My gingerbread house made of meat does not look as good as the original one. This is the one I took the idea from~



The roof walls were ridiculous. That was not happening. I don't know how he got them to stay at a slant like that. I decided to go with the rustic log cabin look







Also, he made his "mortar" w/ 2 cream cheese blocks, palm oil and onion soup mix. I made mine w/ 2 cream cheese blocks, a healthy scoop of mayo and ranch mix. Tastes amazing. I sprinkled parmesan and garlic popcorn topper over the whole thing to give the "snowy" look.

I made leeky chicken tonight for dinner. I used to make it high carb over sundried tomato orzo. Tonight I made it accompanied with green beans sauteed in bacon. Here is the rewrite of my recipe.

Leeky Chicken

2 tbsp olive oil
1 1/2 lbs chicken tenders
salt and pepper
1 large leek
1 c chicken broth
parsley
1 tbsp butter

Heat a pan over high heat, add the oil. Add chicken in a single layer, seasoning with salt and pepper. Brown. Prepare the leek. Cut into half moons. Once chicken is brown, add broth, scraping bottom of pan. Add the leeks and simmer for about 10 minutes or until chicken is cooked through. Add butter and chopped parsley, stirring into the sauce. YUM YUM YUM

Lets not forget licking my fingers with my cream cheese concoction, and a few pieces of jerkey lol.

LOL. Your meat log cabin made me giggle and I'm still sitting here chuckling, with a big grin on my face. You are beyond wonderful, greengeeny. The amount of imagination, creativity, planning and hard work you put into your cooking is so admirable. I know that your diligence surely must be one of the reasons you've been so successful at losing weight. Anyway, thanks for posting the photo of your darling log cabin. It is delightful. Thanks for bringing a smile to my face this morning; I can't tell you how much I needed one today.

B~two peanut butter cookies
L~iceberg salad w/ cajun chicken, olives, cheese, avocado, tomato and a "hot ranch" dressing
S~3 pieces of jerkey dipped in cream cheese mortar topped with one almond each
D~chicken breast sauteed in butter, topped w/pesto and mozzarella...4 scallops sauteed in butter.

Cooking dinner right now and can't wait to dig in!~!!!

OKAY>...so SUPER delicious BUT...a little rich, so I cut them into 32 even smaller pieces. LEss carbs I am going to love these little tasty bites.

I am making one of my favorite recipes (redone) for Christmas dinner. Apple Glazed Beef Brisket. Here is the rewrite of it.

Apple Glazed Beef Brisket
5 lb beef brisket
1 onion, quartered
2 garlic cloves, halved
10 whole cloves
1 1/4 c sugar free apple jelly
1/3 c white wine vinegar
3 tbsp minced green onion
3 tbsp brown mustard
3/4 tsp pepper
3/4 tsp curry powder
1/2 tsp salt

Place beef, onion, garlic and cloves in oven proof Dutch oven. Add just enough water to cover beef. Boil. Reduce heat to low and simmer until tender, 2 1/2-3 hours. Drain, discarding all except the meat. Return to the Dutch oven. Preheat oven to 325F.

In a small saucepan, combine jelly, white wine vinegar, green onion, brown mustard, pepper, curry and salt. Boil over high heat, stirring constantly. Brush beef with the glaze. Bake the beef, basting every 15 minutes, for 45 minutes. Cool. Slice and Serve.




So, this recipe is a lot of work, but definitely worth it. The taste is amazing.
