We are not closed. I really need it to be open too. Although business has been super slow, I still have bills to pay, and now car repairs to take care of. Money is scarce. But, I have such a great support system. Friends, coworkers, everyone is stepping up to help out with rides and such. I have always done what I could for everyone around me, and finally it is me that needs something. It's just hard because I am so independent and it is hard to swallow my pride and ask for things. Oh well...it will be over soon. I hope

I just made keto jalapeno chicken for lunch. YUM YUM YUM I also made bacon and onion green beans, but skipped on the green beans and had a second piece of chicken. I just love that sauce!

It's nice to know that you have family and friends who are willing to help when you need it. That's because "you" help others when they need it. What goes around comes around. I hope DS does choose that college....especially after what you are going through because you went for the interview/tour. It's amazing how much it costs to fix cars these days. Before they all became computerized it didn't cost nearly as much and most guys could fix them without a mechanic unless it was something really bad.

Good luck and hang in there....this too shall pass.

mayo, mustard and splenda packet-1 carb

Linda Sue's Bulkogi


BULKOGI (Korean Barbecue)
2 pounds top sirloin steak
5 tablespoons soy sauce
1/4 cup granulated Splenda or equivalent liquid Splenda
1/4 teaspoon black pepper
1/4 cup green onion, chopped
1 tablespoon garlic, minced
1 tablespoon sesame oil
5 tablespoon water
Leaf lettuce, optional

Partially freeze the beef about an hour or so to make it easier to slice. Slice the beef as thinly as possible against the grain. It should be in very thin slices, but not falling apart. Mix all of the remaining ingredients except the lettuce. Pour over the meat and marinate at least 1 hour. I put the meat and marinade in a ziploc bag, set it in a baking pan and turned it occasionally.

Preheat a contact-type grill (Foreman, GE, etc.) and grill the meat in batches without closing the lid. Turn meat after a few seconds (it cooks very quickly) to brown the other side and remove to a serving plate; repeat with remaining meat. I have a GE contact grill which opens flat to provide 2 grilling surfaces which is very handy. You can sauté the meat in a nonstick skillet as well. Serve beef rolled up in lettuce leaves if desired.

Makes 6-8 servings
Can be frozen

With granular Splenda:
Per 1/6 Recipe: 223 Calories; 9g Fat; 31g Protein; 3g Carbohydrate; trace Dietary Fiber; 2.5g Net Carbs
Per 1/8 Recipe: 167 Calories; 6g Fat; 24g Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs

Well...my carbs were 15.5 for the day, but I was sort of wanting something sweet. So, I made a double batch of magic peanut butter pudding. 8 carbs lol. It's ok...I can afford them So, now my day ended at 23.5 carbs. BEST tasting dessert that is 2 mins to make and is just so indulgent. One of my faves.

Hi Greengeeny,
Where are you finding the lc tortilla's from. I did low carb last year with much success and then had some family problems and let me tell you how quick you can put back on the weight with stress. Now, trying to get back on track.

I bought mine from netrition.com. They are only 3 net carbs per tortilla. The brand is mama Lupe's.

Thank you Gail. It has been a roller coaster here...I thought this new year was going to be amazing! I guess all of the bad stuff is getting out so the rest of the year can make up for it

Today I am making bone broth for the first time ever. Just boiling what is left on that rotisserie chicken in a pot of water. I hope it turns out good!!!!

I never read a recipe or anything for the bone broth. Just threw the carcass in there, an onion, a few garlic cloves and a celery rib. I will cook it for about 2 hours and hope it tastes yummy!

One of my grandma's recipes!

Chicken Ball
8 oz cream cheese softened
2 cans chunky chicken
6 drops worcestershire
4 drops tobasco
1 tsp lemon juice
crushed nuts to coat with

Mix well. Try to form into a ball, it will be super soft. Pat crushed nuts onto outside of the ball. While patting the nuts on, it will be easier to mold into a ball. chill. Our family always served it with crackers. But, now that I am lc, I serve it with cucumbers, celery,pork rinds, pepper strips...this is so easy to make, so inexpensive to make, and tastes like a million bucks. I can not remember a holiday or get together where my grandma didn't make this!!

Okay...so after some calculating...it is 13 carbs for the entire chicken ball. There really is no way to tell how many portions, because its just a little bit of it on each crudite. I would guess less than a carb per portion. My boys won't eat this, so I will keep track of how many times I eat from it, and let you know what the average carbs are and exactly how many portions there are once it is all gone. I am going to try to keep it to 2 tbsp portions each time.

Getting ready for work today. This shirt is two sizes smaller than what I wore just 5 short months ago. If my breasts were just a little smaller, I would be in a medium!! This shirt is pretty much swimming on me now, all except the chest area.

So, after carefully keeping track of my carbs, I now know that I am right on target. Before I was just guessing. So, I am over the carb tracking. Going back to just listing my menu for the day

Lisa, Talk about a change!! Go back and look at pics of you when you started and now. OMG, you are thinner, but you can really tell in your face. It has slimmed down ALOT! Very Beautiful as always! Oh on the bone broth, if you can allow it to simmer in the oven on 200 overnight. The longer it cooks, the more vitamins and nutrients you get out of it. My gma always said the longer it cooks, the healthier it will make you.

Thanks for the tip on the broth Missy! It's a little late for this batch..I boiled it, then let it simmer for 2 hours. But, on 200 overnight sounds good.

This morning, I am making cream cheese cupcakes. I can not wait to try them! Everyone on here knows I have this insane sweet tooth. I am so excited to have a new breakfast/snack idea I will let you know how they turn out.

Original recipe

2 8oz. pks. philadelphia cream cheese
1/2 cup splenda
2 eggs
1/2 tsp. vanilla

Soften cream cheese in microwave. Blend in ingredients until very smooth. Pour into 12 lined cupcake pan. Sprinkle with cinnamon. Bake at 350 for 20 minutes.


I did almost the same exact recipe, except I used 1/4 c erythritol and 1/4 c davinci's french vanilla. Skipped adding the vanilla extract all together because of the davinci's. They are baking right now. I will probably have one warm because I won't be able to wait! Then, I will chill the others and have them like mini cheesecakes.
