Home now ! Today is DH's birthday ....those of you on FB with me saw what we bought ! lol !

Had a good trip. Shelby enjoyed being a "bee" ~ she and her cousin had a great time

Bought the RV today !! It's so nice ! We will pick it up next Monday <3.

Was good with food.

Thursday :
bacon and eggs before we left
Beef fajita salad with guacamole

friday:
eggs, bacon, and sausage
Hamb steak, green beans, salad

Hope to see a better # on the scale tomorrow !

LOTS of rain, thanks guys for checking on me while I was gone missed y'all !

Beautiful morning here ! I love FALL weather !

Weight this am 142.6 ~~ oh well, it had jumped to 143.8 the day before yesterday from the salt , boy I'm glad that's gone

Thawing a whole chicken and some hamburger ~ not sure what I will make today Probably roasted chicken and maybe "crack slaw" ?? We'll see.

Coffee with CO and cinnamon this am ..... planning to not leave house today and just get some "hazels" done

Hey ! Great news ! my phone and computer decided to work together this am and let me download pics finally ! Don't know what the glitch was , but I haven't been able to "sinc" pics from phone for quite a while. yay !

Was considering taking Shelby to Reniasannce Festival (sp) possibly this weekend. But we all just came home from Austin and DS1's back is "out" he missed work last night...so prob not a good time. I'm kinda pooped anyway. Need to get out and walk today with Allie

Yippee !!

I grew up camping as a kid all the time and have wonderful memories of it

We took our boys camping a lot with our other camper too. DH and my Dad and FIL took the boys camping on the river fishing, etc... boys camped in tents with their friends a lot too....

hoping to create lots of new memories with this one. It is so nice and much nicer and bigger than I ever thought we would get Shelby will love it ! They are talking of getting one soon too so we could have lots of "outings"

The couch makes into a bed, so DS2 and Kristina could go with us also ...

OMG, Laura! I didn't know you were buying something off the showroom floor. That's out of this world! A 5th wheel with two slides was what I wanted too. How many feet is it? You are going to be it wherever you go in that amazing thing! I hope it treats you well and gives you lots of joyful times as a family.

DH and DS2 went golfing so I've been a lazy girl

DS1's back is better so he came by to drop his stuff off and went to work So glad he's better !

Linda's LC meatloaf in the oven..... May just boil the chicken later so I can make lots of different things with it

Fixing to mix up the famous "pumpkin bake" Have you all tried it ? It's wonderful.... 5 eggs ..... so it's great for breakfast and very filling too !
May as well throw it in the oven while the meatloaf is cooking anyway

Debby it's kind of high in carbs, but you can cut smaller pieces. It's a interesting alternative for breakfast with coffee or as a dessert ! I made it twice last winter and it last a week or so for me Hope you can try it !



JODY'S PUMPKIN BAKE - Linda's Low Carb Menus & Recipes

8 ounces cream cheese, softened
5 eggs
1 cup granular Splenda or equivalent liquid Splenda (see update)
15 ounce can pumpkin
1 1/2 teaspoons Pumpkin Pie Spice
1 teaspoon cinnamon
1 teaspoon vanilla

Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350║ about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving.

Makes 6 servings
Do not freeze

With granular Splenda:
Per Serving: 228 Calories; 18g Fat; 9g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs

If I get real motivated I might try an alteration of it... not so sure about the cream cheese... my milk intolerance and all. It might be good without. I'm just enjoying my pumpkin with sweetener & cinnamon & various seeds.

Yes, I'm so happy to have got so much done today & feeling better... Still haven't done much toward 'packing' but there's enough to do just keeping up on things. We're having Bible Study here (if we're still here), so needed to clean house.

Wow, Laura. You are all busy over there. Debby, so glad you're feeling better! I've made that pumpkin bake. It's really yummy. My first holiday season of doing LC (four years ago), I made LC everything! Did the loaded cauliflower mashed "mock potatoes", pumpkin bake, eggnog, a green bean and bacon dish (to replace the traditional green bean casserole) and even made those LC "Red Lobster" biscuits. I packed the entire meal to my sister's house and just about only ate their turkey meat and some skin. Everything else I brought. (But then I started drinking wine...)

