"Mindset Change"

I was thinking about Monday being Labor Day and having to resist all the high carb foods I love at our family BBQ. Well I've decided to look at things in a different manner. I'm choosing to avoid the high carb foods that I love, because I have goals that I'm going to meet and feeling great taste much better than the mac and cheese along with the candy yams.

Mealing and Dealing

I've been searching for a few meal ideas that I can prepare and will last me 2-3 days.

Well I love shrimp and green beans, so this is going to be one of the meals I prepare a large quantity of, so I'm prepared with meals and it saves for me having to go out and spend money daily to eat on plan.

Godsbeloved - I was drawn to your profile because of the name. Thanks for the reminder first of all of who we are and why these goals we set here are so attainable because God has never wanted anything but the best for us. Anyway this weekend with family could be a challenge if you don't plan but with a plan in place totally doable. I am bringing sugar free bbq sauce and making my own coleslaw and maybe soybean baked beans. And plan to just enjoy the company of family more than anything. By the way, can you post the recipe for the shrimp and green beans it looks mouth watering. Finally, thanks for the wonderful inspiration and the real talk you share out of your own struggles. Hi monees lc, it's a pleasure and an honor to encourage others with my faith, my struggles, and success as I encourage myself every step of the way. I learned a long time ago, that I'm nothing without God and I can do nothing without him. I prayed and asked for the strength to endure and make this journey a lifestyle. While losing weight, I believe the woman on the inside that God wants to birth out will be set free.

Great idea on bringing your own legal foods to the BBQ. My aunt will have lots of salad and veggies that I can eat along with my BBQ (no sauce), or bun-less burgers. I agree, the most important part is being with family, not the food.

Here's the recipe for the shrimp and green beans. I might make some night, after my evening power walk.


Cilantro Lime Shrimp & Green Beans

Servings: 4 • Serving Size: 6 oz shrimp & 1-1/2 cups green beans
Calories: 257.3 • Fat: 5.1g • Protein: 35.9 g • Carb: 17.4 g • Fiber: 4.1 g

Ingredients:

2 tsp olive oil
2 lb shrimp, shelled and deviened
6 cloves garlic, crushed
1/3 cup chopped fresh cilantro
1 lime
salt and pepper
6 cups green beans


Directions:

Heat a large frying pan on medium-high heat. Add oil to the pan, when hot add shrimp. Season with salt and pepper. When the shrimp is cooked on one side, about 2 minutes, turn over and add garlic. Saute another minute or two until shrimp is cooked, careful not to overcook. Remove from heat. Squeeze lime all over shrimp and toss with cilantro. Serve hot.

In a separate pan, add 6 cups green beans, crushed garlic to taste, and season with salt and pepper. Cook on medium high for 2 minutes. Add 1/2 cup water and cover, cook for an additional 8 minutes. Uncover and cook until water evaporates. Serve hot on the side of shrimp.

TGIF

The weekend is finally here and I'm excited. Early morning workout, date night with my husbie and BBQ with the family. I'm so glad that I have gotten to the point, where food isn't controlling me anymore; it's Mind over Matter.

Old Navy and Target both have some good deals on Summer clothing, that have been marked down on Clearance. I'm going to grab a few items and watch myself get into them over time. I'll be getting Medium tops and 10/12 bottoms; because that's where I feel comfortable with my weight.

Gym

I'm working but also online shopping for a Gym that's reasonable near my house.

I was a member of YouFit and it was cheap, but crowded; because everyone wants a deal and for $10 a month (limited to that one Gym) is not bad at all.

I like the power walks, but I need more to tone up.

Good luck with the gym shopping! I currently use Planet Fitness, but have submitted a financial assistance request for the YMCA (it's $63 a month for an individual). The Y is where I first started, and I miss it. It's not as "commercial" as some of the other places I've tried, but they still offer a ton of activities (like a nutrition/lifestyle program called "Y-Change") and classes. There's even a "Women on Weights" program...I really, really want to try it b/c I need to learn correct form.

Being prepared has been my issue in the past, but not anymore. I'm getting creative and preparing meals ahead.

I have to find some breakfast ideas though. The eggs with cheese and bacon is getting boring; even though I love it. Maybe I'll look up some breakfast quiche recipes and omelets.

I whipped up some beef and broccoli last night for dinner lunch and a snack over the weekend.

I'm eating some now and it's delicious. Thanks

I use a little black pepper, some garlic salt, and regular season salt. I also add a bit of soy sauce while stir frying for flavor. It's a quick meal and pretty darn cheap. The bag of broccoli is $1.79 and the pack of steak strips (already cut) is $4.00. I made 2 meals out of it.
