Yummo! to the chicken pot pie! Wonder if you could make individual ones using that pizza crust in small crocks? Ya know....cut strips of crust to make a lattice type top crust? Or how about a BACON CRUST !!!!!!!!!

Susan - LOL, I think that would work! Speaking of bacon, that is on our list for today. It is a cold morning here but I am going to go for a walk shortly and then I need to go get a manicure. We are going to have our one meal in the early afternoon -- short of a breakfast theme. I got maple bacon (no carbs!), fancy sausage and Canadian bacon as well as a dozen eggs. I also found some English muffins that only have 15 carbs each -- so we might try those or I will make CarbQuick biscuits.

We are due to get MORE SNOW tonight which does not please me but what can you do? We have to suck it up because it is winter. Hope everyone has a great day. xo

Hi Gail your chicken pot pie sounds so good and nice comfort food for this cold weekend!
I am making Linda's Low carb Texas chili right as we speak! It smells divine!my husband even commented on how he can't wait for dinner have a great rest of the weekend !

Susan, we need to do a spring dance for sure! Cfine, it is good to see you! Hope you are doing well too. I made a fabulous low carb stir fry last night and it was so easy. I just sautéed chopped up chicken breast in sesame oil, garlic and ginger. Once that was almost cooked, I added fresh veggies (broccoli, bell pepper, onion, scallions, peapods) and more ginger/garlic and then a tiny bit of prepared peanut sauce (have to watch the carbs). It came out great and it was so easy. I would much rather take the time to make something myself then eat something frozen -- gross. But that's just me.

I hope everyone has a great day. It is still COLD out there. And I hear we are getting more snow on Thursday/Friday which sucks because I have to take the train to New York on Friday and I don't want to cancel the trip!

Hi Gail! Your low carb stir fry sounds good esp with the peanut sauce yum!

North VA is also getting a major storm Thursday. They say 8 + inches for us. Ugh! So hard to stay on plan when I'm stuck in the house working and with the kids home from school:-( I'll go shopping tonight and maybe just start cooking up a storm. My 5 yr old daughter Michela loves to help!

I hope you get to make it to NY on Friday. Are you going to the city? I love NYC i worked there for 5 yrs sooo amazing:-)

Yes, I am going to NYC. I worked there for a few years too and loved it. There is no place else on earth quite like it! I love that your little girl Michela likes to help -- that is so adorable! And she is such a cutie in your avatar!

Yum -- love oven roasted vegetables, Susan! I cannot believe we are going to get another six inches of snow late tonight. Argggh. It is only seven degrees out now. This is the winter that will never end!

On a happy note, I found a sugar free Coffee Mate creamer that I like! It only has 2 carbs per serving. The flavor is Italian Crème and it is delicious. I never really have much of a sweet tooth but sometimes in the morning, I do want a sweet hot drink. This really fulfills that craving without eating up too many carbs. Have a great day everyone!

Thanks Gail! Michela is my little helper in the kitchen:-) Going to attemp to make mini cheesecakes. Have a great trip to NYC. We are awaiting the impending storm. Supposed to get 6-8 inches in the DC area. I got lots of food and drinks and the store. Wine too! LOL if im stuck with the kids home for 2 days i need some sort of sanity!!!!

That creamer sounds good. I agree with you im not to into the SF creamers but that one sounds delish. I will have to try it!

Melissa, Michaela is so pretty and I agree that you need wine if you are snowed in -- with or without kids. Although your kids are really adorable! Susan, LOL about living off fat like a bear -- if only that were possible!

I moved my trip to NYC. I had a client that was in NYC yesterday who told me that a bunch of Acela trains were canceled for most of Thursday (today) afternoon. I was due to head out on a Friday morning train so I canceled. I would rather be safe than sorry. Now, I just have to deal with the Boston rush hour commute today which will not be fun.

Last night, we ordered low carb goodies from our favorite Italian restaurant -- they will give us dishes without the pasta or breading or flour and they are still great. And they deliver! I got a Shrimp Broccoli Alfredo that was out of this world. Normally I don't like Alfredo sauces but their sauce is light, flavorful and spiked with garlic and white wine. We also got these eggplant rollups (eggplant did not have any breading) with spinach, ricotta and basil that were great. I am going to try to make them at home!

Gail! I have six inches of snow in my yard! Crazy crazy crazy! We aren't crazy like two weeks so when we had ice, but I am over it! We need to be back in school and on a routine. Like, NOW! Lol. I don't know how y'all stand it - I can't imagine this being a regular thing.

Julia, oh my gosh! That is awful! That is a TON of snow for Alabama. Does Henry like the snow? Do you have to stay home with him because school is closed?

Today isn't that bad for us...so far. The snow turned into rain in Boston but they say we may get more snow as the day continues. Ugh!

Yup -- we are getting a ton of snow. My commute home was messy but I made it home safe and sound. I stopped at the store and found that my favorite local bakery now makes a low carb bread -- homemade bread at 8 carbs per slice. So I ordered genoa salami, provolone, capiccola and smoked turkey at the gourmet deli and picked up stuff for salad fixings. So we had nice low carb sandwiches and salad.

