It has not stopped snowing since yesterday morning! Supposed to have a high of -4 for the weekend...wish I could just bundle in the house for the entire weekend, but that isn't an option lol.

Lisa, depending on which version of Atkins you use - New version there is a set list of food you can try to add back in at each stage. I use the original 72' version. With it you add back in 5-8 carbs per day of anything you want. Try it for a week and if still a loss weight-wise keep it and try something else. Once you a get a few more options, you up again for a week between 5-8 carbs, repeat process. If trying to determine maintenance level, you keep doing this until you gain for the week and then go back down to the carb amount you were on the week before and that would be your maintenance level.

Sorry, I know you don't follow atkins. I was writing without thinking...just figured under 20 carbs a day...that is what atkins induction is. You are doing so well low carb, I wouldn't add back in more than 10g a day to see how you do on the new food item. If it doesn't cause you to gain, you know whatever the new food is it works for you. Then try another food.

Is their an order to start adding foods back? Like, do you start adding veggies back first? Then grains? Or you just add carbs?

So...last night I created this new soup. The weather was frightful So, a big pot of soup was in order. Here is the recipe.

Pizza Soup

2 tbsp peanut oil
1 lb spicy Italian sausage links
4 garlic cloves, 2 crushed, 2 minced
1 small onion, chopped
2 celery ribs, chopped
1 box of chicken stock (32 oz)
1 15-oz pizza sauce (I found one that was 2 carbs per 1/4 c)
1/4 c mini pepperoni slices
1 package of meatloaf mix (beef, pork, and veal...you could use just ground meat)
1/2 c parmesan cheese
2 tbsp almond flour
1 egg
salt and pepper
handful of chopped parsley

Heat a soup pot over medium high heat, heating the oil as well. Cut the sausage links into slices. Add to the hot oil. Stir and cook about 3 minutes. Add the 2 crushed garlic, onion and celery. Stir and cook for about 5 minutes. Add the chicken stock and pizza sauce and bring to a boil. Toss in the pepperoni.

In another bowl, mix the meatloaf mix, cheese, almond flour, egg, salt and pepper. Form very small meatballs and drop them into the boiling soup. When all of the meatballs have been added, return the heat to simmer and let them cook for about 8-10 minutes. Add the fresh parsley. VERY GOOD!!!!!

Not sure on the carbs...but very low. This pot made about 8 servings for us.

I wish I could say I lost more weight, but I didn't. The good thing is that I didn't gain either. My weight stayed exactly the same. Being snowed in and lazing around the house all day long...I guess.

Wow that soup sounds amazing and I think I have just about everything to make it with minus the meat but including the pizza sauce that is low in sugar :-) Thanks for sharing!!!

-7 here this morning, +7 more inches of snow. Tonight they are calling for -27 with the wind chill, Brrrrrrrrr. I could use some of that soup!! LOL.

As far as adding stuff back in, I would avoid grains and pure carbs for now if you want to continue to lose. But definitely experiment with "higher" low carb items (does that make sense?) for example try some sweet potato, carrots, tomatoes, a couple nights a week, measure your serving so you know about how many extra carbs you added. Just see what happens, you could also try some higher carby fruit -- like bananas or apples, again know how many carbs you are testing so you have an idea what you can take in while still losing. But most importantly just try one thing at a time.....so you KNOW what works and what causes a stall or gain.

Sounds like your plan is working for you, but you are right, it's good to be adding more carbs at some point. If you stay too low for too long your body may eventually stop losing and get used to eating so little that if you try to add more after being so low for so long you might gain. This isn't the case for everyone but I've seen it happen before which is why Atkins developed the "rungs" so you could get your body to take in more while still maintaining or even losing and then you're not stuck at 20g a day for the rest of your life.

Since you're not doing Atkins you'll have to figure out your own "rungs" and items to add back in, you've done great this far so no doubt you'll get it figured out!!

Breakfast today...pulled pork nachos!!! Took a little bit of leftover pork, mixed it with some bbq sauce and topped it onto my "nachos". Topped that with one pickle spear chopped up and a tiny bit of shredded cheddar.

I forgot to put yesterday's food...
B~steakums w/ mushrooms, bbq sauce and mozzarella
S~jello, 2 pieces of chocolate pizza
L~bowl of pizza soup
S~jello, 1 c popcorn
D~bowl of pizza soup
S~russell stover candy (2 pieces), hot tea w/2 splenda

Yesterday was my first day having popcorn. I felt like I was eating nonstop. I know I sat on my rump pretty much all day long The rest of the seasons of Dexter is finally on netflix and we had a homebound snowday...so you can just imagine how my day was spent!! I am guessing my carbs were around 35 or so...definitely less than 40. For the weekend, I am going to reign it back down to under 20. The good news is that this morning I ate the last slice of chocolate pizza Being home all day for the last 2 1/2 days, I found myself looking for something to snack on. Usually I am not like that. If I am home, I am out running errands or doing something, but with the insane snowfall, have been going stir crazy. I thought today would be a breakthrough day and the snow would stop, it looked like it was slowing down, but right now it is coming down hard again. Oy vey.

