Chalupa, low carb edition



So quick, so easy. I brown some ground turkey or chix. I fry a low carb pita very lightly (like 5 seconds on one side and 2 seconds on the flip side). I put meat, spread some sour cream on top, sprinkle lettuce, sprinkle cheese, fold, and enjoy.

A low carb pita is 4 grams of net carbs. Depending on the grain blend, they can be rather big ^_^

Total net carbs depends on how much sour cream and cheese you do. My chalupas are 6 net carbs. I use about a tbsp of cream and go easy on the cheese.

So, I'm going to be on the road for about 10 days. My dad and I are driving to Vermont and meeting my mom there. She's flying in from PR.

I'm going to try and find out what there is to eat on the way! Plan my meals without obsessing too much

I put my belly button ring back on after refusing to wear it for a year. I'm glad my body image is improving. One small step.

I went to the gym and kept my heart rate at 150 bpm for 40 minutes. I burned well over 200 calories. Stretching is helping my range of motion. I lost a lot to illness and I'm claiming s**t back. It's time.

I have 2 milestones coming up and they are 1 pound apart:

186.5-One quarter of way to goal. (15.5 pounds lost)
185.5-BMI under 30.0

Smashing Cauliflower

Cooked a cauliflower broken into florets in beef broth. Drained. Mashed with butter and cream cheese. Topped my serving with shredded cheese, creme fraiche, and chives. The rest is in the fridge for later nom sessions.

Starting the week bright and purple in ketosis.

Starting WEEK 5. It doesn't feel like it's been that long since I started. This week I see my rheumatologist and find out if I'll be able to add Lyrica to my meds. We'll also decide when I return to work! I'm on leave because of the fibro. I really hope it gets better.
There are still plenty of bad days to worry me. I don't want to be on disability this young.

I too understand what you are going thru. I have lost a great friend and I have no Idea why. I have beat my head against that brick wall so to speak for 2 years wondering why?
What did I do? Did I say something wrong? You know the rest of the lines. I finally decided I did not do any thing wrong they just had something else going on in their life and I am not the reason she stopped e-mailing me.

You and I are two good ladys who do not deserve to be treated like that. We will pick our selves up. Dust or selves off and start an even better life from here on out.
Sorry you are in so much pain in your body. I am praying god will take it away so you

I'm stalling weight wise a bit, but lost another inch around my waist and half an inch around my hips. Hopefully there's a whoosh coming!

In related news, I'm tracking my waist-to-hip ratio as another means to assess when I cease to be obese. So even before I hit 185.5#, I could meet the ratio requirement of <0.8. My current measurements are:

waist= 37", hips= 45.5", ratio= 0.81

I'm estimating that in two weeks just overweight should be a reality.

I'm super nervous about tomorrow. I hope my doc LISTENS.

Thanks windygap!!! I'm sorry about your friend. I think the long run we will really be better off without them. We are way too special for people like that

I've been bouncing the scale a little too, try to not let it psyche you out. Maybe take tape measurements too, that way you can see the whole picture!

So, I'm thinking of starting JUDDD! I am going to try for at least 2 weeks and see what happens!

After the first 2 weeks I'll make a decision on whether I want to stick to it.

Tomorrow will be UD. I have NO idea how to eat 1973 calories! UGh I mean, I do, but it's not low carb...DDs cause me way less anxiety. I don't have a huge appetite!

Shopping list: Progresso soups (santa fe, chix dumpling, chix noodle, chix barley, chix pot pie)

Up day: 1473 kCal example
-2 eggs with cream cheese, 1 sausage (2 carbs)
-String cheese snack (less than 1 carb)
-Lasagna (7 carbs)
-Carb smart ice cream, cake cone (8 carbs)
-Parm/rind chicken thighs, celery with ranch (1.5 carbs)
-String cheese snack (less than 1 carb)
Maybe add a salad with rich dressing....if I can fit it in my belly! Then it will be closer to target.

Down Day: 385 kCal example
-1 egg, bacon
-Soup #1 (9 carbs or less)
-String cheese snack (less than 1 carb)
-Soup #2 (9 carbs or less)

I have a strange gift for eating the same things over and over...so I don't have to get that creative with this.

Really, I don't want to post here so often but I can't sleep. I'm anxious, my heart is jumping out of my chest.

I keep thinking something will either go wrong with my leave paperwork, or I will go back to work and have symptoms and go back to being miserable trying to muddle through every minute of the day. I can't even describe how awful it feels to wake up panicked every morning because I don't know how I will feel. Even worse is the constant pushing to hold down a job when I do feel ill.

Can I just wake up tomorrow and realize it was all a bad dream and I'm just a typical 29 y/o? No lupus, no fibro, no intracranial hypertension, no Hashimoto's. Just a bright-eyed girl with her whole (healthy) life ahead of her.

How do you deal with chronic illness? How do you not feel like a piece of garbage?

Started gabapentin. Of course, side effect is weight gain. Like my other meds.

But hopeful. Plan is to go back to work on Saturday. Not as anxious...boss sounded happy on phone that I'm coming back!

I did my first JUDDD down day and rocked it. Right now my up day is not going great because I'm avoiding cooking. But that is fixable!! I still have lots of time to eat those cals up. We shall see!

I was 189 this morning, not bad.

I stepped on the scale to see the 'damage' of my up day, and... 186.8 with my PJ's on...so I'm claiming 186.

I've been peeing like a monster for 24 hours...so I bet it was extra water hanging out and being stubborn.

Anyway, it was just what I needed to get thru down day #2.

Today's Progresso soup du jour.....drumroll....zesty southwest chix.

I am trying to do both, but I'm not super strict with my carb limit. I observe it, but if I have an off day I don't freak out like I used to.

My 2nd DD went well! I stuck to my allowance, I got a little hungry around bedtime, but I made it.

Today was my 3rd DD. It was easy because I went back to work and it was crazy all day. But I sort of ruined it by having some Hi-C after work. It tasted awful and I must have had maybe 6 ounces of it. I can't believe how syrupy and unbearable it was. This was from the Mickey D's drive thru because I ran out of water and instead of buying their water, I said "why not?" I found the answer all too soon. Ended up dumping it.

So hopefully that blip doesn't set me back too much. I honestly don't know what I was thinking today or back in the day when I used to drink stuff like that, for that matter.

Let's hope the scale likes me tomorrow!
