Another good day yesterday !

Took Shelby back and then we headed to Houston ~ went to Spec's and got some wine. Went to Academy and picked up some stadium seats with backs on them ~ really lightweight

Went to game ~ I couldn't believe it , it was cold ! We took light jackets and I actually wore mine ! lol ! it rained for a few minutes in the middle of the game - we both had hoodies on our jackets so it worked out

my nephew Dustin ( has MD ) was glad we were there. He now plays the cymbals ~ not his choice ~ he doesn't have the strength to hold any other instrument for long He was freezing ~ he's so thin and just sitting in the wheelchair ~ breaks my heart Was very glad we went !

For those of you who FB with me, did you see the note about the snake ?? We came home about 11:30 last night and were unloading all our stuff and a snake was right on the edge of the garage/driveway ~ dh almost stepped on it ~ big copperhead We used to have snakes all the time, not so much last few years

Baby sitting Snickers - DS2 just came by - somehow he always knows when there's food ready and he's going to BBQ with friends and his fiancee is with a friend shopping for wedding dress ! They are thinking next Sept ~ wish it was sooner !

You were chilly? Sorry your nephew couldn't handle it and you had to leave. You must have been loving it for a change. I don't own any hoodies if you can believe that. That's wonderful you found those stadium seats! Were they comfy?

Going to FB next and will check out that snake. Too close for comfort, cutie. We have Copperheads here too. I'm happy to say that I've never met one. Knock on wood.

No, we left at end of 3rd quarter just cause of the drive home and didn't want to get caught in the gridlock getting out of parking lot. Dustin isn't allowed to leave early. They stayed.

no pics of snake. DH chopped it's head off and then threw it over the fence

I know. I just read about it on FB. Brave dh! It certainly IS gridlock when trying to leave a large event like that. It's a shame you have no choice but to leave early.

You are one busy girl! Sounds like alot of fun! Not fun about the copperhead though! We have them here too! I killed one myself this past summer. It was hiding under some field stone I was working with. Luckily I was using a long handled rake to flip the stones over before I put my hands down to pick the stones up! Got my hoe and off with his head! I was so cautious because earlier that week when I was taking the twins outside to play, Emma was standing on the sidewalk and said "I don't want to step on that worm." IT WAS A BABY SNAKE! Can you imagine! UGH! I have been paranoid ever since about snakes in the yard!!!! HATE SNAKES !!!!

Going to cook Linda Sue's LC spinach lasagna today and some squash and zucchini in butter ..... sounds so good ! I love it

Another beautiful fall day here..... I just adore this time of year !! Windows open all day every day

Cheryl, I might make some pork chops tomorrow, need to go back to your thread and re-read how you made them. That would be good for work

Your lasagna (do you say to yourself "la-zag-na" when you spell that word too?) and squashes sounds so good! I'm thrilled you are finally in Fall and windows are open. Any month of the year you can keep the windows open, I'm loving it.

I will just tell you the recipe. All it is: You take a large piece of foil for each chop you are cooking. Place it in the center so the widest part goes across the narrowest direction (in other words, so that the long ends will fold up better and the pouch will be smaller.) Season each chop on both sides with whatever you want. I used salt, freshly-cracked pepper, rosemary and brown mustard. I rubbed the mustard all over them so no area was uncoated. Fold up pouches on the long ends and then do the side ends, making sure to seal each package well so moisture doesn't escape during cooking.

Preheat the oven to 350 degrees and select a sheet pan or the bottom of a roasting pan to lay the chops on. Depending on how thick or thin they are, cook for 1.5 to 2 hours. Mine were thin and large in diameter and were done perfectly in 1.5 hours.) If they have bones in them, just be careful when you go to eat the chop. The bones can become soft and you might accidentally bite down on a little piece unknowingly.

Mine browned on the bottom and didn't on the top. Then I took some cream cheese, butter and more brown mustard and put that into a bowl. I put it into the microwave (covered) for about 30 seconds, just to soften. I took an electric mixer (or hand beater or stick blender) and whipped it all up. (In ratios, I would do 1/2 package of cream cheese, two or three T of butter and a good healthy squirt of mustard.) Put back in the microwave to rewarm when it's time to eat.

