Wonderful news, Geeny. Such an exciting time of his life. It sounds as though the University is close enough to home that, should he end up deciding to go there, you'd be able to see him with reasonable frequency which sure would be nice.

Yes, about 3 hours away. Not too bad. Far enough that he feels he has freedom, and close enough that I can see him

Just revamped my chicken paprikash recipe. I am serving it tonight over dreamfields elbow macaroni.

NEW Chicken Paprikash recipe

2 1/2 lbs chicken breast cut up (that's how big my package is, but you could always do less chicken)
2 1/2 tsp paprika
1/2 tsp salt
1/8 tsp pepper
1 tbsp olive oil
1/2 c chopped onions
1 can petite diced tomatoes, undrained (I found delmonte tomatoes and they are only 7.5 net carbs for the can!)
1/2 c sour cream
parsley

Heat pan with oil. When hot, add chicken. Season with 1/2 tsp paprika, salt and pepper. Brown chicken, add onions, stir and cook about 3 minutes until softened. Add tomatoes and remaining 2 tsp paprika. Boil, reduce heat and cover, simmer for about 10 minutes, until chicken is tender. Add sour cream and stir well. Top w/ parsley.

I am guessing this will make 6 servings. At 6 servings, it is 4.3 net carbs each. Might be more servings than that though with that much chicken in it

I will be starting this dish in about half and hour and can't wait for my house to smell like paprikash

Okay...so a little bit of tweaking, but it doesn't change the carbs at all. I did add a little bit of ground red chili pepper, because my paprika was a sweet paprika. I added a little garlic salt too. Then, I did thicken up the sauce with a little bit of xanthan gum. The verdict...tastes amazing!!!!

Also, tonight I made clouds again. They are so yummy! I did lemony hazelnut this time. I am patiently waiting for them to freeze up so I can eat one of those little lemony cheesecake type bites!!!

If there is one thing that frustrates me...it is definitely having a hypothyroid and menstruation Sometimes I get TWO cycles in one month...sometimes nothing for a month and a half. I had TOM start on the first, and guess what is starting again right now?? Ugh...I have a road trip tomorrow...and this is going to be a pain. I just hope the more weight I lose, and the less synthroid I am on, that it helps regulate my cycles.

Geeny...Your irregular menstration could be peri-menopause or even menopause. How old are you...if you don't mind me asking. My Mom went through menopause at age 42 and I've heard it is getting even younger than that now. Even in the 30s it's happening.

I'm hypothyroid too....It REALLY adds to the problem of losing. But, it's just something we have to live with. Taking a thyroid supplement does help, but nothing is as good as Mother Nature.

Good luck on the College trip.

I am 38 years old. Could be symptoms of menopause...wouldn't that be nice. Be rid of this stupid thing once and for all

The college trip was great. I believe Andrew is going to commit to this school. I was impressed, he was impressed, and they really did their homework on Andrew. They knew everything about him! It really made us feel like it wasn't just a generic walk through. That they were genuinely interested in him. And then....

we headed home. And, the head gasket blew on my car. And we waited in -2 degree weather (in the car, huddled under a blanket, on the highway) for almost a half hour for the State trooper to show up and take us to safety and warmth. And then...we waited 4 hours for a tow. And, then 2 more hours for my parents to show up and drive us back (another hour and half). We left at 6:30 this morning, and just got home at 1:15 a.m. If the trip weren't such a success with the college, I would cry right now. But, I know Andrew is happy with the decision to go there today.

On an even worse note, we sat in a Bob Evans restaurant for 3 1/2 hours, and I did NOT eat lc. I didn't even care. I was so pissed at the situation that I just ate. Not a ton, mind you, but definitely not lc. Im not even going to post what I ate today. It wasn't horrendous, probably under 50 carbs, but I am embarrassed to say that I really didn't care at that moment. I was starving and cold and it looked delicious. I am still frozen right now, and I am home.

Congrats on your son's opportunity. That's great.
Bummer about the car. Hope its not too costly to fix. Very annoying, that's for sure. But so many things to be thankful for. Best to dwell on the good. The tough times do make us stronger.
I agree, the one meal won't cause you to spiral out of control, if you don't let it. But it is a learning situation: that you didn't care what you ate because of your emotion. To be angry & eat foods that will add to your misery... (I know, I've been there, done that a lot in my life). When you can have power over that kind of situation, you will know that you are free of the old way of life. Being cold also gives appetite have more power.
Hope your day today makes up for it all!

Wow, Danielle....what a day. Don't worry about the carbage. Sometimes life interferes and it sounds like it did so with a bang. Something REALLY good came out of all that since you and your son liked the college and it looks like he will want to go there. That alone is worth what you went through...although, it would be nice if that hadn't happened. I'm glad you made it home safe.

