Lisa, I am so sorry you had that horrible experience with the mechanic. I am truly outraged that he ripped you off like that. It is just so rotten, so unethical. I don't know how people like that live with themselves.

On a happier note, how wonderful that you are celebrating your precious son's birthday today. I know you all will have a great day and will enjoy the celebratory family dinner tomorrow.

Got an inch yesterday morning, but then the sun came out and it all melted. Good for getting around,
but not good for the ground since we are in a drought. We really need some.

Ha! Judy, we got so much snow last night that the streets looked no different from teh curb and yard. My son's field trip to Mohican State park was postponed. The sixth graders go every year in February for outdoor winter school. It is a blast. Now they will be going in the spring. My son is disappointed it was not today, but is pumped to go in the warmer spring instead! My car is literally snowed in. I don't know how long it is going to take me to get it out.

Today I am attempting to make a lobster bisque. My grocery store had langostino lobster on sale...$9.99 for a pound. And, I found a lobster base by better than bouillon that is 2 carbs per tbsp. I only need 1 for the bisque.

Lobster Bisque
2 c hwc
1 c white wine
1 c water
1 tbsp lobster base
sprinkle of xantham gum
2 tbsp tomato paste
1/4 tsp paprika
1 c minced lobster meat

In a soup pot, combine hwc, water, wine, lobster base, xantham gum, tomato paste and paprika. Bring to a boil while stirring. Add the meat. Let simmer for 5 minutes until cooked through. Adjust xantham gum to thicken it to your liking.

Hi Lisa! Your recipes look soooo delish. I love the idea about the hollowed out strawberries with the cream cheese filling. Oh and the salmon recipe is something i think i'll try this week.

Oh and I finally found the Dreamfields pasta, so I will have to try that this week!

So, the lobster bisque sounded better in theory. It didn't quite taste right. I ate a bowl of it, but won't make it again.

B~lobster bisque
L~chicken, carmelized onions, lettuce, sour cream, pico de gallo, and guacamole all stirred up together
S~4 pieces of italian sausage w/ peppers
D~Atkins orange chicken

Oh, and about 6 sugar free chocolate covered cherries given to me for Valentine's day. You would think I would have learned my lesson months ago about eating too many of those things in one sitting. Needless to say, my belly was a hot mess for a while today. I can handle sf candies, but like one or two a day, NOT SIX>

I agree with Monica. I live vicariously through your recipes. I'm just not ambitious enough to do all that just for myself. Maybe if I lived with someone who appreciated the effort, but I really don't want a room mate, so I'll just toddle along with my boring "easy" food....but I do enjoy seeing yours.

Today, I made cream cheese muffins. I used almond extract instead of vanilla. Then, I put two tbsp filling in each cup, put 1/4 tsp sf strawberry preserves, then 1 tbsp more of filling on top. Hope they taste delicious!!! I have to fight the urge to eat a warm one, because I know they taste so much better cold!

Yesterday...ate way too much, and not all on plan.

B~chicken w/ alfredo, mushrooms, tomatoes and sundried tomatoes over 3/4 c dreamfields pasta
s~2 lc cookies (5 carbs each)
L~3 cream cheese muffins
s~2 more lc cookies, another cream cheese muffin
D~pad thai (requested extra veggies, no rice noodles...did not come out as requested. I ate around the noodles, but did eat some of them)
S~(here's the whammy...) 6 mini oatmeal raisin walnut cookies from the mall (not my finest moment)...
I weighed this morning, and I am fine. I didn't lose any, but didn't gain any either. Probably take a few days to actually show.

On a plus note, I did go clothing shopping yesterday! Finally. Down to a size 12 in pants. And, wearing medium shirts in everything. When I started this journey, I was size 16-18, and extra large shirts. I am so happy

What an accomplishment to be down to a size 12 and medium shirt! I am still a 16 and XL shirt. I can't wait
We all have our moments with food. We are human! I did try that Dreamfields Pasta wow was it good. Tasted like everyday pasta. not different at all. I didn't even gain anything from it!!! I'll just make sure to have it once a week.

ha ha Right Jessica??? I bought the bare minimum. I have four pairs of pants (all on sale, and 2 of them second hand), about 10 tank tops that were $1.80 each, and about 6 new shirts. I am thinking that will hold me over for the time being. Oh, and I bought actual pajamas I haven't worn pajamas in YEARS> Got rid of every single oversized sweatshirt, big tshirt, BIG jeans, raggedy sweats I slept in, tank tops I swam in they were so big...all donated!! My closet looks bare, but I don't care. I am so ecstatic!!!!

Tomorrow is the last day that these damned candy bars are in my house. I have eaten 3 total in the past two weeks. I could kill my son for bringing them into my house! It sucks even more that the almond one is only 18 carbs. Because then I think, well...it isn't that bad. I could still stay under 40 carbs for the day...ARGH. Lol...the things we tell ourselves to justify eating crap.

For the record, I am throwing away the rest of the lc cookies. I bought them at TJMaxx. They were a wonderful find. David's cookies, butter pecan meltaways. 6 carbs per serving, only 1 gram of sugar. BUT...the problem is they are small, and I want way more than one serving. I have eaten half a box in just a few short days! So, the result is, no more cookies in teh house. It's a sad goodbye, but not really.

Also, thank goodness today is the last day for the chocolate bars in the house! Ugh. I don't even really like chocolate bars, but the thought of over 300 of them in my house just doesn't sit with me well.

My car is fixed, although it makes louder noises than it used to. Andrew and I are supposed to take another road trip this Wednesday back out to Ohio Northern University. I have been told it is safe to take on the road. The new noises it makes are putting me off a little, but I have been told by two different mechanics that it is safe. Wish us luck!

Lisa...Good for you throwing away the cookies. It would be a much bigger waste (waist) if you ate them instead.

I don't know how you survived the 300 candy bars. You are amazing.

Glad the car is fixed. Hopefully, the trip will be a good one. That's the same University that you guys went to when the car broke down, isn't it? I take it he is really interested. Hope so...sounds like the ideal situation for both of you. Far enough away that he will feel independent, but close enough that you guys can see each other often.

Yes, Judy, it is the same university. He applied, and has been accepted. They have already given him a $10,000 scholarship for having a high gpa all four years and being an athlete at the same time. That is not even including the financial aid package that they are putting together for him. This week, the coach wants him to spend the night with another football player. Go to classes, go to the workout, spend the night, get to know the team. So, we leave Wednesday morning and will return Thursday sometime during the day. He is excited. I am a little nervous making the same trip in the car lol. I think it might be time to just start saving up for a new car and lay this one to rest.
