Oh my, those nuts sound heavenly! Especially since it's a fasting day!

So, you lived in Miami... it would sure be hard to leave that climate - well, at least in the months you mention. Florida in the summer would not be to my liking at all!!

Last night when I was coming home from dinner with friends, the thermometer on my car registered -12 degrees.. Yes, minus.. My motto this week is: "kill me now!".

I have a weekend in Chicago planned with my old friends (I'm from there originally) and it's supposed to snow on Saturday during my drive.. Grrr!! Wish it was July!!

Oh, forgot to say... Vegas has been in the 30's as a high during this cold snap! That is very unusual for them!! Places with palm trees should not have that kind of weather!!

Judy -- LOL -- "kill me now" -- that was funny. Have FUN in Chicago! What a great city. Summers in Miami really were not that bad. Yes it did get hot and there was a daily thunderstorm at 3:00-3:30 PM but it really wasn't as bad as people think.

The nuts are really good and low carb!

i'm making some now..... ( because I couldn't wait ) lol ! A different recipe with butter and then after baking 25 minutes, add salt and cayenne. I added a few drops of Ez Sweetz and plan to add just a little cinnamon at the end too... hope they turn out ok. :0

I'll have fun in Chgo, but will hang around in the outskirts.. no downtown driving for this country girl.. Yep, I'll take my country living now.. Had many years of driving downtown several times a week - and even lived down there - near Michigan Avenue/Water Tower Place for a couple of years with DH#1. It's a shame we couldn't afford it.. we could barely pay our enormous rent and had no money to enjoy the area... stupid kids..

I wish I was in Miami right now... We were in Pensacola, Florida at the end of July for my Father-in-law's funeral.. It was 93 with 99% humidity.. and the funeral was outside at the Naval Base. I thought I was going to die!
I don't like it too hot or too cold.. I like it just right! Except when i am in a cool swimming pool.. Then I don't care..

Judy, I agree with you -- I don't like it too hot or too cold. I like mild temperatures in the 65-72 range. I love Fall especially!

Tony has the day off today so he is making a nice roast pork. I think we are going to have low carb Cuban sandwiches -- roast pork, thin sliced ham, swiss cheese, mustard and pickles grilled on low carb bread. A really good Cuban sandwich is delicious -- I got addicted to them when I was in Miami!

Hey Gail! We had pork roast and veggies the past too nights. Your Cuban Sandwich sounds great! I'll have to remember to put some together next time I do a roast.

Tonight will be chicken tenderloins sauted with butter, onion, mushrooms,cream cheese and chopped spinach.

Busy day today -- we crammed a bunch of stuff in before the snow rolled in! I got up early, cleaned the house, exercised and then did shopping and errands before my manicure. When I was done, I got home about 1:00 PM or so -- Tony was already home from work. He felt like Chinese so I called our favorite Chinese place and requested no sugar/no flour dishes. We got Peking duck (no wraps), Szechuan chicken, spicy green beans and chicken with cashew nuts -- all very good.

Tomorrow I think we will do grilled steak and eggplant gratin. Gosh, it is cold here and there is snow everywhere. The snow is pretty but the cold is biting.

Susan, we got about 3-4 inches of snow but we are expecting rain later today to wash it away. Unfortunately, it is going to get super cold this afternoon so we will see a lot of ice. I am watching the ocean from my living room window now and the waves are big and crazy -- very windy out. But I guess it could have been a lot worse.

I love cats! And I think it is adorable that kitty wants to snuggle! I am all done with Christmas shopping but need to clean some more today. We are going to make grilled steak sandwiches on low carb rolls and eggplant gratin today -- something nice and cozy for such a crummy day. Hope everyone has a great Sunday! xo xo xo

Jes, it is GREAT to see you! We have missed you and I hope you are well. Eggplant Gratin is a recipe from the Barefoot Contessa. I will post her full recipe but essentially it is a low carb eggplant parm served as a side dish.

You simply slice up some eggplant and sauté it lightly in olive oil. Set aside. Layer the browned eggplant with sugar free marinara sauce, ricotta cheese mixture (ricotta, egg, half & half, salt & pepper) and grated romano or parmesan cheese. Bake for a half hour in a 350 oven. It is delicious and very filling -- and most importantly, satisfies my craving for rich Italian food. I am about to go make it now but will post the real recipe shortly.

How are you? Did you get tons of snow? We got about four inches but it is currently being washed away by the rain. But man is it getting cold again...

