I did it again!!! It was REALLY hard to climb out of my warm bed this morning at 5:30am to work out in the COLD living room. But I did it.....Wow. Even I am impressed with myself. Ya know what's awesome about doing your workout FIRST thing? It's that your DONE for the whole day........YAY!!!

SO I did make mayo this weekend, used a little last night on my cheeseburger but today I made ham salad with it, I noticed it's a little loose. I don't think I whisked it long enough.....I'm not sure what will happen but I suspect that I should eat it quickly as it appears to be separating. Ugh. Making mayo is easy but it's not always a sure shot!!!!

Gonna try this peanut butter pudding thing from greengeeny:

2 tbsp hwc
1 tbsp peanut butter
2 tsp sweetener

Will let you know how that comes out!!! Mmmmmmmm

Aww thanks!!! However DOMS is setting in, I am so super sore :-( I guess this is what I get for not exercising much lately. My legs feel like they are going to give right out under me when walking down stairs!!

and NOW my upper body is starting to feel it from yesterdays workout!!! (the legs were from working out Monday). This is good....I just keep saying that!


Peanut Butter pudding, Yes ma'am. This was awesome and I will have more tonight!!! PERFECT to take care of that little after dinner need for something sweet and creamy.

I used:

2 tbs natural peanut butter (1 gr. carb)
2 tbs Heavy cream (1 gr. carb)
1 tsp Stevita crystals technically 0 gr. but I call it 1)

Yup I stirred and stirred and it came out AWESOME. So creamy and rich.....

Avoiding the scale until Friday! My new official weigh day (screw you wednesdays!!) The weekend was good, it was so nice to see all DH's family. There were MANY temptations, I strayed a few times but overall kept the weekend rather low carb. This maintenance roller coaster seems to be a bit more forgiving now when I fall off the wagon on the weekends. It's almost like mini-refeeds or something, because I am back on track on Monday and my body responds very well to that.

I did not get my workouts in this week!! AHH!!! Because of the travel back from Conn. on Monday my week is completely thrown off- ugh!! No worries, I"m not letting it derail me, life often gets in the way of, well, life.....LOL Tonight I"m heading right over to a restaurant after work to celebrate my step-dad's birthday, so tomorrow I'm hoping to get an AB workout in and I am going to do a Total Body workout with weights Friday morning (eaaaarly!!).

Todays meals:
BRK - 2 eggs, 2 pc cheese, 2 pc ham, 2 slices tomato
LCH - leftover Jalapeno popper cheeseburger (see below) on lettuce
SNK - walnuts
DNR - ceaser salad w/grilled chicken. Maybe some wings (at the restaurant)
DRK - coff, vodka seltzers.


So two nights ago DH made another batch of stuffed burgers using his new STUFZ. This time we made Jalapeno Popper burgers, our very own creation!!!

Wrapped in bacon, stuffed with jalapeno's, cream cheese, and more bacon:

I knew you would love that peanut butter pudding!!! It is a saving grace for me ALL OF THE TIME Your burgers look freaking amazing. OMG> popper burgers. I think I am in love.

It was SO HARD not to step on the scale this morning, I'm super curious! But I talked myself out of it and then jumped in the shower. Good night last night at the restaurant. I was so busy socializing with the family and stuff that I hardly ate any of my meal. I only had like 3 buffalo wings and 1/2 my chicken caesar salad. I did end up taking a couple bites of cake later on, but that' only because my daughter wasn't finishing hers and wanted to feed me, she's too cute. The bites probably didn't even make up for what I didn't eat so not worried.....

Definitely getting my workouts in for the week, starting tonight with ABS, Total Body in the morning, and hopefully for LBWO I can do some snowshoeing up at my mom's cabin (we're headed up there Saturday for the night). Then a nice soak in their wood-fired outdoor hot tub. Man that thing is awesome (it looks like a big wooden pot, hee he, and basically you sit in it and boil yourself like a stew, hee hee).

Todays meals:
BRK - 2 eggs, 2 laughing cow cheese wedges, 2 slices salami
LCH - Greek salad (spinach, feta, tomato, Cucumber, olives, walnuts, and newman's olive oil and vinegar dressing, YUM!!)
SNK - ham slices rolled up with cream cheese and chives
DNR - baked pork chops in mayo & parm, roasted carrots, cottage cheese
DRK - coff, no alcohol today.....

And I made it to friday, scale is OK at 137.8 within range, but kinda wish I was on the lower end of that Range....oh well!!! Just have to try and be good this weekend!

Last night DH made some yummy carrot side dish, he julienned the carrots into noodle like strips- SO GOOD - and sauteed in butter and salt with rosemary MMMmmmmm. Carrots are on the higher end of the carb scale for veggies - so I gotta be careful, but they are worth it. I'll have to snap a pic next time as they looked really good!!!

Weekend was good, it's so nice to have 3 days off. Eating was BAD. *sigh* I made pizza's with the kids yesterday, and I had no back up plan in place for myself. That's my fault....Of course I had a piece of that yummy thick gooey crusty pizza. ARGH!!! ACtually I think I had two pieces because I finished some the kids didn't eat.,,,,

Oh well, not getting on the scale! I know better, of course I'm up. It's not like I can plow pizza (and a host of other no-no items) and expect to see a loss, YEAH RIGHT. So why put myself through the torture.. Wait and WEIGH on Friday. Be a good girl all week. I am pretty confident I will be just fine.

