Next time Laura And, Melissa, my mom's name is Lori! I get called it all the time lol.

Today...
B~sirloin steak w/ odds and ends veggies in the fridge and asian seasoning, all cooked in butter!
S~sf lime jello
L~3 cajun wings
S~atkins treat, 2 sf russell stovers candies
D~lemon chicken, cucumbers w/sour cream, salt and pepper
S~pork rinds drizzled w/ butter, splenda and cinnamon, 2 handfuls of Christian's popcorn (I didn't have much pork rinds left over to make this delicious treat with, so I took some of his popcorn too!)

I regret that I didn't get a picture of the chicken. It is one of my old recipes that I rewrote.

Pan-roasted rosemary lemon chicken

1 lb chicken breasts, pounded flat
2 tbsp butter
pepper
rosemary to taste
2 shallots, diced
fresh lemon slices
8 tbsp lemon juice
1/4 c white wine

Season the chicken w/ pepper and rosemary. Let that rest. Meanwhile, melt the butter in a large pan. Add shallots to skillet and saute until carmelized. Add the chicken and brown on both sides. Add slices of fresh lemon and cook until lemon browns. Add the lemon juice and wine. Cook until chicken is cooked through and sauce has reduced a little bit.

So good and so quick to make! My boys love this chicken

Now that I think about it, you could probably brighten the flavor up even more if you added chopped fresh chives or green onions on top of the chicken.

Your chicken does sound really good! We are getting a storm tonight into tomorrow. Could be around 8 inches. I got the ingredients to make the mini cheesecakes tomorrow while im home with the kids. My daughter love baking so she said she will help me:-)

So, this week I have been sampling yogurt. I found the low carb yogurt that everyone has been talking about. And, I got lucky and found a full fat plain greek yogurt by OIKOS. 9 carbs for 1 cup! And, since greek yogurt is greek, and the name OIKOS is greek, it inspired me to create tzatziki sauce. YUM! I picked up some lamb and plan on making kebabs as a snack later in the week. I can eat the tzatiki by itself it is so good. I am dipping pork rinds in it tonight as a snack!

Tzatziki
1/2 cucumber
1 minced garlic clove
1/2 tsp garlic powder
salt
black pepper
8 oz greek yogurt, plain
tbsp olive oil

Grate the cucumber into a dish towel. Squeeze the water out. Set aside.
In a small bowl, combine garlic, garlic powder, salt and pepper to create a sort of paste. Add the yogurt and stir until well combined. Stir in the cucumber "pulp". Drizzle one tablespoon of olive oil and mix well. Add more salt and pepper as needed.

This stuff will last me a week! And, its so good

Also, this week, I bought cheese curds for the first time. I don't see what all the hype is. They taste a little bitter to me. Not quite as creamy. I won't let the package go to waste, but I won't buy them again. It was 3.99 for a small bag, and I could 2 blocks of cheese for that same price!

I am stuffed!!! That was a really nice dinner. A recipe I made up on my own again. I will post it later.

Your meals always sound (and look) so delicious. I too love that Greek cuke and yogurt mixture,,,used to make it a lot and now you've inspired me to mix up a batch soon. In an ideal world you'd be able to open your restaurant featuring low carb meals and I'd be fortunate enough to live nearby so I could eat there frequently.

I'm snowed in right now and my husband is stranded(without food) in a hotel in a nearby town. He was unable to make it home from work because the snow storm closed down the roads. I am praying we don't lose power...they keep telling us that the ice storm to come is expected to cause widespread power outages. I've tried to prepare in case that comes to pass but there is only so much you can do. I've got my fingers crossed.

Good Morning Lisa,
I think all of your menu's look fabulous. I am, as I said before trying to get back on track. Do you find it easier just to stay within your 20 grams of carbs per day for weight loss? Have you incorporated any exercise with your diet or just normal activity. I am just in a hurry I guess to get the weight back off. Any help you can offer, would be greatly appreciated.

Geeny....your food always looks so scrumptious. I'd sure eat at your restaurant if you had one and I lived close. I saved the Tzatziki recipe. Gotta make that one. Have you ever tried fried cabbage? I love it but don't have it too often. It's kinda high calorie because of the bacon/grease, but it's low carb. Fry bacon until crispy....remove and chop. Cut cabbage in strips like you would for coleslaw. Add the cabbage and the crisp bacon to the skillet. Fry the cabbage in the bacon grease. YUMMO....sometimes I put in some onion too, but that does add to the carb count.

I absolutely make fried cabbage! Calories don't bother me...yet. lol. I put butter in it too.