We have the door open now and it feels a little better. When I was driving home, it was bad but now it is settling in. I hope everyone is safe. xo xo xo

We didn't have school today - hills and trees and ice are a bad combo - and we played in the snow all morning. By noon it was 40 and sunny and by 2 PM it was gone! Back to school tomorrow!

Gail, Just wanted to stop by to thank your for your expressions of concern and good wishes (left for me over on greengeeny's journal). My husband made it home fine and the snow, while still with us on the ground, has turned into rain from the heavens. I'm now rather embarrassed for being such a wimp, especially in light of what you've been dealing with up in Boston. You have my complete sympathy. Stay warm and safe.

Calif. girl here..the snow is only for
visiting a day or two in Tahoe!
We have rain (not much this year) 60's and 70's.
Cool in mornings thro. 30's and 40's.

Gail did you make it through the storm? Good grief 20" we got here it was terrible and now again tonight they are calling for 3-6 then it is suppose to hit 50 on Thursday and I hope these huge piles will start to melt! It is like a war zone, there is just too much snow everywhere! Ughghg I ate and drank all weekend, not low carb!! LOL I have been drinking that coffeemate Italian cream, I love it, less calories than half and half then I dont have to add all the splenda that I normally due, I love it, and I am not big on flavored creamers! I hate flavored coffee! At some point Spring is going to come so gotta try to get my act together!

Missy, thanks for the Valentines wishes! Lola, I am so glad you and your husband are okay -- this weather can be so treacherous. Bella, hello fellow Virgo! Yes, we hate the snow but what can you do? You are lucky Virgo living in California! I have to go to San Francisco on March 3 for business and I cannot wait! Susan, great to see you Doll! Amber, LOL -- I LOVE the Italian Creme. I like my coffee really strong with with something creamy in it if that makes any sense. I don't normally have a sweet tooth but I like something yummy in the morning that kills my cravings -- and really good tasting coffee works for me too. Laura, great to see you too! Jes, I am going a little nutty with this weather. How are you? Did you have fun in Washington DC?

Sorry I have not posted in a long time but I had computer problems starting on Saturday which made posting rather difficult. Fortunately, it gave me a chance to unplug a bit which was really good for me. Normally I am kind of tied to my computer as I do work alot even during non-work hours but it was great to be free from electronics, for the most part, over the weekend. I used Tony's computer to check in but that's about it.

It was a really nice weekend in spite of the snow. On Saturday, I met a girlfriend at the hairdresser -- we both got low lights and highlights. What a difference it makes in your hair! I am going back next week for a Keratin treatment which I really need. I have long thick hair but it can get a little frizzy and dry. Tony had to work early Saturday so I planned to have a really nice meal for him around 3:30 (we both skipped breakfast/lunch and eat our one big meal then) when he got home -- and that was when the snow started. I made homemade low carb BBQ sauce which we had with grilled chicken, green beans sauteed with ginger and garlic along with turnip gratin and a nice Pinot Noir. Then we binge watched the Olympics and a bunch of HBO shows like Game of Thrones, True Detective, Sopranos, etc.

On Sunday, I had plans to take two other girlfriends out for their birthdays for dinner. I wanted to cancel because it was bitter cold but an inner voice told me not to -- so I didn't. First I met another pal for pedicures and then headed into the city. I ended up having a great time with them -- they are my two best girlfriends from college. We had a great dinner at this place called Scampo -- it is at the Liberty Hotel in Boston. I did cheat on the diet -- I had to have some of their bread and I took a small bite of my friend's birthday dessert (molten lava chocolate cake with peanut butter crunch ice cream -- it was crazy good). My entree was low carb though -- roasted duck with bok choy and cauliflower puree. One of my girlfriends ordered lobster pizza and the other got spaghetti parmadoro so all in all -- I was okay, not great, but okay.

It was bitter, bitter cold again yesterday. I did not have to work but Tony did -- but he got home relatively early. I made a nice low carb feast to get us back on track again. He likes fried pork chops like his grandmother used to make but I did a low carb version. I got boneless center cut porkchops, coated them in egg (just beat two regular eggs) and then coated them in a mix of almond flour, garlic powder, basil and salt & pepper. Fry in butter and olive oil for about 6 minutes on each side. They came out great. I also made a low carb pasta dish -- fettucine mixed with brie cheese, toasted pine nuts and broccoli. Netrition has great low carb pasta and this dish is to die for as the brie gets melted in the hot pasta and tastes so good with the toasted pine nuts.

Then we binge watched TV again -- movies, Olympics, etc. I feel like the weekend was a mix beauty treatments, cooking, food, socializing and TV hibernation with my honey. Pretty much all of my favorite things besides astrology, animals and reading -- LOL! I hope you guys had great weekends too. I missed all of you! xo xo xo
