Yes, you can totally use chopped turkey! That would be delicious. It is freezing here this morning -- such is life! Trying to stay good on plan -- holiday party is on Friday and I want that dress to look okay. I found a low carb stuffing mix that you actually make as a bread first (make and bake a wheat-free bread) and then you crumble that, add celery/onion sautéed in butter, chicken broth, poultry spices, sausage if you wish. They also recommend adding other lower carb goodies like macadamia nuts, chestnuts and dried cranberries. I will probably do a plainer stuffing because that is what Tony likes. I won't make it until the last week of December, which I have off. Thinking of making a roast chicken or a Chicken Kiev (without the breading of course), the stuffing, fresh green beans and roasted brussel sprouts as a treat for Tony. The stuffing only has 6 carbs per serving.

I also found a low carb yellow cake mix and chocolate frosting mix -- don't know if I will experiment with that in December or wait until Tony's birthday on February. I will probably wait. I don't have a super pronounced sweet tooth so I have not experimented as much with low carb sweets. Tony does though so we shall see.

I do have a sweet tooth. Where did you find that cake and frosting lol. I plan on making those cupcakes I featured a while ago for Christmas.

Susan, you should -- they have lots of great new items. You guys, it is a blizzard here! Just freezing cold, windy, tons of snow -- too early in the season for this. Driving home was treacherous and I did not feel like cooking so I ordered delivery from our local Greek place. We got chicken shish kebobs and greek salads. Tony still isn't home yet and I am worried. I am sure he is fine but this weather is so troublesome.

MJ -- thank you. He eventually got home at 8:30 PM and had a 15 hour day. Jeez. But at least he got home safely. Susan, nope. I have a client meeting at 10:00 AM in-person so off to work I go. I only have four more days left of work -- this week and next Monday -- before going on holiday break so I have to stop complaining!

Some of my colleague were stuck in snow and traffic for 4-5 hours last night. It just gets crazy around here. Fortunately, the news is forecasting higher temperatures later this week -- in the 50s -- so hopefully the snow will melt. Have a great day everyone!

Dani, please send some of your gorgeous Arizona weather our way! We love to experiment with low carb dishes -- it helps keep us on track. But at least two or three times a week, we try to eat ultra low carb to help us get the pounds off. Like tonight for example, we are having grilled chicken (marinated in olive oil, garlic, lemon and spices) and a big green salad along with fresh avocado slices. Nothing fancy but it still tastes good.

Are you guys ready for Christmas? My shopping is done and the tree/décor are up. I am just getting ready for December 28 -- we are having 11 people over for lunch that day -- Tony's family. I think I told you guys that Tony's brother, sister in law and two adorable daughters (ages 4 and 7) could not drive to Maine for the holiday and Tony's dad was depressed (he's already been in deep depression since Tony's mom died in May 2011). Anyhoo, we are only a 2 1/2 hour drive from CT where they live so we got them a one night stay in a luxury suite at this waterfront hotel in Boston (my company gets a discount there so it didn't hit our pocketbooks too badly -- plus it was our Xmas gift to them). This is so Tony's dad can see them. We will drive Tony's dad from his home in Maine to our place in Boston (we are going up there on Christmas Eve and coming back that Friday) and he will stay with us. At the same time, Tony's sister is picking up her husband and his father at the Boston airport as they are coming in from London (his mom passed away so he's in London now for the service and will stay for Christmas with his dad and then fly to Boston with his dad on 12/27.)

So, the plan is to have everyone meet up at our house on Saturday, Dec. 28 so Tony's dad, sister and us can give our gifts to the little girls and exchange gifts with his brother/sister in law. So I was stressing about what to have for food for lunch. Tony's sister in law eats super clean/low carb but his British brother in law and his Dad are strictly meat-and-potatoes, finicky eater type people and so is his sister's teenage son who will be there too. The son also eats like a horse because he is an athlete. Tony and his Dad will eat anything but both love Italian.

So here is my plan: making a giant fresh green salad with grilled chicken and grilled shrimp on the side as well as a big pan of baked ziti (usually a crowd pleaser) and assorted sandwiches on really good Italian bread from a local bakery that his dad will love (his dad likes a good Italian sandwich with all the fixings - LOL). I will make grilled cheese for the little girls as well as homemade cookies. That way, everyone can eat clean or hearty or like kids -- whatever they wish. I also made sure to stock up on English Breakfast tea -- those Brits seem to drink tea 24/7. I also bought sugar (gross!) because Tony's brother-in-law must have sugar in his tea.

