2013 Laura's Life Journey

Hey everyone ! Decided to start a daily journal to keep myself accountable and finally get to goal.

A little about me ( for those that don't know me ) ~~ I'm 48 yrs old ~ live in South Texas with DH. I have 2 grown sons, one married to a nurse and they have my granddaughter Shelby. <3 The younger son has moved out also with his sweet girlfriend ( hopefully engaged soon )

I am an ER nurse as is my DH. We are finally working at the same hospital and will start our new schedule TOGETHER on Jan 15 th !! We work 6 12hr shifts in a row, then have 8 days off !! Right now we work opposite weeks, so we can't wait for this to start

I am a bit quirky and love to travel and have fun . Love trying new foods and LOVE to cook !

Weight is up right now ... have lost 3 family members in the last year and I am an emotional eater, I admit it. I did let loose from Thanksgiving to Christmas and decided to eat whatever. Lowest weight was 133.5 ~~ right now at 145

I will post what I eat daily and sometimes pics...... on my days I work 12- midnight shift ... I may only post the minimum due to time constraints. Mostly starting this to keep up with what goes in my MOUTH

Laura! Nice to see you here! You will enjoy posting in your journal. It has helped me stay on track. Didn't realize your DH was also an ER nurse - that's awesome. And your schedules are aligning - good sign for 2013 !!!

Thanks Garden ! Glad you saw this >

Have had my GD Shelby today so eating is super simple ( and my back is out, so not feeling like standing over the stove )

B - coffee and HB egg

L - tuna with mayo,salt,pepper, and parsley
10 black olives ( love them )

D - may make Cheri's southwestern soup if my back is better later..;/

Will be putting my chicken and veggies in crockpot tonight after reading the thread about bone broth ~~ that way it can cook all night Will pull the chicken out and take meat off bone after a few hours and add the bones back in for the night. Hope it turns out well ~~ will let ya know

Weight was the same this morning 145.0

Okay, back's a little better.

Chicken in crock pot with celery, onions, garlic and rosemary,salt and pepper !

Southwestern soup made -- ate a big big bowl ! Yum Yum !

Snack - beef stick

Lots of AS tea ...... as always

Still 145.0 ~~ did I mention that a week or so ago I was 150 ?? Well, was hoping it would fall off, but 5lbs has...so no complaints.

Thanks for checking in Susan ! Night time snacking is so hard for me too...... When I deboned my chicken in crockpot this morning at 1am I ate a few bites of the chicken.... so moist and delicious !!

Thawing ribeyes for supper. Wil turn bone broth off and strain it sometime this afternoon. So dark and smells so yummy Can't wait to try it tonight or tomorrow !

Hang in there Laura They always say it's water weight, but I beg to differ! So darn easy to put on the weight, but painfully slow losing it.

Man I just read my post, sorry didn't mean to sound so pessimistic! I am just a bit discouraged as I got up to 153 recently, and keeping bouncing around trying to get back down. Do you have to count calories Laura?

nah, don't worry about it...... you can do this too !

B- 4 strips of bacon and 1 HB egg
L- didn't eat since B was around L time

Bone broth was rich and dark. Put it in fridge so I can skim the fat off in am. Can't wait to try it !

Just had supper :

Ribeyes grilled outside in this lovely cool weather
Broccoli steamed and covered in cheese
Mushrooms sauteed in garlic and butter with parsley
Jalapeno poppers - jalapenos stuffed with CC and wrapped in bacon
poblano peppers with CC and cheddar cheese

Yummy...... DH just left for work , and guess what he took ? Cheri's southwestern soup ! He will eat that in the middle of the night

Good Morning !

Weight this am 143.8 !! NO SNACKING yesterday I usually eat another 4-6 poppers late a night when I have some left ~~ haha ~~ there were still some in fridge, but I stayed completely full.

Today was a good day ! Slept in. Stayed in my robe until after lunch Walked Allie - 50 and overcast, but it felt so good !

Did no cooking today. Lots of leftovers to eat.

Here is my food for today :

B - coffee with co
bacon

L - Cheri's sw soup

D - sausage and cabbage with butter

Tried my bone broth - was going to drink a cup full - ah....NO. It is rich and dark, but can't drink it like I can the boullion cube ones. Will maybe make a soup tomorrow with some of it and the chicken I took off the bone. May add cilantro and HWC ?? Sounds good to me ! I know it will be fabulous in soups and sauces for sure

Trying to decide since I didn't drink the broth if I will try a avacado pudding recipe (LC) that's supposed to taste like dark chocolate pudding, or if I will just have an atkins bar.

Either way ! Awesome Day . Hope you all had a great day too

okay last post today .

