So...I was going to make that lc bread to make stuffing for thanksgiving. BUT...I just came across Widget's stuffing recipe. Read all of the comments, and I think this is what I am going to make instead. I usually make a sausage stuffing any old way

I have the day off today, and am trying to make what I can ahead of the holiday. My house smells so delicious. Just finished baking the pumpkin bake, and now am making a pumpkin roll for Thanksgiving. I love the smell of pumpkin Watching the Browns play the Steelers, always a good time in our house lol. I feel so alive today. My body feels amazing. The knot in my stomach has dissolved. I have been cleaning all morning. There is a new spring in my step. I am excited for the holiday to be here!! Can not wait for my family and friends to come over.

Yesterday
B~Steak tips sauteed in butter, topped w/ havarti cheese
L~roast beef topped w/cheddar cheese sauce
D~McDonalds habanero burger without the bun

Lately I have been eating more fast food. Feels like I am running out of time a lot lately. I plan on taking a hiatus from the fast food. It makes me retain water (probably from all of the sodium). This week will be easy to stay on plan because of the holiday. Will have lots of lc leftovers

Went to see a play that my nieces participated in for school. Dana was the assistant producer and Anna was the costume designer. Both girls have worked hard. It was a play called "Working". It made me laugh and cry. Very good I was so proud of them!

Hi..

Hi , I'm new to LCF but I've been reading your journal and can't stop! It's so interesting and gives me some inspiration, and it feels like you're not alone doing this! Well done on getting through that horrible period waiting for your test results and not going crazy, a stronger woman than I!

What you were saying about fast food I think the key is time and prep (like you don't already know that) which I find hard enough without having kids, I don't know how you all (journalers) do it with kids. I'm going to struggle this week, we have no fridge/freezer for a few days so it'll have to be on the go for now.... Eeek.

LoCarbNewbie...welcome Maybe try some canned tuna? I know that only goes so far, but its a start.

Speaking of tuna, I think I am going to make some this morning. I haven't had any in a while, and I have a few cans in there. (Back up lol) Might try to make a tuna "melt" without the bread. Finishing up my thanksgiving shopping today. Have to pick up a small ham and some more veggies. I did the shopping in small batches so it wouldn't cost as much all at once. Mama's on a budget!!

I was contemplating making a glaze for the ham with sugar free preserves. ANd, then it hit me...why not use some of the Ideal brown sugar and Orange flavoring? (LIke vanilla, but different flavor) Add a little orange zest to it. I am going to attempt to make the glaze tonight. Taste it, and if it tastes good, then I will store it in the fridge to use for thursday. And, if it tastes bad, then I will revert back to using the sugar free preserves. A few more carbs than the Ideal and flavoring, but I do want the ham to taste delicious

I am working all week long. I have my normal, thursday and sunday off. It will be a crazy week at the restaurant. Always is at this time of the year, but definitely looking forward to it!!!

I just made Chicken Parmesan for lunch for Andrew and I and he said, I thought you weren't allowed to eat like this!! Ha ha. I breaded the chicken w/ half ground up pork rinds and half parm cheese. Dipped the pounded out chicken in a mixture of one egg and a splash of hwc, then breaded it. Fried it for about 4 minutes on each side. Found this lc spaghetti sauce by Eden Organic and topped each breast w/ 2 tsp. Sprinkled shredded mozzarella on top and broiled it for 2 mins. I served the chicken w/ half a portion of dreamfields linguini topped w/ 1/8 c of the sauce. He said it tasted amazing I did NOT tell him the chicken was breaded in pork rinds lol. Lunch was a success.

Mmmm chicken Parmesan sounds good, I'll have to try that. Also, what is hwc? I see that everywhere. And yeah thanks I think I will try the tuna, I too have a couple cans in the back of my cupboard somewhere that I always forget about!!