I know I over-think this stuff being a Virgo but I think you guys are like me in this respect - or else you wouldn't come to my journal and you would find me incredibly insufferable. LOL! But when I have people over to my house, I like everything to be perfect. I want the place to be sparkling clean with good smelling candles burning and plenty of good food and drink. I drive Tony crazy of course but then he is usually pleased with the outcome. Men just don't think like we do!

I am so not ready for Christmas! My older son in college had a crisis we helped him out with, financially to the tune of $2300! So that kept me from doing serious shopping damage, and I will be doing the bulk of it this week, with all of the other frantic, last minute shoppers! Sigh. Kids! Lol! I'm thankful we have good jobs and could help.

Your holiday menu sounds fabulous! It sounds like you have such a fun holiday planned out! We're having my mother-in-law and maybe my mom over for Christmas Eve and Christmas morning.... and going to my family's sometime during that weekend. My MIL was saying how she missed ham soup, so I'm going to make a big pot of that. I can't do ham, but can do beans and veggies and broth by next week =) Our two older kids can't make it this year, but we'll fix that in the new year! I have a 13 year old at home yet. I'm looking forward to a cozy, laid-back Christmas!

Alisa, that is great that you helped your son -- that's the most important thing -- and he's fortunate to have such wonderful parents. A nice ham soup sounds so comforting and delicious too -- yum. It will feel good for you, too, to eat some solid food. How do you make that ham soup? I'd love to try it!

I hear you about the cozy, laid-back Christmas -- the best kind of holiday in my book!

Have you ladies ever tried Guy's BBQ sauce? It is low carb -- only 1 carb for 2 heaping tablespoons -- and it is delicious. You can buy it here on Netrition. I had it last night as a dipping sauce for the grilled chicken and it tasted really good. Mind you, I am not a BBQ connoisseur -- I'm just a dumb gal from the northeast mind you. But this sugar-free BBQ sauce was flavorful and tangy.

I love Guys bbq sauce!!! I buy it all the time. The only sauce I buy anymore Sorry I haven't been on here lately, life has been so crazy. I am having people over for Christmas day, and I haven't even planned out the menu yet. Normally I make my famous cheesy potato soup in the crock pot and everybody has appetizers, soup, homemade bread and COOKIES. Not quite this year. I might do a more formal dinner. Maybe a surf and turf? I have no idea... Your brunch sounds great. And, while it is a lot of food, really sounds simple enough that it won't overwhelm you. I am sure your house is always pretty perfect by the time guests arrive My aunt is the same way, and her house always looks stunning. Everything is always thought of. I am a little bit of a spaz in that department. Always seem to be running out at the last minute for something lol.

Lisa, that is awesome that you are having people over for Christmas Day. I love the Surf and Turf idea. Last week, I posted some great recipes from the New York Times for rib roasts, crown roast of pork, turkey, ham, etc. You could do one of those meat dishes and maybe have grilled shrimp or shrimp scampi (shrimp sautéed in butter, garlic, olive oil, white wine and lemon -- so good and so low carb/low calorie). There are lots of good sides that are low carb and total crowd pleasers too like creamed spinach, roasted vegetables, turnip gratin (which is delicious), winter salad with dried cranberries and goat cheese, etc. I am sure you will pull something together that is GREAT.

Tonight is the holiday party. I put self tanner on my legs last night -- just a light coat so I don't look orange. I don't like to wear stockings -- I like a bare leg with a dress but I have to make sure my legs look good (smooth, shiny with a tiny bit of color). I have been eating carefully these past few days -- mostly grilled chicken and salad -- so I don't look like a whale in my dress. Lets hope it works out!

Thanks Julia -- you are the best. I will let you know how it goes. Our party is at this very cool place in downtown Boston called The Beehive. Great interior, live jazz music, really good Bistro-type food -- so I hope it will be fun. The bartenders mix very strong drinks so I need to be careful -- can only have one or two cocktails. I never over indulge at a work party (or even in public) but I find when you eat low carb, you have to be really careful with the alcohol.
