Just found a recipe for Asian Pork Patties, posted by Buttoni.



INGREDIENTS:

1 lb. lean ground pork
1 beaten egg
2 jalapenos, seeded, ribs removed and minced fine
2 tsp. low sodium soy sauce or coconut aminos
2 cloves, garlic, minced
2 T. olive oil (for frying)
1 optional recipe of my dumplings: Dumplings

DIPPING SAUCE:

2 tsp. sesame oil
1 tsp. creamy natural peanut butter (omit if on Induction)
2 T. rice vinegar
1 tsp. ginger root, minced
2 cloves garlic, minced
1 tsp. Sambal Oelek chili sauce (or Sriracha sauce)
2-3 drops liquid stevia or sucralose
1 T. low sodium soy sauce (or coconut aminos)
1 T. finely minced green onion
2 T. water

DIRECTIONS: If you wish to serve this dish with dumplings on the side, prepare a recipe of my glucomannan dumplings at the link above according to that recipe’s instructions, simmering them in plain water that is barely at a simmer. Be sure to make them real tiny, about ˝” is what I did, as they swell to about 3/4″ during simmering. When they are done, using a slotted spoon, dip them gently onto a plate. With paper towels, blot away as much water from around them as you can. Set the plate of dumplings aside for now.

Mix the dipping sauce ingredients in a small bowl and set aside.

Mix up the meat ingredients in a medium bowl with either a fork or your hands. Heat the 2 T. olive oil in a non-stick skillet over medium-high heat. Form into 10 patties (mine were about 1˝ oz. each and about 2″ long). Place the meat patties in the skillet and brown on both sides until golden brown, making sure pink juices are no longer coming out of the meat when slightly pressed with the edge of your spatula. Turn off heat and dip them onto a serving platter in a circle. If serving with dumplings, serve those in the middle of the platter. You can rewarm the dumplings on defrost in your microwave if you feel so compelled, but I find room temperature is just fine since the meat is piping hot. Pour the dipping sauce into 3 tiny bowls and place one at each person’s place at table. I forked 1 dumpling with a bite of meat, dipped into the sauce and shoved the two right into my mouth! Pure heaven it was. I swear it tasted just like steamed dumplings! Now to see just how I can get that browned taste of Pot Stickers next time. Must try to brown my little dumplings in a skillet next time!

NUTRITIONAL INFO: Makes ten 1˝-oz. meat patties. The numbers below do include 1/10th of the sauce. The info below does NOT include the optional dumplings, but since they have negligible food value, I wouldn’t worry about them too much. They are virtually pure fiber. I get around 36-40 mini-dumplings or gnocchi out of the dumpling recipe so 3 dumplings only have around .1 net carb (or less)! Like I said, virtually negligible. Each meat pattie & sauce contains:

167 calories
14 g fat
1.11 g carbs, .16 g fiber, .95 g NET CARBS
8.7 g protein
142 mg sodium
153 mg potassium
15% RDA Vitamin B6, 16% B12, 12% C, 8% iron, 15.5% niacin, 14% phosphorous, 13% riboflavin, 24% selenium, 31% thiamin, 14% zinc

I'm not going to make the dumplings...I really don't want to buy new ingredients right now. But...I am definitely making these patties and the sauce. I am excited. I have tomorrow off, and maybe for breakfast?? ha ha. Since I ate all of the crepes!! I know...it's a weird breakfast, but some of my best breakfasts are the ones that are not normal what so ever.

Also, because it is my day off tomorrow, I am going to visit my mom. I miss her, even though I just saw her on Thanksgiving. But, spending the holiday with all of the family, and spending the afternoon with just the two of us is very different She lives about an hour away from me, so unfortunately I don't get to see my parents as much as I would like to. They both still work, and with my schedule, sometimes we just can't synchronize our times.

Today at work was much better all around. A huge relief that maybe the worst of times are over. I don't remember ever being that slow for that long in the restaurant business. It was nice to see everyone bustling about. I am still hesitant to think the drought is over. I do have a new restaurant that really wants me to come there. Outback Steakhouse. They have wanted me for a while, and my sister is friends with the General Manager. When she found out that I am in need of a second job, she jumped on it. So, I might be getting a part time job pulling lunch shifts. Depending on how business goes with Macaroni Grill, after the holidays, I might just transfer to the Steak house for good. I will have a clearer head after I talk to my mom. She wants me to just go for the management position that Macaroni Grill keeps asking me to take, but I don't want that stress. And, I want to enjoy my boys while they are still home. Most of our managers work 70-80 hours a week! And there is no guarantee that I will be put in a store near home. One of our new managers that just got out of training was sent to Louisville, KY. Ugh. I don't want that lifestyle. But, on the other hand, if I took the position, I would be on salary and guaranteed pay.

Have a great visit with you mom today. You can figure these life issues out by having a good long talk with her. Look at it this way: you have plenty of good options. Your current employer wants to promote you with a management position and a new prospective employer is dying to work with you. That's pretty good all around.

The pork patties look fabulous! I will have to make those. Tony would love them!

Sounds like some complicated but exciting job decisions lie ahead. You'll figure out what's best for you and your family; I can certainly understand your reluctance to take the management position while your kids are still at home.

