nope not at all !

I just try to stay with LC foods and if I eat nuts I limit to 1-2 oz ~~ other than that I eat to comfort

I don't know much about EFGT , but what I do know sounds like how I already eat.... Need to read up on it more.

Glad you are having fun eating more variety I hope you get to try some new things so you know how great your vacation can be if none of the foods bother you .

Off to work in a bit..... got tons of stuff to take for next few days so I have a variety of things to choose from. And some are just grab things for when it's wayyyyy too busy to eat !!

Frozen portion of meatloaf
Frozen slice of cheesecake
grapes
string cheese
salami
HB eggs
Leftover chicken
leftover cabbage and squash
celery
salad
1 atkins bar and 1 atkins shake - to grab and eat

That should be enough for 2 days and I have more things I can take later in the week.... lunchmeat and cheese and more frozen things

Another good day at work Blessed !!

Food was good, I have been sharing some of my LC food with co-workers and they like it too !
Today I shared my baked salmon patties ( Linda's LC ) and some wraps I made with peppered turkey breast,string cheese,turnip greens and chipolte mayo.....
they were really good !

Oh, and the weather is so unpredictable !! Was 74 last night when I got off, drizzling rain and 46 right now !!
Wish DH was home, I would open the windows ...... it feels great out there

Mornin' !

Well yesterday was a good day, kinda busy, very steady....but all in all a good one Slept well last night too

Weight yesterday was 137.0
Today 136.6 ! I feel "thinner" and Look thinner ( when standing sideways in mirror naked ) haha Have had 2 people ask me this week if I lost weight ! Hoping for a drop again tomorrow !

Food has been TOTALLY on plan. Boiling eggs right now - today shredded lettuce, tuna and HB egg salad - string cheese.
Taking a small serving of taco soup that is frozen and I small LC meatloaf that is frozen. Still have part of a salad at work and some salami so I should be ok for a day or so.

Beautiful day here -- still nice and cool I love it and hope next week is the same when I'm off.

Oh boy! Sounds like you're getting your work-out at the job! Glad you're seeing the end of the tunnel.

The salmon was delicious. Inspired me to cook up mine (have 3 sides in the freezer). Also was telling my dd in law how they cooked it & she took some out to cook too. She has even more of them that need to be cooked soon too. We all stocked up last summer, but they don't last too well in the freezer, so time to use up what's left!

Summer Vegetable Tian (thinly sliced veggies topped with cheese and roasted)...

Ingredients:

1 Tbsp olive oil
1 medium yellow onion
1 tsp minced garlic
1 medium zucchini
1 medium yellow squash
1 medium potato
1 medium tomato
1 tsp dried thyme
to taste salt & pepper
1 cup shredded Italian cheese

Directions:

STEP 1: Preheat the oven to 400 degrees. Finely dice the onion and mince the garlic. Saute both in a skillet with olive oil until softened (about five minutes).

STEP 2: While the onion and garlic are sauteing, thinly slice the rest of the vegetables.

STEP 3: Spray the inside of an 8x8 square or round baking dish with non-stick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper, and thyme.

STEP 4: Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown.

What do you mean you couldn't get the middle out easily? Were they not cooked enough to scoop out once you got to the base? I'm confused. Maybe you did them totally differently? I cook them whole & we peel them on our plates, one leaf at a time...

Shelby had a great party and her favorite gift was the CARDBOARD BOX that her doll house came in !!! hehe !

Isn't that always the case ??

Her other Grandma spent a FORTUNE on cake, cake pops, specialized cake pops from another State :0 and all the gifts !!! Couldn't believe it .......

I got her all clothes . She outgrows them so fast !

The party was at dil's grandparents home in the country. Very nice and quiet. Here are a few pics.

Oh my word! That's an expensive spread! How many people came to the party? Looks like she enjoyed everything... So happy for her to get that very special box!