Hey! That's probably more cheese than I can personally manage. Sounds amazing though!

We're good here. The snow was 5-6 inches last night but is already melting. Weird that it's melting bc it feels so cold out!

Hey hun, I am home from NYC, it was a mess with the snowstorm!!! Still crowded it was so hard to walk on the icy sidewalks! I am a country girl at heart, the city is less and less appealing to me as I get older! LOL And then the train was late, came home to iced in car! Ughgh But we are home and now I can focus on the last few things I have to do before Christmas. Tony is out of town for a few days for work and Robert has his concert tomorrow night! Busy Busy!!!

Susan, we love our view of the Atlantic -- love hearing the waves and smelling the ocean too. It was one of the reasons we opted for a condo rather than a house (although I miss having the space of a nice house, I really do. But life is often about compromise...)

Amber, glad you are back from New York safe and sound! I hear you about being a country mouse. I loved working in NYC but did not know if I could handle living there full time -- the crowds, the noise would get to me. Still, it really is the most exciting city in the world. I hope you had fun with your mom and Bobby. I think this week will go by fast too. Do you get any time off for the holidays?

Well I am about to get ready for work and brave the cold. I am a little nervous about driving on icy roads but such is life. I wish I could stay home and just look at my Christmas tree all day while drinking coffee -- LOL! Have a good Monday everyone!

I do have a non-scale victory that I would like to share. Right now, I am wearing a pair of Medium pants! These are pull-on, skinny leg black pants with a little give in the waistband that I bought years ago. According to the Talbots size chart, the Medium pant is for size 10-12 (waist from 30 inches to 31 1/2 inches and hips from 40 to 41 1/2 inches). The dress I am wearing for my holiday party is a designer (St. John) size 10. So while I am not an official size 10 yet (both pants and the dress have a little stretch and give so I don't want to delude myself -- LOL), I think I am losing weight.

I need to buy a tape measurer to take my measurements. While I am pleased with the progress, I still have a big stomach and plenty of back fat - boo! But Rome wasn't built in a day and Gail isn't going to get thin in just a couple of months. I am kind the type of apple shape that turns into an hourglass when I am at the right weight for my height. So it will take a good bit of time for me to lose all of my upper body weight. Even when I was thin, I remember batting this body shape to some degree. I remember buying a nice pantsuit from BCGG Max Azaria and I had to wear a size 2 pant and a size 6 jacket! (That is NOT a humblebrag by the way...)

I just hope I can keep on losing and not give up! Thank you for all of you wonderful ladies who inspire and support me in every way. Please know how much I appreciate your sage advice, good humor and friendship! xo xo xo

Woohoo! Congrats on the mediums and almost 10s, Gail! That's great!!

I measure my waist, hips, and neck because that's all the fields ************ has. So I need to do better on measuring too. It's great when you're not losing pounds and still see those inches melting away!

I had to wind up uploading to photobucket and posting links. Can't figure out the picture thing on here either!

The recipes are great! Filing them away to try later. =)

Those are the things that keep us going ! Reading about others victories show me what real commitment can do. I know how badly I was feeling after TG....my bra was killing me. And I am NOT going to buy another size up! Feeling much more comfy now that I'm done a few pounds.

Alisa and Susan -- thanks so much! Alisa, you must look amazing! You have lost so much weight! I will try Photobucket too - that is a good idea. Susan, I hate the feeling of a tight bra. I tend to gain weight in my bust and upper back and that is the last place where I lose it. So it is great when you get smaller in that area!

We had crustless low carb chicken pot pie tonight -- so good and filling on a cold night. You just cook up boneless/skinless chicken breast (season with salt & pepper, bake for 25 minutes at 375 and chop up). Sautee chopped onion, celery and a bit of carrot in a few tablespoons of butter for 10 minutes. Add a tablespoon of low carb cornstarch (or even regular cornstarch) and make a roux by cooking for about 1-2 minutes. Pour in 2 and a half cups of chicken broth or stock and 1/2 cup of heavy cream. Cook on medium low heat for ten minutes. Add cooked chicken, fresh tarragon, fresh thyme (you don't have to use fresh but it tastes better), salt, pepper, 1/2 cup of sherry and some peas if you like (too high carb for me I find but Tony likes them -- you can use frozen). Stir frequently and then it should be done!

Everything sounds so good for you! Love the NSV - what a great feeling to pull on a smaller size! And I miss chicken pot pie and your crustless version sounds so good! Have you tried the low-carb "corn" bread? I wonder if they would taste good together?