Marsha, I do stay under 20 net carbs daily. Or as close as possible. I don't limit myself on calories what so ever. And, I eat a ton of fat. I do not exercise. And, I am still losing. I usually lose about 2 lbs a week. My secret is that I ALWAYS have something sweet, yet lc, in the house. I indulge on a daily basis. I have to. It hasn't worked against me yet

The car is not fixed. I got scammed out of $700 total. It is now in a regular shop, and will cost atleast $280 minimum to fix what this idiot did to my car.

Oh, and did I mention that Andrew is selling Malley's chocolate bars? Every box he sells, he gets $10 off his prom ticket. And, he brought 9 boxes home. Almost 300 chocolate bars. Have you ever been extremely stressed, pissed off, and surrounded by 300 chocolate bars???? Ugh.

The good thing is that I found a few sugar free russell stovers candies in the cupboard. I had a reese cup and an almonds and chocolate candy, and I was okay. Took a long shower, and having a cup of chocolate chai tea. Then taking a nap. If not, I may very well strangle someone. Probably not the person I really want to strangle either. At this point, I would like to say that I hate my car, but really that isn't the case. I despise men who take advantage of women that know nothing about cars. That is all.

Oh Greeny! That is shocking! Such a terrible thing to happen to you. Especially since that's how you ended up there, needed a better 'deal.'
Bummer about the chocolate being in the house. Hope it doesn't bother you too bad... just go try on clothes again! That is such an encouragement to stick to it...

Okay...I promised days ago I would post the herbed salmon and creamy leeks recipe. So, here goes!

3 tbsp olive oil
6 bacon slices
3 leeks
1/2 tsp thyme
pinch red pepper flakes
black pepper
2 garlic cloves
lemon zest
3/4 c white wine
1 1/2 c chicken broth
1/4 c hwc
Sprinkle of xantham gum
4 salmon fillets
1/2 c fresh parsley chopped
3 sprigs fresh dill, chopped

Preheat a skillet w/ 1 tbsp olive oil. Add bacon (cut up) and cook until crisp. Set aside. Clean your leeks and cut into half moons. To the hot pan, with bacon drippings, add the leeks, one garlic clove minced, thyme, red pepper and black pepper. Cook for 3 minutes. Add the wine and cook 1 minute longer. Add the broth and hwc. Boil, then turn down to simmer for about 10-12 minutes. Sprinkle xantham gum over the top. Put into a bowl and set aside.

Season the salmon w/ salt and pepper. On a side plate, combine the parsley, dill, 1 minced garlic clove and lemon zest. Press into the salmon. In the same pan, wiped out, heat 2 tbsp olive oil. When hot, cook the salmon 3 minutes, herb side down. Turn the heat up and flip, cooking 4-5 minutes longer. Remove salmon.

At this point, the skillet should be scalding hot. If you put the creamed leeks back into the pan, they will bubble up very quickly and thicken up nicely. Before serving, toss the bacon pieces into the creamed leeks.

The first time I made this dish, I salted the leeks as well. With the bacon, wine and broth added, it was just way too salty. So, now I don't salt it at all. Only a little on the salmon. This side dish is super easy to make and tastes amazing.

In true Valentine's Day tradition, I woke up early and made the boys their chocolate covered strawberries.



But...then I made myself a batch of lc strawberries. Mixed cream cheese w/ splenda and lemon extract. Piped it into hollowed out strawberries, and zested some lemon on top!

You are such a good Mom. "Your" LC strawberries look even better than the chocolate dipped ones.

That is terrible news about the car. Have you reported that "mechanic," and I use the term loosley, to the Better Business Bureau? If not, you should. I don't remember who you said recommended him to you, but I hope you tell them what you think of him and what he did to your car.....

Lisa, you are such an awesome mom and a talented chef! Wow, I love the salmon recipe and those strawberries are gorgeous. I agree with Judy's advice above. Also, just want to tell you again, Lisa, how beautiful you look and how much we all admire you!

Today is my Crispy Critter's birthday He is a big old 12 years old. 12 years ago, he came to me 2 months early in a petite little 3 lb 2 oz bundle. My body was sick, pre-eclampsia, and he had to be born to make me better. I remember thinking that day, please don't let us die. And, we didn't. He never went on a breathing machine. He was home in one month. He is still a small guy, but has the best heart ever. He impresses me almost on a daily basis. The sad part is that it is Valentine's weekend. Which means that it is mandatory to work today. BUT...I have tomorrow off, and we are having a little family dinner for him. He doesn't want cake, so I am making cherry pie and banana cream pie for him.

After 12 1/2 hours on my feet yesterday at work, and 9 hours of sleep overnight, my feet still ache! Crazy. Headed out to lunch with my boys, and then going into work for the evening. Have a great day everyone!!!
