Awe thank you Bejewelme!! I have had my moments in the past few weeks. Really haven't lost any weight, but haven't gained any either. I wouldn't call it a stall, more like an experiment lol.

Anyways, today I threw away the rest of the turtle cheesecake. To be honest, it was delicious, and I didn't over indulge, but I would rather make the low carb cream cheese muffins. They taste better to me! Less expensive ingredients, more convenient to take with me. And, I never get tired of them.

For lunch today, I am making a curried tuna salad. A little bit of almonds, celery, green onion, sour cream, mayo, lemon juice, pepper and curry powder blended with a can of tuna. I am going to eat half of it today for lunch with some shredded lettuce, and save the other half to either a)toss into an omelet for breakfast or b)have again tomorrow for lunch! I think I have some sf bread and butter pickles in there, I might add that for a little sweet crunch too.

Breakfast was pure convenience today. I had to run around and do some grocery shopping, so I needed something fast. I had an atkins creamy chocolate shake and an oscar meyer P3 pack. What is that you ask? Well for me, it is a new revolution. It is replacing my "starving moments in the grocery store". They are kind of expensive, $1.50 per pack, but honestly, what is the difference in getting this little packet and buying a candy bar? My health, that is what is the difference



The only thing really missing is a big old fat dill pickle

I almost forgot to share the best news ever! Andrew's financial aid package came in the mail over the weekend from ONU. It costs $39,000 yearly for the program that he is taking at the university. They are letting him attend for $6,450 yearly!!!! That is not even including local scholarships that he is applying for. I am so proud and excited for him!!!!

Just made a new version of the cream cheese muffins.

2-8oz cream cheese
2 eggs
1/4 c xylitol
1/4 c erythritol
1/2 tsp lemon extract
zest of one meyer lemon
juice of one meyer lemon

I have the "special" sweeteners leftover from what I bought to make the turtle cheesecake. And, my grocery store had a whole bag of meyers lemons for $2.50...had to snatch that deal up We don't normally get meyers lemons this far up north. These bad boys are baking up right now, and it will take intense will power to NOT eat one while it is hot! lol. Hoping I can have one after work tonight if they are chilled enough

And...I decided to skip the tuna salad on lettuce. I went with a lc tortilla cut into chips and fried in canola oil. Put the tuna on top like a nacho topping.

Finally a pic of lunch. It was so freaking good. I might skip the omelet tomorrow and make these bad boys again!!!



Curry Tuna Salad Nachos
1 pckage of slivered almonds (the small one over by the bakery aisle)
2 tbsp butter
1 celery, cut in half, then into thin slices
1 green onion (I used my kitchen shears and snip them right over the bowl)
1 can of tuna, drained
2 tbsp sour cream
2 tbsp mayo
1 tbsp lemon juice
pepper and salt to taste
1 tsp butter
3/4 tsp curry powder
1 lc tortilla (once again, I use the kitchen shears to cut them into 8ths)
4 sugar free bread and butter pickles slices, chopped
1 chive, (snip them over the nachos)
small sprinkling of parmesan cheese (I had some shaved parm in the fridge so that is what I used)

Saute the almonds in two tbsp butter until they are nice and roasted looking. Put into a bowl, butter and all. Add the celery, green onion, tuna, sour cream, mayo and lemon juice. Stir well. In the same skillet you sauteed the almonds in, heat up the tsp of butter and add the curry. Stir around for about 1 minute, then scrape into the tuna salad. Stir all together. (At this point, the salad is a little warm, if you have lots of time, chill it in the fridge until you need it. If you are impatient like me, throw it in the freezer while you make the nachos.)
Heat up a little canola or safflower oil in a small pan. No need to put a ton of oil, maybe 1/4 of an inch to a half inch. Put the tortilla triangles in, a few at a time. Let them fry until they just start to change color, then flip them. All in all, they are done within a minute. They fry very fast. When they are all done, and drained on paper towels, take the tuna out of the freezer. Put a small spoonful on each one. (The tuna is 2 servings, so try to calculate half of the mixture to be used) Top w/ chopped pickles, chives and parmesan cheese. These were so amazing.

P.s. I forgot to tell you to add salt and pepper to the tuna. It really enhances the curry flavor.