Gail, I would like to let you know that my knees no longer are bothering me. I did about 20 squats yesterday, and there was no crackling knees, no pain, nothing. My booty feels great today

Yay! So glad that your knees are fine and that you do so many squats effortlessly. Squats are the best and they really tone/tighten the backside and legs. Your pizza soup sounds great -- I am going to have to make that!

Combined 1/4 c melted butter w/ 1/4 c chicken broth, parsley, lemon zest and slices and a little bit of capers. Put thin cutlets of chicken in it and a lid on top. My own version of chicken piccata. I did add a little xantham gum to thicken the lemon butter up. Served it with broccoli and cheese.

It was a great night at work. Smooth. Tips were plenty It was a pretty good day all together. TONIGHT...another blizzard is supposed to hit us. We are going to get the coldest weather that we have seen in 5 years this week. Today was the heat wave, it got up to 30 degrees. Tuesday we are looking at -15...with the wind temperature it will feel like -37. BRRRRRR....

B~Pizza soup, orange jello
L~Baked chicken w/skin, arugula and tomato side salad, broccolini
D~"nachos" w/ leftover chicken, cheese, salsa, sour cream and jalapenos, 1 cloud

I am so sleepy. Very happy that I have work off tomorrow. I want to hibernate during the storm!!

The start of our lazy wintery day Christian and his best friend, our kitty, Misty Grey Elliott. I have already cleaned up the house, gone grocery shopping and salted the drive/walkway. We are in a heatwave right now, right at 32, but the icy snow mixture has already begun and soon we will be in severe cold weather. I have enough food for us just in case we don't leave the house!

So tonight, I tried my hand at Chinese fried "rice". I don't have a box grater with large holes, so I just hand chopped cauliflower into really fine pieces. I chopped up some of the left over pork into mini pieces. In a pan, over hot heat, I heated up 2 tbsp peanut oil and 1 tbsp sesame oil. I added the pork first and sauteed it for a few minutes. Then I added all of the cauliflower on top. I added half a can of bean sprouts. Added salt and pepper, and about 3 tbsp of wheat free tamari sauce. I stir fried it for about 5 minutes until I thought the cauliflower was tender enough. Then I minced up about 2 green onions and stirred that in. Then I beat 2 eggs and added that. Stirred until the eggs were cooked through. My little Christian said it was the best Chinese rice he ever ate

Chinese Rice
2 tbsp peanut oil
1 tbsp sesame oil
1 head cauliflower, cut into very small pieces
4 oz. of cooked pork, cut into very small pieces
8 oz. bean sprouts
3 tbsp tamari
salt and pepper
2 green onions, minced
2 eggs, lightly beaten


I had a late breakfast/early lunch (BRUNCH)...one ginormous T-bone steak topped w/ 1 tbsp of brie
S~orange jello w/redi whip, 1 cloud
D~chinese rice

Tonight I am making one of my faves...cheesecake!!!

So the cheesecake is in the oven, and it smells amazing. But, I know I can't have any until tomorrow morning because it has to chill overnight. So...I made some magic peanut butter pudding from Linda Sue's website!! I made a double batch. I can afford the carbs today

1 serving is...
2 tbsp hwc
1 tbsp peanut butter
2 tsp sweetener

Stir, stir, stir and it eventually turns into a pudding consistency!!!! 4 carbs per serving. This has been a quick lifesaver for me tonight...it tastes so yummy!

It is so cold here it is ridiculous. Right now, it is -9 outside, and with the wind chill, feels like -37. I just got home from work. I was the only server/host/bartender there from 5:30 on. We had no guests really. Sent everyone home. But, what guests we did get, they were all mine It ended up being a productive night, but only because I sent everyone home.

Wow ! That's really cold ! Glad you had a good shift... your chinese fried rice sounds really good. I tried to make it with cauliflower a year or so ago and it wasn't very good. Not sure if I didn't let it get "dry" enough or what. I may need to try it again !

I would think you could even freeze it Jessica and turn it into a type of ice cream. I have done it with almond butter before and it is just as yummy.

I am grateful that nothing has gone wrong with my house, but a huge gas disconnection took place last night, and a lot of my friends now have no heat The gas company is working triple time to fix it, but in the mean time, they are freezing in their homes to a cool 40 degrees. It is a terrible time for this to happen. Today is even colder than yesterday.

I am so hungry this morning that I doubled the mock danish recipe and am scarfing it down right now. My belly is speaking to me, and it sounds like a cat fighting in there! It tastes better as a single version...more like scrambled eggs in the doubled recipe.