Three slides? Good grief, woman! Pack up the house and hit the road! Travel nursing ROCKS. If I had a set up like that, I'd still be doing it today. Heck! I'd have settled for a much older one with the two slides. I think the third one is overkill. But if you can afford it and find places to park in and "spread its wings", why not?

Have a great night, ladies. I went to work and got lightly sprinkled on twice and saw a wonderful rainbow. Can't complain about a day like that.

Cheryl, I think we will take it to a park not too far off when we get it Monday. Just to try everything out. Getting really excited now !

Yes, it is bigger than I planned on, but lots of storage and will be very comfortable if we get to go on long trips in the future

I am jealous of that RV!!! How fun to get out and travel and have the luxuries of home I make that pumpkin bake. I cut it into 9 pieces, and still think they are big! I don't know how anyone could cut it into 6 pieces lol. Hope you are having a wonderful weekend!

I wish we were getting it tomorrow .... next Monday ! We have to work

But, the good news is we had already taken Sat and Sun off ( Joseph Prince from Singapore will be at Lakewood Church in Houston and we took off to hear him preach ~~ awesome ! ) So we can get stuff together and get up there Mon to get it .

This week I am going to work nights ! yay !! DH and I can ride together. The other guy that works with DH took off, so I picked up his nights AND..... we only have to work 4 shifts !! Yippee !!!

Confession time :
Last night after LC meatloaf,cabbage with butter,small sliver of pumpkin bake,.......what did I decide to do ??? Big dummy that I am.....;/

Ate a bowl of ice cream and 5 lemon cookies ! ( KICK ME NOW ) !!

Woke up at 4am with a major migraine ! Just now almost gone and it's 11:30 am. Have taken medicine 3 times . Ugh. ;/

I know that flour/sugar are totally killers to me.. but I justify it and suddenly it's ok ??

Boy, did I pay for that 15 minutes of snacking !

Beautiful day here. Going to make Gailygail's chicken casserole from her thread- I boiled the chicken last night and it looks super easy. Also gonna make Cheryl's pork chops . Yum.......

Oh! Next Monday. I didn't realize you enjoyed working nights. That's the only shift that kept me marginally sane. Even now, I work what would have to be considered "second shift" in the real job world. I wish I was built to be able to enjoy mornings. Some people wake up, spring out of bed and whistle themselves a happy tune as they shower and brew their coffee. Not me, man. I shuffle half-dead through the house, yawning those yawns that never end. You know the kind.

I'm sorry you had to suffer so long after your little indiscretion. I used to do that too. Be good all day and then crash and burn. Oh, well. Sometimes it's worth it and sometimes it isn't. If I had those types of symptoms from eating the starchy stuff, it would be much easier to let that food go.

Good luck with the chicken and chops! We want to hear how they turn out.

Yeah, i worked nights for years.... only problem is "turning around" on my days off and not wanting to sleep them away . I hate that !! Wasted days off are terrible ;(

Plus, will save gas riding with DH. And, the 12-12 shift is the busiest ! Mornings they catch a slow time usually and nights usually catch some down time, but my shift there isn't a slow period !!! Exhausting after 6 shifts in a row !
So yes, I'm excited about 4 nights Will be a nice change And, I sleep sooooo good when on nights (usually, we'll see )

My little 'snack' was a BAD idea, but it didn't seem too bad when I did it ! Duh ! ;/
Will I ever learn ? I know it's so easy for me to get right back on track, but oh ! The consequences are not worth it !

Here is Gail's chicken casserole recipe in case anyone is interested in trying it !

Last night, I made something different for dinner. It was a recipe for chicken spinach casserole -- sort of like those spinach dips you see served with chips and pita chips? Of course no chips were served in my house -- but I always liked those old fashioned spinach dips with cheese, garlic, etc. It was really good and super low carb -- like only 3 grams of carbs per serving. I cooked up a batch of boneless/skinless chicken breasts and chopped them up. Then after they cooled, I mixed them with one bag of fresh spinach, a few cloves of garlic, a few TBS of sour cream and mayo and sprinkled with garlic salt and fresh ground pepper. Spray a large pan with cooking spray and then put the mixture in the pan. Top with plenty of shredded mozzerella cheese. You can also add a few sprinkles of feta cheese too and then bake for 40 minutes at 350 degrees.