I just answered you over there, too. Then after I did, I was scratching my head cause I know I gave you the instructions over here on your thread. I hope you like the way they come out. I also like eating them later on when they're cold. I just reheat the dip and use my fingers to eat the pieces of chop. It's a real winner!

Oh, yeah. Keeping in mind how many chops you're making and that you're making enough dip/sauce for two people, just double the quantities of the cream cheese, etc to get the amount you want and need. You'll need lots, believe me. Yum.

Not feeling the best today . Sinus headache and tummy troubles. maybe the spinach in the lasagna ?? Not sure.... but I'm definitely cleaned out ! (tmi)

lazy day here. Thawed out some cube steaks - yes I have them this time - to pan fry later. DH thawed out stew meat - he wants stew ( the man loves it and would eat it every week if he could ) So he will make that

DS1 is working days so he will be here soon.

I just feel wiped out ! So tired ......DH doesn't feel good either. And , we go back to work tomorrow ! yikes ! Hope we wake up feeling great tomorrow :0

Remember when we had the reno's done and the guy and his crew were so slow ? Well, we need a few more things done and he's here right now to talk to DH. I'm in my room hiding Hope they move quickly this time. And hope his estimate doesn't break the bank !

It is so hard to find carpenters/home repair people around here. Amazing ! My son lives an hour away and when they knew they would be moving he contacted so many people to do some things at his house. Most of them never even returned his calls ! How can they make money like that ?

Oh well,.......just chilling and watching TV. Will cook those up real quick later and maybe cook off some frozen okra too. Easy stuff.

Overcast and drizzling rain all day. Supposed to get a cold front tonight ~~ cool, not cold ! maybe that will clear out whatever is causing this headache and sinus pressure.

Oh sorry you're not feeling well. Hope its not a bug... you're not the first I heard of here!
That's sad about the carpenters... my dh is a carpenter. Someone he just did a job for told him they were used to 'slackers' as carpenters too & they were shocked to see how fast my dh & his guys did the work. I think the other ones get spread too thin... trying to get too many things done at once & doing quotes... sticking to one at a time is the best way to make it work. Hope your work doesn't break your bank...

Well, back to work today ! Cool outside and chance of rain...... should be a nice week though weather wise

Feel better today ~ PTL ! Having my coffee with CO - fixing to get a long hot shower

Food to take to work today :
steak and okra
greek yogurt
avacado
string cheese

I froze 2 servings of the lasagna - my son said he had the same issue too.....guess I put too much fresh spinach in it ! lol !

Think I will scramble me some eggs before I go ..don't want to show up hungry !

DH and I have an inservice Monday - I can't remember if she gave us Sunday off since I work till midnight and DH works all night -- will need to check on that today - I would not complain at all

You never have eaten fried okra ? Most people bread it and fry it... I just pan fry it with olive oil ( small amt ) and salt and pepper. We grow it in our garden every year too. Love it !!

You can buy it in the store with breading and without. Try it !

yes, we do think the spinach did it. Last time I made it DH said "whoa" ! lol ! Didn't affect me at all, but this time....... it did !! lol !

I get it in bags frozen at the grocery store. Just bought some for my pot of gumbo I made last week. Okra is good, but when you cut it fresh, it is slimy...like an aloe plant. That is why I never buy it fresh.

Glad you're feeling better, Laura. Sorry about the "spinach overload". But the lasagna was yummy, right? Enjoy your cube steaks, stew (what parts of it that you can eat) and scrambled eggs. I hope you have a good week at work. What was the outcome with the carpenters talking with DH?

Laura - glad you are feeling a little better! I could eat spinach everyday. Love it sauteed with onion and butter. Okra is not so bad - I like it pickled! And it has a beautiful flower bloom!

Hope your home improvement doesn't get too costly for you! Fingers crossed!

just got home . Crazy busy shift..left late again ! ugh......

Felt fine except my legs and feet are killing me. Was on my feet running the whole shift, barely got to sit and chart. Had lots of bad (serious) pt's too.... kept me hopping !

just took an over the top HOT shower and fixing to hit the bed. Wow, hope tomorrow is better.

Ate GY at 4pm, steak and okra at 9:30 pm and sometime in between a cheese stick and HB egg...... super tired.