Smart girl having a blanket in the car. So many people who live in cold climates don't take that precaution. I always have a blanket and a jacket in my car...just in case. The jacket is for warm weather that unexpectedly turns chilly and the blanket is for situations like you described. An ounce of prevention.

So...now we are in the middle of a blizzard. I have no car. I need to go get some food for the house. The grocery store isn't far, but while it is 22 degrees outside, the wind is whipping like crazy and with the windchill it feels more like -2. Plus the blizzard. I don't think I will be walking to the store today. Right now, life pretty much sucks. It is going to cost me close to a grand to get that stupid car fixed!!! And, as of right now, it is still 100 miles away in a parking lot of a hotel. (They gave us permission)

Thank you Laura. Funny you mention big pot of soup It's not lc, and I won't be eating it, but I just threw some leftovers together with chopped up bacon, celery, onion and garlic. Made some home made dumplings. And, voila, soup! The kids will love it and the house smells good. I have some frozen burgers and some steakums still in there. So, I will have something to eat. It's getting scarce, but if need be, that big pot of soup will last today and tomorrow.

On September 13, 2013, I weighed 216 lbs.
My neck was 14".
My upper arm 14 1/2".
My wrist 6".
My bust 43 1/2".
My rib cage underneath my bust 38".
My waist 39".
My stomach 43".
My hips 47 1/2".
My upper thigh 25".
My knees were 14 1/2".
My ankle 9".

Today, on January 26, 2014...I weigh 172.6 lbs. (.6 lbs up from last week, but not too bad considering the carbfest I had when we were broken down)
My neck is 12 1/2".
My upper arm is 11 1/2".
My wrist is 6".
My bust is 38".
My rib cage is 33".
My waist is 33.5".
My stomach is 36".
my hips are 42".
My thigh is 21".
My knee is 14".
My ankle is 8.5".

My inches are fluxuating, but maybe from the extra carbs this week. My weight only went up .6 lbs. Probably because I went right back to eating properly. I had a bad day when I was trapped in the boonies in the cold, and had a small carbfest at Bob Evans. But, I am okay now. It didn't put into motion a carb week, or even a second carby meal.

I'm still trying to get my car home from over 100 miles away. My sister is working on it. She has some money to help me, and will let me pay her back. Getting to work has been a struggle, but I have amazing coworkers and friends that are helping.

Right now, I have Linda Sue's Asian pork in the crock pot working. My sister took me to the grocery store last night, and I stocked up...just in case I can't get back there for a while.

I ended up having half portion of the dreamfields, so only 2.5 carbs. Then I had 2 clouds-2 carbs, and a jello w/redi whip-1 carb, and an atkins treat-3 carbs. Makes my total exactly 20 for the day.

This is the worst winter that I have seen since I was a kid. The boys are off school again today due to plummeting temperatures and blizzard type snow outside. My house is howling with the wind. It is cold, and a little scary at how loud the wind is. I don't remember the temps ever hitting this low for this long before.

Lisa, so sorry to hear about your car but grateful to know that the trip was successful and that you made it home safe and sound. This winter is just brutal -- I know what you mean as we are freezing up here in Boston. You are doing a great job staying on plan!

Oh, Lisa, my heart goes out to you during your current travails. I know the enormous amount of distress you must be feeling having your car out of commission and stuck so far away. Thank goodness your sister has been able to help you. I hope it will get straightened out very soon. Hang in there sweetheart.

My understanding is that, sadly, we will continue to experience these sorts of extreme weather conditions due to climate change. It is scary. We're expecting extreme cold and a snowstorm tomorrow and I plan to hole up indoors for the next two days, trying to stay warm and praying we don't lose power.

Stay safe, sweet lady.

Thank you girls. I hope you are staying warm and safe as well. My car is finally home. Just spent the last half hour trying to push it up into my driveway. It is not running, and probably won't be for a while yet, but atleast it is home. No tickets. Thank goodness.

School has just been canceled again for tomorrow. My children are starting to go stir crazy lol. Without a car to go out and do something, they are stuck at home. It's too cold to go outside and play in the snow. Tv has become the new pastime. We have been playing boardgames, but that only goes so far.

Today...
ham slice w/ 1 tsp sugarfree strawberry preserves and 1 slice american deluxe cheese-5 carbs
atkins treat-3 carbs
leftover asian pork, topped w/ 2 tsp lc bbq sauce, 1/3 portion of dreamfields w butter-5 carbs
sauteed spinach w/salt and pepper, olive oil topped w/ grilled salmon-1 carb
cookie-2 carbs

Total-16 carbs
