Thank you everyone! Christmas was great. Andrew made me a scrapbook of his senior year. I cried. It is incomplete, because the year is still going on, and he plans on working on it throughout until it is finished. His girlfriend wrote me a poem. I cried again. Christian gave me a Matrix hair conditioner. He is so sweet. And, a dear friend of mine gave me a Pearl Necklace. I didn't count carbs yesterday. But, I didn't eat bad things either I only stuck to my shortbread, stuffed strawberries and cupcakes as sweets. I never really had a breakfast, lunch or dinner...just sort of ate when I wanted and didn't when I wasn't hungry. I had no wine or alcohol. I did have fruit for the first time yesterday. Had a few of the stuffed strawberries, and then at my aunt's house, popped a few fresh blueberries. I was very proud of myself. I am pretty sure that when I weigh tomorrow, I will finally be overweight and no longer obese. I am excited in anticipation. My parents came over yesterday, and then late in the evening we all went out to my aunts house. Lots of goodies, but I was having such a good time socializing that I didn't care.

ha ha, another Christmas present!!! Andrew has been admitted into Ohio University. THe only college he has applied to as of yet!!! BUT, all of these other schools are offering him money and scholarships. Now the ball is in his court. So exciting

B~leftover brisket and 1 piece of kielbasa
S~2 pieces of shortbread, 2 stuffed strawberries
L~small iced coffee w/sugarfree vanilla, habanero burger bunless (all compliments of McD's)
S~1 lc tortilla cut into wedges and fried into chips, topped w/ cheese, bacon bits and salsa
D~not sure yet...working tonight~probably something VLC...no veggies or cheese...just meat I think...

Two of my "nachos" burned, so only got to have 6/8 of the tortilla fried...but OMG> I bought Mama Lupe's tortilla's...only 3 net carbs per tortilla. I have to say this is an amazing snack!!!!

Laura! Your new avatar looks stunning

I would just like to share that about 7 years ago, a gorgeous winter coat from New York & company was bought for me. I haven't worn it in about 6 years because I couldn't button it up. Today, I tried it on, and it fit!!! Size 10 baby The only place it is just a little tight is across my chest. But, that will shrink soon!!! I am so happy.

Ingredients:
Cookie Crust:
1 3/4 cups almond flour
1/3 cup cocoa powder
1/3 cup Swerve Sweetener or other granulated erythritol
1 tsp baking powder
1/4 tsp salt
1 egg
2 tbsp butter, melted
1/2 tsp vanilla extract

Cream Cheese Frosting:
4 oz cream cheese, softened
3 tbsp powdered Swerve Sweetener or other powdered erythritol
2 tbsp heavy cream
1/2 tsp vanilla extract

Toppings:
5 large strawberries, sliced
1/4 cup blueberries
2 tbsp pomegranate seeds

Chocolate Drizzle:
1 oz high % cacao chocolate, chopped
1/2 tbsp butter
Preparation:
For the crust, preheat oven to 300F and line a large baking sheet with parchment paper.
In a large bowl, whisk together almond flour, cocoa powder, sweetener, baking powder and salt. Stir in egg, melted butter and vanilla extract until dough comes together.
Turn dough out onto prepared baking sheet and pat into a circle. Top with another piece of parchment and roll out into a circle about 11 inches in diameter. Press and crimp edges to form a nice even circle.
Bake 30 minutes. Remove from oven and let cool.
For the frosting, beat cream cheese in a medium bowl until smooth. Beat in powdered sweetener, cream and vanilla extract until well combined.
Spread frosting over cooled crust. Arrange berries and pomegranate seeds over top.
For the chocolate drizzle, combine chopped chocolate and butter in a microwave-safe bowl and heat on high for 30 second increments, stirring in between, until fully melted and smooth. Alternatively, you can combine butter and chocolate in a small saucepan over low heat, stirring until smooth.
Drizzle over cookie pizza. Chill until set, about 20 minutes.
Serves:
12
Nutrition Info: 186 Calories; 17g Fat (74.9% calories from fat); 5g Protein; 7g Carbohydrate; 3g Dietary Fiber; 38mg Cholesterol; 145mg Sodium.