Made the pudding with avacado..... it was ok, kinda strange having sweet avacado .

Had a few pork rinds with sour cream too...hope the scale doesn't disappoint in am from having both ;(

So what did you do to the avocado to make it a pudding? I love avocados and eat them right out of their skin. I love the creamy texture! Bacon, avocado, strawberry and baby spinach leaves make an awesome salad. Oh! I'm hungry now !

I am an avocado nut too!! I just started making it in my "pudding" and it is a new, wonderful way to eat it. I could literally eat an avocado on anything...salads, meats. Here's my recipe for avocado pudding just in case you'd like to try it.

1 avocado
1/4cup cocoa
1/4cup unsweetened almond or coconut milk
1/4cup eritihtol(or whatever sweetener you like)
5-10 drops liquid stevia(again whatever sweetener you like. I like mine really sweet.)
splash of vanilla extract

mix it all together and you have a little taste of paradise. I like to mix up some HWC to put on top.

Woke up 143.2 today ! Slow and steady.....

Two roasts in oven, will make DH stew with the 2nd one......he loves soup and stew all winter long !

Hope it was a good day for y'all !

B- bacon and coffee

L - 4 bites of ribeye with 3 bites of broccoli ( wasn't hungry )

D - chicken soup - chicken broth, chicken, cilantro and lime juice

snack - LC cranberry muffins (2) they were eh....... oh well, I will eat them

Was a lazy slug all day. Made the 2 roasts and chicken soup. Made the muffins. Did dishes. That's about it for the whole day ! Didn't walk today..drizzling rain all day

Have been back to doing a little Pilates each night ( very little ) and I still enjoy it ! So Glad !

Allie and I went to the park ( she loves it ) and walked about a mile - there's a hill there, not much, but I am so out of shape my thighs were burning ;/ ~~ I need to get in shape! Anyway she started heaving all of the sudden, so we cut it short and came on home. So pretty out there. I thought it was 60 ~ wore capris and a tshirt, kinda cool, (which is great by me ) ~ it's lower 50's Yeah !!!

She was really pulling on the leash, so I think that's what caused it. She gets so overexcited, wish I could turn her loose, but she takes off and won't come back till she's ready. Scared she would go in the road ;(

Went with only coffee on board, eating 2 HB eggs now and drinking tea. Need to vacuum and sweep .

Today was an exceptionally awesome day ! Energy out the wazooooooo !!!

Went to park for a bit and the weather was perfect Played ball outside with Allie off and on all day and then walked down our road with her before DH left for work and it got dark. She has loved today too

Did a load of clothes, vacuumed, swept, cleaned glass, did dishes........ and did my Pilates and dumbbells ( only little 5lb ones )

Gotta get rid of these "bat wings" !! haha ! That's what I call them...... giggly little suckers - flap in the wind !

I did find out that whipping HWC by hand works those suckers out ! I couldn't believe how tired my arms got doing that ;(

Food for today :

B/L - coffee and 2 HB eggs

D - 9 lg wings ( I used the method on another thread here. Bake in oven 45 min then sprinkle ranch packet - didn't use all of it - on the wings after you get the grease off the pan - and put back in oven for 15-20 minutes )
4 jalapeno poppers (halves)

Just not hungry much again today..... so nice to have that appetite suppression ! Usually I can eat double that amt of wings .......and double the amt of poppers too !!

Hot shower, jammies, and my Allie sitting in the chair with me......great day

Decided to make some "fat bombs" that don't have nuts in them... someone on another post used co,butter,cocoa pwd, and sweetener and puts it in her coffee.
I guess that's considered "bulletproof coffee" on the board.

I want to try it in the am ! I always thought how can you put butter in your coffee ? I put CO , but butter ? no way !! WEll. I am going to put some of these (1/2) in the am. Sounds yummy with the choc

I took Cheri's soup that I make all the time and poured a little bit over lettuce with a dollop of sour cream . Taco salad ! Only a few bites, I wasn't hungry

Having a small glass of prosecco ....... Have a good night

Thought I would add a Before/After pic :

!st pic is before July 2011 -- 173.5 lbs ! Highest weight ever !

2nd pic is summer 2012 --133.5 --- 40 lbs down

Now, I am 143.2 --- so about 10 lbs higher than the 2nd pic ...... I will get there tho .........and then to goal ! I know I can do this !

OMG! Hey you SKINNY GIRL! You will get back down - I know you will!
What an inspiration you are ! I put meatballs w/marinara over salad greens last night - it was delicious !

Morning ! Thanks, ignore the messy closet . Scale is down this am 142.6 ! Small steps but they are adding up

Getting my hair done at 1 ~~ going with the bangs. Have been letting them grow out , but gonna keep em.
