I just found your journal and wanted to say hello! I have started my own journal too!

I am on day 17 of Atkins, I am really enjoying this way of eating but I am still wondering if it will actually work for me as the food I am eating is just too satisfying! I have lost 7lbs so far, I am now 190lbs and 5' 4", 37years old.

I was looking at your food journal and the first thing that came to mind was that it looks like a very small amount of food and not much fat at all. I am new to this but the thing I keep reading about is the importance of adding fat, it helps with the cravings, hunger and it helps burn fat. I don't know if that will for sure work for you but it may help keep you from falling off the plan. I also read that a moderate size breakfast that is low carb helps with hunger and cravings later on in the day. Coffee can actually stimulate hunger and cravings in some people. Just my two cents.

I have been on several low carb diets last year and only managed to lose 10lbs which I quickly gained over Christmas. Before trying Atkins, I have never tried such a low carb allowance, turns out I was actually eating a lot of carbs last year, too much for me as the weight was not moving. I was also eating no fat everything and lean meat.

What level of carbs are you at?

Melissa, it is GREAT to meet you. Thank you for stopping in! Jes, we got pounded too. It started snowing here this morning and only stopped at around 7:00 PM. I am so sick of snow already! Hope you are safe and warm wherever you are.

Hi Wish!!! I try to stay around 20 carbs most days but truthfully I do go up to about 35 but I can still lose on that, just at a much slower pace. Congratulations on your weight loss so far! You are doing great!

We had a nice dinner -- grilled chicken with carb BBQ sauce and salad. I also made an old school Noodles Romanoff with low carb pasta. I just added shredded gouda cheese, a little bit of butter, sour cream, a bunch of fresh garlic, scallions, salt and pepper to the low carb pasta. It tasted delicious and was very filling. Hope everyone has a good night.

I thought of you this morning as I watched the video for the upcoming Nika storm. You guys are getting lambasted! We are getting our fair share, but only about 3 inches each time the northeast gets 8-10. Try to stay warm and dry and cook up some yummy lc food!

Thanks Missy! Hi Jes! Hi Judy! Hi Melissa! Laura, I love your new avatar. Is that Shelby? She is really beautiful.

We are hunkering down for a foot of snow. I am still at work of course but need to go to the grocery store to get meals for the next couple of days. Tonight, we will do burgers and salad. Tomorrow, it will be grilled chicken, green beans and butternut squash cakes. I found this great recipe for butternut squash cakes which are supposed to taste like potato pancakes only they have 6 carbs per serving. Found the recipe on a Paleo blog and I am really excited to try it! I will try to post the recipe soon.

I have to say - yet again -- how much better I feel physically when I eat low carb. I don't feel as bloated, irritable or cranky -- that is for sure. I just need to keep this in mind when I get tempted to eat something that I should not eat.

Hey that pizza crust description indicated that it was thin - is it tortilla thin or more like a "traditional" thin crust pizza?

Gail...get ready. We are getting plowed with snow here today. About 7" fell over night, and it hasn't stopped yet! I hear ya on the ready for spring. Susan, the pizza crust is a bit thicker that the tortilla -- more like Listraditional thin crust pizza and they come in personal sizes. I think you might like them. If you rely on really yummy toppings, it really kills the pizza craving.

Lisa, we are getting hammered with snow right now. My company is letting us work from home. Tony went into work early today and get sent home around 8:00 AM -- that is how bad it is. The roads are dreadful and messy.

We are going to make a nice meal today of low carb BBQ chicken, butternut squash cakes and sautéed green beans. I will post recipes later. Stay safe all! xo

Gail the butternut squash cakes sounds really good! Can't wait till you post the recipe:-) Im an located in Northern VA. We got some really bad ice and the kids were delayed from school for 2 hours. My husband almost took out 3 cars on our road that were parked in the street gah!!!!!!

Thats awesome that you can work from home in this bad storm. My work also lets us remotely work when we need too esp in bad weather!

Here is the recipe for Butternut Squash Cakes (hopefully they will taste like potato pancakes...we shall see)

2 TBS olive oil
1 cup of chopped onion
2 tsp curry powder, 1 tsp cumin, 1 tsp each of salt and peper
4 cups of peeled and grated butternut squash
2 eggs, fork beaten
2/3 cup of CarbQuik
1/4 cup olive oil

In frying pan, saute onions over medium heat until soft and translucent. Stir in curry powder, cumin, salt and pepper. Place grated squash into a large bowl. Add onion and spice mixture along with beaten eggs to the bowl. Stir in CarbQuik. Form 10 patties or cakes and fry them in olive oil until golden brown. Serve with sour cream.