My mom always hosts a nice big dinner on New Years Day, and she has asked me to bring a dessert. So, I am thinking of making this chocolate pizza. OMG. It looks so good. Even my 11 year old says it looks delicious

On September 13, 2013, I weighed 216 lbs.
My neck was 14".
My upper arm 14 1/2".
My wrist 6".
My bust 43 1/2".
My rib cage underneath my bust 38".
My waist 39".
My stomach 43".
My hips 47 1/2".
My upper thigh 25".
My knees were 14 1/2".
My ankle 9 1/2".

Today, on December 27, 2013 I weigh 176 lbs even.
My neck is 13".
My upper arm is 12".
My wrist is 6".
My bust is 39".
My rib cage is 34".
My waist is 34".
My stomach is 35 1/2".
My hips are 41".
My upper thigh is 23".
My knees 15".
My ankle 8".

As of this morning I am exactly at 40 lbs gone! My inches are 34 total I was really hoping to hit 174 and be overweight finally...but I am pretty sure by next week I will be. I weighed yesterday morning, but not officially, and I was there. I think my TOM is getting ready to start, so that could be the fluctuation. I know I am there though!!!!

Ingredients

For the meatballs

1.5lbs ground beef (80/20)
2 Tbl fresh parsley, chopped
3/4 cup grated parmesan cheese
1/2 cup almond flour
2 eggs
1 tsp kosher salt
1/4 tsp ground black pepper
1/4 tsp garlic powder
1 tsp dried onion flakes
1/4 tsp dried oregano
1/2 cup warm water

For the Parmigiana

1 cup marinara sauce
4 oz mozzarella cheese

Instructions

Combine all of the meatball ingredients in a large bowl and mix well. Form into 2″ meatballs. Bake at 350 degrees (F) for 20 minutes OR fry in a large skillet over medium heat until cooked through. Pro-tip – try frying in bacon grease if you have any – it adds another level of flavor. Frying produces the golden brown color shown in the photos above.
For the Parmigiana
Place the cooked meatballs in an oven safe dish. Spoon approximately 1 Tbl sauce over each meatball. Cover with approximately 1/4 oz of mozzarella cheese each. Bake at 350 degrees (F) for 20 minutes (40 minutes if meatballs are frozen) or until heated through and the cheese is golden. Garnish with fresh parsley if desired.
Notes

Approx nutrition info per “naked” meatball: 121 cals, 8g fat, 1.5g net carbs, 11g protein

Approx nutrition info per meatball parmigiana: 151 cals, 9g fat, 2.5g net carbs, 12g protein

So, my friend, Bren, on these boards made these bad boys not too long ago. I am making them today! She added a little piece of mozzarella in the middle, and got 9 big meatballs instead. I think I am going with the stuffed meatball version of hers. Can NOT wait to taste these guys!!!

My fave way to make shrimp. Melt a stick of butter in a jellyroll pan. Lay raw shrimp on top. Add sliced lemon and sprinkle w/ packet of dry italian dressing. Bake at 350 for 15 minutes...perfect everytime. Sometimes I add pressed garlic to the butter. Sometimes I sprinkle it with a fresh herb afterwards. You can mix and match it as you please.

yay!! It's a great day. I finally figured out how to get pics from my phone onto the computer

This was breakfast this morning. Turned a lc tortilla into chips again, but this time topped it w/ rotisserie chicken mixed with srirachi sauce. topped it w/ green onion. It is on a paper plate, but the small ones. You can imagine how big an lc tortilla is, and it fits pretty snug onto this plate.

Wow! What a difference, you look amazing!!

I'm glad you enjoyed the meatballs! We've been making them 2 times a week lately, definitely one of our low carb favs! I'm still baffled that we can eat such tasty things and lose weight , but who am I to question it?