B~tuna salad melt (it was so good yesterday)
L~spicy grilled catfish, turnip greens w/ pork (cider vinegar) and tomato, cucumber, onion salad (All compliments of Cracker Barrel)

Last night I did end up making a two egg omelet. Chopped up what was left of the ham steak and melted american cheese over top of it. I don't like eggs a whole lot, but that was yummy. I used to love eggs! But, scrambled, omelets and quiches kinda turn me off most of the time. I still love hard boiled, deviled, over easy, poached...yum

Headed into work again. It has been snowing very lightly all day and is just starting to build up. It is like a nice blanket over the world outside. Everything is so quiet. Today was the boys last day of school until Monday and I couldn't be happier. I love when they are home!! Finished up shopping today for the holiday. Just have to run out tomorrow and get a little milk (my dad likes milk w/dinner) and atleast one other beverage for everybody. Getting super excited about Thanksgiving!!!!

Dinner tonight was an angry whopper w/out the bun and w/out the crispy onions. I was just so tired coming home from work, and didn't want to cook. So, I got that. It tasted amazing I am so sleepy right now. Long day tomorrow. Opening the restaurant in the morning and then prepping the house the rest of the way for guests on Thursday P.s. I have eaten two pieces of pumpkin bake!! I couldn't resist....

Today was my brother's 35th birthday He is the baby of the family. My sister, my brother and I all went out to celebrate. I had 4 cocktails...all vodka sodas w/lime. I am feeling a little tipsy, but happy that I didn't eat while out! I need to get to bed because I am cooking all day tomorrow. So excited that the holiday is here!!!!



A little blurry, but it's us Starting down front is the birthday boy. Going clockwork, my sister, Jarell, Lauren, Kristen (my brothers wife), me, Anthony. It was a fun night with lots of good friends.

I didn't even think about it, but I weigh and measure every Friday. Wonder how this week is going to be...

I am excited. It started to snow this morning again. It is so pretty outside! Unfortunately, my sleepy head son didn't go to the annual football game because he didn't want to freeze lol. I personally think it is because he wanted to sleep more Everyone will be arriving around 3, so I am just finishing up some last minute cleaning details. Yesterday...
B~handful of almonds

Pretty sure my carbs were under 30 for the day. Decided to just grab a handful of nuts to take the edge off of my hunger until appetizers were done. We ate pretty early, around 3, and then I ate leftovers again around 8:30. Pretty successful at staying lc yesterday and I am so proud of myself

Today...
B~leftover turkey, stuffing, gravy and cranberry sauce
S~pumpkin bake w/redi whip
L~leftover turkey, mac n cheese
D~steak strips sauteed in butter, topped w/mushrooms, mozzarella and A1 sauce
S~decaf sugar free vanilla cappuccino (folgers)

I am officially loving all of the lc leftovers from thanksgiving. I could literally eat it all weekend!!!!!

LocarbNewbie, I don't mind the preparations. I love cooking. It's my hobby!! Probably why I have issues with food lol. BUT...with the new challenge of making things low carb, it's like an improved hobby for me. I have rewritten many of my own recipes. I take every sunday off now from work just so I can make a big meal for my boys

Made these guys today. I did mini ones. They don't exactly taste like corn bread, but crumbled into my lc chili, it is a pretty good substitute.

1 cup almond flour (OR 1/2 c almond flour & 1/2 c hazelnut flour)
1 teaspoon baking powder
2 eggs, beaten
2 tablespoons cream
2 tablespoons water
1/4 cup butter, melted
1 teaspoon Splenda sugar substitute or 1 teaspoon honey, substitute
Directions:

Preheat oven to 350 Combine the almond meal and baking powder. Add the cream, water, sweetener, and eggs, stir to combine. Add the melted butter, stir to combine. Spray Pam (or other nonstick spray) into a muffin tin. Divide the batter amongst 5-6 muffins. Finally, bake for 15-18 minutes until edges are slightly browned and the tops are firm to the touch.

I would love to give the recipe of my chili, but I really don't know how much of what spices I threw in I sometimes do that. It basically has 1 small onion, 1/4 green pepper, can of diced tomatoes, can of tomato sauce, 1.5 lbs ground meat and water. And, ofcourse seasonings. It is about 10 servings. Tastes so delicious. I figured it out to be about 2-3 carbs per serving. I hope I am right on that lol.

Your corn muffins look delicious. What brand of diet hot chocolate do you use? I would love to find a low carb hot chocolate to have at night, after dinner when I watch TV.