I agree those P3 packs are the greatest they are expensive but when it comes down to grabbing something I would rather spend it on them, I have them at work, home just in case!!!!!

I like curry on tuna, tuna frm the can is not a fav, but curry is so much better on it for some reason!

I made a batch of LC breakfast balls, sausage and beef, eggs and cheese and onion I baked a bunch to heat up for breakfast

WOW....what wonderful news for you guys.

Your "tuna nachos" look good. Wouldn't the topping be good hot? Or have you ever tried it that way? I have never used xylitol or erythritol.....They give me diarrhea. I have only used Splenda. Would that work in the muffins?

Tell your son I think he is an amazing young man.... And pat yourself on the back for raising him.

Judy, normally I always use splenda The only reason I used the "fancier" sweeteners is because I spent the money to buy them for that turtle cheesecake. I need to use them up. I didn't even try the tuna hot, but I could have done like a "tuna melt" on top of the nachos....yuuummmm

Breakfast today was simple. An Atkins Peanut butter granola bar. Then I had a snack of P3 pack and sf jello while I was at work.





I had amazing wings for lunch today! 5 garlic parm wings and 5 hot cajun wings, with celery and blue cheese. Yes I did eat every single wing too


Dinner tonight was chinese, lc style On the plate, the dishes look similar, but they didn't taste similar! They were amazing. My first time making chinese cauli rice. I used Linda Sue's recipe.



The other is something called Chan's Chinese special, a combination of ground beef, bean sprouts, eggs, soy sauce, garlic and green onions. It was so good. Even the kids liked it!!

Look at these freaking cutie pie deviled eggs. They used snipped raisins and carrots to make them look like chicks. I'm trying to think of a lower carb alternative to the raisins. Something dark. Maybe olives?

okay...so obviously I am on an Easter hunt for low carb suggestions. I would do this one with sugar free jello. Maybe put them in my deviled egg plate to firm up, then scoop the middle out with a teaspoon. Fill them with a mixture of cream cheese, splenda, vanilla and hwc. OMG...I am definitely doing this.

Chan's Special
1 lb ground beef
2 tbsp oil (I used sesame)
2 scallions sliced
1 c bean sprouts
4 eggs
1 teaspoon soy sauce
salt and pepper

Brown beef over medium high heat. Slice scallions, drain bean sprouts, whisk eggs and soy sauce together. Once the beef is cooked through, the dish is done in less than 5 minutes and goes very quickly. When the beef is no longer pink, add teh scallions and sprouts. Stir for two minutes, just to heat through. Add teh egg mixture and scramble into beef mixture. Salt and pepper to taste.

This was supposed to make 4 servings, but was more like 6 for us. You could easily halve the ingredients and make less.

I found little cheese ball peeps to make, I am in charge of bringing appetizers to Easter dinner, the whole dinner is nothing but carbs so I figure I need a few low carb items! I make red beet eggs with splenda and vinegar all the time, the last batch I made was too much vinegar it is making the eggs fall apart! I hate jello it freaks me out but those eggs are really cute!!! The kids would love them! I am not going to blow it this Easter so I am going to load up on ham and eggs and forget the sides and bunny cake!

Lisa....The wings look really good. I'm going to try the Chan's Special. Thanks for posting the recipe. The Easter stuff is so cute....especially the deviled eggs (black olives would be a good sub for the raisins) and the cheese rabbit is too cute. Half slices off a mini carrot would be a good sub for the jelly beans.

Bejewelme...I won't even allow a bunny cake in my house anymore lol. I will however make those jello eggs (it doesn't weird me out) and probably make non lc cupcakes decorated for easter. That way, everyone can take a few of them home with them if they aren't all eaten. Since I started this journey, I have been fortunate enough that my parents have agreed to have holidays at my house. I have been in control of the food. Sure, it's more expensive than going there, but atleast I know that there aren't any hidden "sugars or flours" in the food.

Judy, that Chan's special was so good. I will definitely be making it again. I hope you love it. I have leftovers of that and the cauli rice in the fridge. Ready made lunches for this weekend when I will barely be able to peep my head up out of work. I plan on making all three of those ideas I posted for Easter. Not sure if I will do the original cheese dip on the rabbit, or my chicken ball recipe molded into the rabbit. I get so excited now when holidays come around just so I can try NEW LC ideas on family and friends and see what they think!
