For lunch today, I cooked up 2 slices of bacon. Then, I seasoned half a chicken breast (pounded thin) w/ chili powder, salt and pepper. Fried it up in butter. Mashed half an avocado w/ lime juice, salt and pepper. Then layered! Chicken, topped w/ avocado and bacon slices, one slice of tomato. YUM>

So far today...
chicken salad-2.5 carbs
2 cookies-4 carbs
chicken, bacon, avocado duplex-2.7 carbs
atkins chocolate caramel mousse bar-2 carbs

Starting work early today. I am not hungry at all right now. I probably won't eat again until I get out of work. Might pick up a juicy steak to make after work Also, some more rewrites of recipes coming. I have really been buckling down, and trying to rewrite atleast one a day. I will be going through my fave cookbooks, and rewriting the recipes I love to make. I won't know if they are keepers until after I make them. I ended up throwing out the reese cups. They were just WAY TOO RICH. Next time maybe 1/3 of the cocoa powder. Eating them made my mouth feel funny...but I still was eating them because they were here lol. So, in a week or so, I will try another batch with an updated recipe.

Ended up buying some sirloin,slicing it up, mixing it up with chopped up zucchini, tomato and onion. A little bit of shrimp. Chicken broth, hwc and cheese. This is the result...absolute heaven!!

Total for the day...17.2. I am worn out. Work was long and exhausting, yet very profitable Can't complain when the bills are getting paid!

Your sirloin/shrimp dish looks and sounds delish!! You are very imaginative when it comes to food. Mine is usually pretty boring. I used to love to cook when I had others to cook for, but cooking just for myself just doesn't do it for the creative side of me....which seems to have shrunk over the years.

Keep posting your recipes w/photos and maybe you will inspire me too.

On September 13, 2013, I weighed 216 lbs.
My neck was 14".
My upper arm 14 1/2".
My wrist 6".
My bust 43 1/2".
My rib cage underneath my bust 38".
My waist 39".
My stomach 43".
My hips 47 1/2".
My upper thigh 25".
My knees were 14 1/2".
My ankle 9

Today, On January 19, 2014, I weigh 172 lbs
My neck is 12 1/2".
My upper arm is 12".
My wrist is 6".
My bust is 38".
My rib cage is 33".
My waist is 33.5".
My stomach is 35".
My hips are 41".
My upper thigh is 21.5".
My knees are 14".
My ankle is 8.5".

That's 39.5"!!!! Holy cow. And...44 lbs gone

I saw on Linda Sue's site that she had melted a cheese stick in a frying pan. I tried it. I failed. It tastes burnt and not so good. A wasted carb

How do you celebrate and watch the Broncos play? According to my son and his friends, it is nachos!! They have requested nachos two weeks in a row. I made myself some lc nachos. Total=8 carbs!!! Worth every single bite

Have you tried nachos using bacon chips as the base? They are amazing. Both the little ones, on small squares of bacon sices, and the larger ones, on bacon weaves. Well worth the time!

I have not even heard of these bacon chip nachos you speak of!!!

Today's food...lots of lounging and lots of football.

Spinach lasagne-2.5 carbs
Fried cheesestick w/tbsp marinara-1 carb
Loaded nachos-8 carbs
"2" atkins treats-6 carbs
cookie-2 carbs
pork rinds dipped in sour cream (w/ seasoning)-1 carb
crystal light-0 carbs

That puts me at 20.5 carbs for the day.

Today is the last warm day for the week. Hitting into the 30's. The rest of the week is supposed to be in the single digits, and where I live, that plus the wind chill means that it will feel like negative degrees. Probably have the kids home for the week. School automatically cancels if the temps are in the single digits.

I am on my way into work. I am working a double today. With it being MLK day, a lot of people are out of work and school. Which means we will probably be very busy. I close the restaurant today, so probably won't be home until around 11 or 11:30.

Last night, I did end up having a half portion of the steak and shrimp leftovers. Probably about 2 carbs worth. So, my total ended at 22.5 for the day. Today will definitely be less. I won't have much time to eat lol.

Adding to the list from earlier...
cookie-2 carbs
Baked chicken dipped in ranch w/tobasco sauce;small arugula salad and about 1 tbsp chopped tomato, 2 asparagus spears-(guessing) around 4 carbs
burger w/ cheese, bacon, thin slice tomato, iceberg lettuce leaf and thin red onion ring-(guessing) around 3 carbs
atkins treat-3 carbs

That will put me at right around 20.7 carbs, give or take. I worked my booty off today. From noon until 11:30 tonight!! But, my pockets are bulging, and I met some pretty cool new guests tonight. I love meeting new people Especially nice ones.

WOW....sounds like you were busy. But...if you aren't you don't make any money.

....You are doing such a good job with your food and weight loss. You are an inspiration. If I moved as much as you do during the day, I'd be doing better with weight loss. KUTGW.....

Stay warm, Geeny. Those single digit temps sound pretty extreme to me. Bundle up when you go off to work. I find I am often chilled these days and I do think that is related to the VLC approach. I have to bundle up while inside! Take care and don't let the cold get you.

Thank you everyone for your support and encouragement. This Thursday, Andrew and I are going to visit one of the smaller schools in Ohio that is offering him a huge scholarship to play football for them. The best part is that this school has the Civil Engineering program that he is interested in. Small classes. Ratio of students to teacher is 12:1. It's a little college outside of Toledo, OH named Ohio Northern University. About a 3 hour drive away. They have invited Andrew and me to come tour the campus, meet the civil engineering professors, and have a sitdown with the coach. Hoping Andrew makes his mind up!!!

What great news for your son. I hope he takes advantage of that. Getting out of college owing hugh student loans is NOT the way to go if there is an alternative. Sounds like a great college too. That student/teacher ratio is amazing. He'll get a MUCH better education than he would sitting in a lecture auditorium with 200 students at a larger college.
