one hour.

Tarter sauce

2 Tbsp of Mayo
1/2 of a dill pickle spear cut into tiny pieces
Dill weed (a sprinkle)
A few drops of liquid Sweet N Low
a drop of yellow mustard

Mix and chill

Remove crab cakes from refrigerator after on hour and cook in olive oil in a nonstick pan until browned on both sides (approx. 5 min or so a side)

Top with the chilled tarter sauce...and ENJOY!!!

Just got home from work. What a long night! Lot's of guests tonight. I did not eat at work, so on my way home, I stopped and picked up filets from the grocery store. I pan seared the filet, then topped it with some salad shrimp and pace queso cheese sauce. OMG...this is so freaking good. And, only 3 carbs!!

B~Mock Danish, Iced Coffee
L~Stuffed Zucchini Boat, Cheesecake
D~Steak topped with queso and shrimp

Working this morning, then going shopping for the week. Today I plan on posting daily meals for the week. I am so excited to try some of these new recipes. Breakfasts~either mock danish or sausages fried in butter/olive oil w/splash of cream and diced onion
Lunches~Homemade Chicken Salad or leftovers
Dinners~Gumbo, Taco Salad, Pizza, PorkChops with Cauli mash and asparagus, leftovers
Snacks~spiced nuts, fat bombs, jello w/ whipped cream

so I haven't been counting calories, just carbs. Tonight my sister picked me up after dinner and I went to Applebee's with her. I ordered 1 absolute and soda water with a lemon slice and a lime slice. Also, I ordered 10 hot buffalo wings. I ate 8 of them. When I got home, I plugged in all of my food just to see what my calories were for the day, and to see how I REALLY am doing with counting carbs. BIG SURPRISE...My carbs were 21, so that was good. My fat was 153 and my protein was 124. BUT...my calories were 2,043!!!! If I wouldn't have gone to Applebee's, which I really didn't need. (I wasn't hungry)I would have been 670 calories and 8 carbs shorter!!!! I was really surprised at how high my calories were. In the future, I am going to have to stick to my plan, and not eat EXTRA meals. AND...my sister already gave up on low carb I am sad to see her decide not to do it, but I can't force her to either. I am sure she will come around once she sees just a little more weight melt off of me

So, while out last night with my sister making a store run, and Applebee's ofcourse, I found three sugar free davinci's. I got caramel, hazelnut and vanilla! So, my mock cheesecake I changed a little this morning. I used 1 egg, 2 oz. cream cheese, a little caramel syrup, 1 splenda packet and a pinch of cinnamon. The glaze was 1 tbsp butter, a tiny bit of caramel syrup and a pinch of cinnamon. I am hoping it has a "flan like flavor" to it. We will see. I am having it with an Eater's Digest Peppermint tea w/one packet of splenda with my danish as well. So freaking yummy.

Lisa, you are going to love Jody's Pumpkin Bake. It is really, really good. We have made it before and loved it. Tony likes to eat it for dessert but most folks eat that for breakfast. In addition to being low carb, it has lots of good fiber from the pumpkin and as well as tons of vitamins -- not to mention that nice "fall" flavor!

This is really weird. Last night I had an extra meal that almost tacked on an extra 700 calories!! I know I said I wouldn't weigh everyday anymore (basically because I wasn't moving much and I didn't want to get discouraged), but this morning I did weigh. AND...the scale moved! I am at 195.2 lbs now. How does that happen??? Increasing calories made the scale move...it doesn't make sense to me.

WooHoo Weight Loss! Personally, I don't think the calories are as important as what you are eating, unless you are doing everything right and have stalled. Then I'd worry about the calories. Sounds like you are finally getting the loss we all knew was coming for you.
When are you making the mock cheesecake? I want to know how you like it. The pumpkin bake sounds really good too. I can't wait to add that all back into my diet. Soon, soon. Before the holidays most definitely.

I have made the cheesecake, and eaten it lol. I made that last week! I plan on making the pumpkin bake tonight after work. That way it can chill overnight, and I can have a scrumptious piece for breakfast

My sister is coming for lunch again today I made the pizza crust this morning, and let it cool in the fridge. Just took it out and I can pick it up!!! So happy. Cooking up some spicy bob evan sausage to put on top. That, pepperoni and mushrooms. I did find a low carb pizza sauce. Nature's Basket Organic Pizza Sauce 2 carbs per 1/4 cup. Not too shabby I hope she loves it!!!!

I found it at walmart!!! I looked everywhere too, and couldn't find it anywhere. I went for a late night run with my sister to walmart last night, and randomly decided to look there, and lo and behold it was there!!!