Welcome to my maintenance roller coaster.....LOL

Somewhat new creation (new to my household) - Chicken Cheese and veggie casserole



6 chicken thighs pre cooked and chopped into bite sized chunks
1 bag of shredded chedder cheese
1/2 cup mayo
1 head of cauliflower, steamed and mashed w/ a little butter
2 cups of mixed frozen vegs

Mix everything together, bake at 350 for 25 minutes. I topped mine with a little mozzarella...... Yucking Fummy!!!

Been a bad week eating wise.....our daycare is closed this week so I've had to rearrange some schedules and take a little time off. Monday was a GREAT day at work, yesterday was a GREAT day at home, except for the eating.

I love spending time with my kids, but why is it I feel the need to snack off their plates when they finish? Why do I sneak a bite of everything for myself - knowing it's not too hot or spicy- I have no reason to taste test anything.

The mindless eating has got to stop. This has been a constant struggle for me while maintaining. One bite is NOT okay

Weight last week was good enough at 137.0 but I have a feeling today I'm in the 140's....not going to check because I'll probably get upset. It's just water and bloating from all the crap I ate......I hope.

I wish someone could show up and slap me when I reach for that bag of gold fish.

Hey guess what makes a pretty decent fruit dip? Sour cream and some splenda!!! Nice and thick, almost like greek yogurt, but cheaper. LOL. I made a fruit platter yesterday and had melon slices, grapes, and kiwi on it (for super bowl) and just came up with the dip idea....it was SUPER

Of course I ate plenty of NON legal foods at my Mom's super bowl party, the game was LAME, the food was not. Ugh feeling it today!!! Typical Monday though, time to eat clean and flush all the crap out. So far so good......

Can't workout today like I had planned, I injured my back yesterday sledding with the kids. Of course I was FINE yesterday, it was when I woke up at 430am that I realized I was in pain. UGH. Right in the middle of my back too......We built a huge slide out of snow and I went down it a few times on my belly. Bad idea.....It was fun though, when you got tot he bottom you sailed for another 10-15 feet like a "slip & Slide" because the snow was just perfect for it. Very packy and slippery....

Todays Food:
BRK - skip, tummy not that well this morning
LCH - bacon and turkey on spinach, lettuce, tomato, and onion with a little ranch
SNK - beef stick
DNR - Mixed frozen veggies with some can chicken all mixed with melted cheese, cream, and butter (my own little creation, DH won't be home tonight)
DRK - coff. water.


HOPEFULLY my back feels better and I can get a work out in!!

OH that dip/fruit sounds amazing!!!!!!!

The game WAS lame! I had predicted a take away game, but take away by Broncos, NOT Seahawks. I am not a Bronco fan, I just didn't think he (Peyton) could ever have such a horrible football day as he had on Sunday! Watch that back girl! Don't push it with that!

Oh no kidding on the BACK....still sore today, but I slept better last night- probably due to a couple cocktails and 4 advil LOL. Won't be able to work out today either, Grrrrrrrr....At least I got a good workout in Sunday (mini bowflex set and then some outdoor playing with the kids).

I made Greengeeny's cream cheese muffins last night, they are SO GOOD!!!! This was my "half-batch" recipe that I followed:

1 block (8 oz) cream cheese
1 egg
1/4 cup Splenda
1/4 tsp vanilla (should have been 1/8 but I screwed that up, tasted very good anyway!)
cinnamon

Soften cream cheese, blend together all other ingredients. Pour into cupcake lined pan - sprinkle with cinnamon and bake at 350 for 20 minutes. This recipe made 6 little muffins:



Ok yesterday was pretty clean, gotta keep up the momentum and eat WELL again today!!

One of our authors will be on the Dr. Oz show today so I'm pretty excited about that!!

Had a good clean day yesterday, today it's snowing like crazy (but we need it up here in Vermont....) school was cancelled and I packed my breakfast lunch and snacks so I don't have to drive anywhere at lunch.

Back is feeling a little better but not well enough to work out yet. Ugh.

Todays meals:
BRK- 2 eggs, ham steak, 1 wedge of laughing cow cheese
LCH - tuna, mayo and dill relish on spinach with tomato and onion
SNK - cream cheese muffin MMmmmmmm
DNR - spaghetti squash and meatballs with marinara sauce
DRK - coff, coke zero, probably a vodka seltzer later

Hey Sicca! Snow! I guess you do need it for skiing. I'm ready for this crazy winter to be over!

Those muffins look delicious. Do you know the nutrient counts? I want to make them and I try to log everything I put in my mouth to keep me in-line.

Sorry about the tummy bug. I HATE THAT! I would rather be sick for 7+ days with a cold than 1 day with the tummy crap!

I am stealing your pork rind idea! Sounds delish I normally buy pork rinds to use as a breader for chicken, or to dip into something. This sounds yummy though