I'm also trying to work out the veggie issue. I do take magnesium but despite that I seem to need a little more help sometimes. I've been having 1.5 cups of lettuce for lunch and either none or .25 to .33 cup of veggies for dinner. I've noticed that if I have a larger (about 1 c.) serving of green veggies for dinner my GI system seems to work better but the downside is I am a *lot* hungrier the next day so all this seems like a problematic balancing act to me. Do you also find you are hungrier when you eat somewhat more green veggies? (I'm never eating any high carb veggies.)

My neck was 14".
My upper arm 14 1/2".
My wrist 6".
My bust 43 1/2".
My rib cage underneath my bust 38".
My waist 39".

My hips 47 1/2".
My upper thigh 25".
My knees were 14 1/2".
My ankle 9 1/2".

On December 5, 2013, I weigh 182.8 lbs.
My neck 12 3/4".
Upper arm 12".
Wrist 6".
Bust 40".
Rib cage 34"
Waist 35"
Stomach 39".
Hips 43"
Upper thigh 22"
Knees 14 1/2"
Ankle 9"

AS of today, I am down 33.2 lbs and 27 1/4" So excited to see these numbers!!!

Thank you ladies Funny thing Gail, I don't really have a plan! I attempt to eat less than 20 carbs daily, but I don't really count them. I don't count calories either. Not yet atleast. But, I guess whatever I am eating vs. my movement is working together to show results for now!!

I wanted to make those Asian pork patties for breakfast, but the day got away from me, and I never went to the store early enough to get the ingredients I need.

Lisa, whatever you are doing, it is working. That is what's important. And your approach of staying under 20 carbs per day and moving more is helping you lose a lot of weight. You are a great inspiration and example for folks on this board.

So, now that the pumpkin bake is polished off...I have a cheesecake in the oven. I wish I could have a bite tonight, but I will let it chill and have a nice slice for breakfast I used the same recipe I have been using, but this time instead of adding vanilla, I added lemon flavoring. I then added lemon zest and just a little bit of lemon juice. On top, I sprinkled extra zest and two packets of Ideal. Not sure how many more carbs were added, but I wanted to experiment with a lemon cheesecake. I have been craving lemon lately. It all started with those lemon clouds...

In addition to the menu I posted earlier, I also had a handful of almonds, a sugarfree jello and another chicken leg with about a tbsp of cream cheese. We ate dinner very early tonight because Andrew had to be at work at 6. I like having sit down dinners when we are all home.

Oh yum, lemon cheesecake sounds so good. I need to make something like that this weekend. Tony has such a sweet tooth. I think it is nice that you and your boys have sit down dinners -- that is really important. You have such a good connection with your sons.

I am in the same boat as Tony. I have a sweet tooth as well. BUT...the funny thing is if I make something lc, it doesn't send me off bingeing. I am good with portion control now. I love that I can still have dessert.

I weighed early yesterday...today is my official weigh in day and I am at 182.2 lbs. Even better

All of my clothes are getting too big on me. I just put on a shirt that I bought for Spring Break in Myrtle Beach this past year and I am swimming in it. I couldn't wear it on vacation because it was too tight and felt uncomfy. Not its soo big lol. I LOVE THIS>

OMG...I am so excited I want to scream and yell and jump. Andrew just came home from school and told me that there is a list of over 20 colleges that are interested in paying for him to go to school!!!! Most want him to play football for them, and he is on the fence if he wants to do that or not, BUT over 20 schools???!!!! He said 4 came today to see him. 2 were from PA and 2 were from MI. I am so excited. His coach told him today that the list keeps growing. He told me today that if a school wants him to play football and they will let him go for free, he is taking it. This is so surreal. I kept hugging and kissing him and he was like alright mom...that's enough, all while smiling at me. I want to cry. I want to yell. I want to jump around like a banchee!!!! I have so much emotion going on in me right now and I don't know how I am gonna get it out

WhooHooo! What great news!!! And what a relief it must be. Children of friends are graduating with school loans that will take a lifetime to pay back. This would be fabulous. I so hope it works out in a way that will make him (and you) totally satisfied. What a boon it would be to have the burden of tuition lifted. How happy you both must be...and what a well deserved happiness it is!

That is fabulous news about your son. I love reading about how close you are to your children. We always had a sit down dinner together, too. I think family time together is so important these days.

Thank you Lola and Seabreezes I can't control my maniac laughing to outright sobbing just quite yet.

Seabreezes, I wouldn't give up our family time for anything. It is so precious, and on a daily, or even weekly basis, will be gone all too soon. When I decided to have children, I kept it as a solemn promise that I would try to do better than my own parents did. And, I hope they both do the same, promise to do better than me with their own children. The greatest compliment would be if they wanted to be just like I am with them lol. But, there is always room for improvement

In my former life...I would make these chicken and egg sandwiches w/fresh arugula on an english muffin. This morning, I was craving that combination. So, I pulled the last of the chicken off of the rotisserie in the fridge, chopped up a small amount of red/green pepper and added it to the pan. I put a little chicken broth in to moisten and soften everything up. Seasoned it with chili powder. Removed that. Then, I scrambled an egg w/ 1 laughing cow cheese and a little bit of green onion. Put that on top of the chicken, and it tastes amazing!!! YUM