The butternut squash cakes were delicious with a distinctive Indian flavor with the curry and cumin. If you like Indian food and/or potato pancakes, you will like these. If you have never tried either one, you may still like them if you like spicy food or hash browns.

The snow is everywhere! We got about 8 inches and it is crazy! Laura, I am glad you have gorgeous warm weather in Houston -- good for you!

Julia, I hear you. We got almost a foot of snow here yesterday and digging out my car this morning was a real pain. Now I hear that we are going to get more snow over the weekend -- boo! At least we will be happy and grateful to see spring arrive!

Trying to plan dinner tonight -- think we will do turkey burgers and salad. I have TOM right now and it is a rough one -- I have a terrible back ache, cramps, etc. Plus I am irritable and emotional -- not good! I should be better my tomorrow! TOM makes me eat too much but at least I am eating low carb foods so that's good.

Oh My Word! Gail! Too much snow! How do you keep your sanity! When we get 3 inches it's a crisis . The forecast for this weekend and next week is not looking good for us. Every other day is possibly snow or rain. BLAH!

I keep envisioning a bright, sunny, warm season ahead of us !

The good part is that you (and me) are back on plan and seeing results!

Susan, you are 100% correct -- I am glad we are both back on the low carb wagon. It is hard getting back on it, but once you do, you feel so much better.

Yes, this weather is awful. We are due to for another snow storm on this weekend too. A co-worker told me that this storm will blow over us though and we may not get much snow but Tony heard a weather report that said otherwise. All I know is that it is freezing out there and there are huge icicles hanging of our roof.

Sorry to complain! And I agree with you Susan -- we just have to stay focused on how great it will be when spring gets here

I have to think of what to make for dinner tonight. Thinking of doing a roast chicken with low carb stuffing mix or a low carb mac & cheese casserole (using cauliflower not macaroni) that has Canadian bacon in it. Don't know yet. Have a great day all. xo xo xo

Your recipes for tonight sound so good Gail! Its so hard when the weather is so cold and snow on the ground. They are calling for North VA to get some bad weather is whole weekend. Forecast is snow showers and 1 to 2 inches here. I have to plan out my menu's for the weekend. Im looking for a low carb chili recipe.

My daugher had a fever and bad cold yesterday so I was home with her. When im home and not in the office I eat! I was so bad for dinner and had angel hair pasta!!! gahhhh
today is a new day!

Melissa, I am so sorry your little girl is still sick -- that is awful. I hope she feels better. Don't beat yourself for eating a little angel hair pasta. First, you didn't do much damage at all. Second, it is awful to be cooped up in the house around food. Better days are coming and they are coming for you! If you find a low carb chili recipe, do let us know. I think Linda Sue might have a really good one.

We got another shipment of those low carb pizza crusts in yesterday so Tony wants to make low carb pizza for dinner tonight instead. I am still at work -- crazy day -- but he wants to get a head start making them. I think he is going to try to make a shrimp scampi pizza --essentially a white pizza with mozzarella, ricotta, lots of garlic and sautéed shrimp with fresh basil as well as a traditional one with marinara sauce, cheese and spicy sausage, along with a salad. So I am glad he's cooking.

Now I just need to brave the cold and traffic to get home!

Boy, you are lucky to have a guy that will put dinner together for you! My DH's idea of cooking is either "take-out food" or "eat-out food".

Hope your drive home was not treacherous. We may get more snow this weekend, but I really hope not. I think the entire country will be happy to see warmer weather roll in.

Did you catch the opening ceremonies of the Winter Olympics? I got a little bored with it midway of the entrance of the athletes . Rather watch the actual competitions.

It is still cold here this morning but at least the sun in shining. I am going to enjoy my coffee and then get going with my day. I have to get my hair colored and do errands (drug store, dry cleaner, grocery store, gas station). I really hope we don't get more snow. Still debating what to have for dinner -- might make a crustless low carb chicken pot pie or maybe do something really simple like bacon and eggs. Talk to you later!

Julia, we have tried all of the crusts except for the red pepper one. Each one is terrific so far! Hi Laura! The pizzas turned out great. I love the BBQ chicken pizza at California pizza chicken but my low carb one was even better because it was loaded with juicy BBQ chicken sautéed red onion and smoked gouda cheese!

I just finished making low carb/crustless chicken pot pie -- it smells so good and it I so easy to make. You just season chicken breasts and make at 400 for 25 minutes. Chop up celery, white onion and carrots (go easy on the carrots because they have carbs) and sauté in butter in a large pot. After ten minutes, add a few TBS of soy flour or coconut flour and sauté for one minute. Add a few cups of chicken broth and wisk in some heavy cream. Cook on low heat for another 10 minutes. Add cooked cut-up chicken, fresh thyme and tarragon, salt & pepper, frozen peas and sherry. Ready to serve!