Today's menu...
B~mock danish w/ caramel davinci instead of splenda
L~Iced coffee w/splash of vanilla davinci, piece of pizza, small shredded lettuce salad w/ diced tomatoes and green onions, Kens low carb italian dressing
D~crystal light strawberry, 2 slices of pizza, 1 pickle

Work really sucked tonight at work Normally, I just take it in stride because if one day is bad, the next is amazing. I was the closer tonight, and I only had 5 tables all night long!!! I made $50 for 5 hours of work~and it was so slow monroe, which just makes it all the more boring.

I had a hard time sleeping again last night. I can't wait until this Celaxia really kicks in and I can sleep again. Because I fell asleep so late, when my alarm clock didn't go off this morning, I slept in until 8:30~~The kids start school at 7:45! Ugh...I had set my clock for PM instead of AM. This is the second time this has happened this year. The teachers are probably wondering what sort of mom I am Anyways, they are at school now, but both of them missed their first classes. I really have to start falling asleep at night.

Woohoo! Glad the scale moved for you! Maybe I need to go to Applebees.

I love seeing all of your recipe ideas -- I have tried other versions of those cheese "chips", but not a tortilla chip version yet! I would love some "nachos"! I also have that pumpkin bake from Linda's site on my weekly recipe list, I can't wait to try it. I've been dying for something pumpkiny since October arrived. Having it for breakfast is a great idea -- I love eggs, but it would be nice to try something different. Especially "dessert" for breakfast! Yes, please. Maybe I will make it tonight if I can find the time.

br3n...Linda Sue suggest cutting it into 6 pieces, but I cut mine into 9 pieces, and I still think they are big!!! Less carbs per piece I had my first piece for lunch...and have to say...it was SCRUMPTIOUS. A little redi whip on top

I did pick up Wendy's today for lunch. I ordered the double baconator and asked them to put mayo, pickle, tomato and lettuce on it. I also got a half Chicken BLT salad. I pulled the burger and toppings off of the bread and promptly threw it away. Most of the mayo stuck to the bread, and the tomato looked ridiculously skimpy. So, I didn't eat that. The salad looked good, but after I ate the burger, I was full. Didn't even take a bite of the salad. Then I looked up online what the carbs were for the salad. 9, plus 2 for the dressing. I try to limit myself to 20 carbs per day. So...I just threw the salad away. I really don't eat fast food to begin with. It was a special treat. And, eh...I probably won't do it again. i would rather splurge on the wings at Applebees

I finally added a ticker to my signature! I never really bothered with it before. I guess I never fully gave myself over to the low carb lifestyle, but this time feels different. It feels like I have support. And, not just online. It feels like I am really making positive changes. I love it.

Last Christmas, Andrew's dad bought me a nutribullet. First Christmas gift he had ever given me. Even when we were together ions ago. Doing low carb, I pretty much haven't used it. Not going to a meat and veggie smoothie

I have never like mashed cauliflower. It never turned out right for me. This is where the nutribullet comes into play. I steamed a handful of frozen cauliflower in the microwave, added some hwc, parmesan cheese, salt, pepper and garlic powder. And...smoothied it in the nutribullet. OMG>OMG I will definitely be doing this again!!!!

Right now I am listening to my chicken finishing up frying. I am doing the pork rind crust on a chicken breast. I will let you know how it tastes. I know it wasn't part of my menu plan, but I am an improvisational type of girl. I use what I have in the house and make different stuff all of the time!

Interesting mashed cauliflower. My DIL said its really good 'burnt'... put on a cookie sheet, oiled & seasoned... bake till crispy. I am going to have to try it, haven't enjoyed cauliflower for a long time.

It is good burnt!!! I have thrown it on the grill lol. I do broccoli like that too. I have to tell you that throwing that cauliflower into the nutribullet and blending it...it didn't even taste like cauliflower!! It was crazy. I did add parmesan cheese, so that probably is what really changed the flavor, but it was insanely good. Christian kept dipping his finger into my "mashed potatoes" and said how come you never made this kind for me? lol...

AND...the pork rind breader for meat is definitely worth it@!!! That was amazing. Super crispy. Did not taste like pork rinds at all. I only did one breast for myself because the boys ate while I was at work. But, I crushed about one handful of pork rinds, grinded up it measured to 1/4 cup. I added 1/4 c grated parmesan cheese. A little seasoning. Dipped my chicken into egg and then sprinkled the breader on and pressed it into the chicken. I put the chicken in the fridge while I heated up the oil(I have always believed it helps the breading stick better). Then fried the chicken up in a frying pan with a little canola oil in it. It was so freaking good. I made a sort of "honey mustard" to dip into. I mixed a little mayo, a little mustard and a splenda packet.

I love reading your recipes and ideas for making low carb food that doesn't taste low carb....every once in a while the chicken finger craving definitely gets to me so I will be using your idea of pork rinds and parmesan "breading"! Seems cheaper and easier and tastier than almond flour.
