Gail that sounds yummy, Eagles lost, I am ticked!!! LOL

Made the cauliflower so good even the kids liked it!

Sounds like a fun day I did a lot of yard work it was so cold this morning and windy but then the sun came out, so we got a lot of things planted, I planted some of my herbs i had in pots that are perennials. We have a grand plan to extend the one deck and make a built in fire pit and more seating area then do organic raised garden beds on the sides, so I am not planting to much now, everything is the beds now is boring and thorny! I hate thorny bushes!!

Dani, it was a tough loss against the Jets, our dreaded rivals. Oh well. The Red Sox are in the World Series so at least the office won't feel like a morgue tomorrow. Glad your 49ers won -- Colin Kapernick is so handsome. We are watching the Bronco/Colt game too -- always the same here every Sunday -- LOL!

Amber, sounds like you made great progress in your yard. That is good exercise too! I really want to try that cauliflower recipe with the cashew butter -- it sounds delicious.

Laura, the chicken spinach casserole is so easy to make and so good. It really does take like a luscious cheesy spinach dip but it is totally low carb and on plan!

Lisa, the chicken spinach casserole is so good and so easy to make! Amber, have fun at the life insurance conference. I think it will be a great experience!

I continue to keep on trucking with low carb. We had turkey burgers and salad last night for dinner. I am up early, nursing a coffee before I get on the eliptical. Weight loss is never easy, is it guys? We just have to keep on going and know that every day we stay on plan and move our bodies is money in the bank!

Laura, I don't weigh often -- only about twice per month. The numbers on the scale make me too depressed but I test for Ketosis at least twice a day and I have been steadily in Ketosis since August 19, when I officially got back on track with low carb.

Since then I have lost 22 pounds, putting me at 188. Ugh! But at least the scale is going in the right direction. I need to lose 50+ more but I am determined this time.

Trish and Susan, I love both of you and appreciate your support and wisdom more than you will ever know. The WOE can be challenging ladies -- we all know that -- but there is a pot of gold at the end of the rainbow -- plus all the good things that happen along he journey. So lets stick together and make magic happen for all of us!

I know that sounds corny but we can do it! We can get to and maintain our respective goal weights. We all have the intelligence, strength, discipline and attitude to make this happen and we will. Susan, you got to your goal weight and looked and felt fantastic, better than a Chicos model. Trish, you lost over 100 pounds and gained your sanity. If that does not say SUCCESS, then I don't know what does. Lets keep it going!

Thanks MJ and Laura! I so appreciate the support and knowledge I get from this board -- it makes such a big difference! Last night, we made a broccoli, bacon and onion crustless quiche for dinner. We had that with a green salad and it was great.

One of the best things about low carb eating is that it you don't have to eat alot of food to feel full. So you end up consuming less calories, which is GREAT in my book.

I hope everyone has a fabulous day today. Lets enjoy Fall while we still can!

Gail 22 pounds in 2 months is a lot of weight! You should be really proud! I am with you on the weighing though I always weighed everyday and it would drive me bonkers, I am now sticking to once a week, I did that in the beginning, I never weighed everyday then I got on a post that did and it has messed with my head ever since! So no more for me!

Amber, you too! How is the conference going? You are doing so GREAT staying on plan. I know it is tough. I had a business trip to NYC in September and there were temptations everywhere but you can do this. You have a great plan.

Susan, once your husband feels better, you should go out for a nice dinner and wear some gorgeous heels! You've been through alot lately so you deserve a night out!

Laura, I totally rely on the sticks because I hate weighing myself. Plus, I test twice a day and always feel better when I see the sticks turn dark pink or purple -- it makes me feel like I am on the right track and losing fat.

On Monday, it will be 10 weeks for me on low carb. It has gone by really fast! I am not worried about Thanksgiving -- I love turkey and it is low carb. No way am I going to let stuffing, potatoes and pie push me around!

We are having Thanksgiving at my house this year and every family is supposed to bring one dish. I will be cleaning out my cupboards of all non-lc foods and making special LC foods for me and whoever else would like to try them. It will be a challenge for me because I so love pecan and sweet potato pie, both of which I know I can't have.

Gail, I am specifically going to buy almond flour so I can make that bread for stuffing thanksgiving day. That way if I decide to have some, I know I will be safe I am also making pumpkin bake! I am so in love with that stuff. I have made it twice already Turkey day is at my house this year too. I'm good with it. Potatoes were never a fave of mine, so that won't be an issue. I told the kids that I am NOT making pumpkin rolls this year, I will buy them. That way I won't eat them. They aren't happy about it, but they understand.

Mjgh, that is an excellent strategy and that way you can better control your food intake! You know what you can do in place of pecan pie? You can buy pecans, coat them in melted butter, brown Splenda (Splenda makes a brown sugar substitute you can buy on Netrition), cinnamon and nutmeg and then bake them in a hot oven for a few minutes. This makes delicious sweet/spicy pecans that may make your craving go away!

Lisa, I like your approach too! Isn't Pumpkin Bake great? I got the recipe from Trish the Dish, who I think got it from the fabulous Linda Sue. I love how your sons are such good sports -- what nice boys you are raising.

I am packing it up at work now, ready to go home. Tony is making dinner -- I gave him the recipe for chicken spinach casserole to make tonight. Can't wait to eat it in all of its gooey awesomeness! Hope you guys have a great night! xo xo xo

Gail, the insurance seminar was long but I learned a lot of things! I was always so hesitant to ask people about life insurance but now I really see the disservice I am doing by not asking, especially for people like your Tony who get diagnosed with a serious problem then cant be underwritten, my cousin is going through the same now with her heart condition, it is one of those things people do not see the need for until they are too old, come down with an illness, or whatever, so it was good!

I was up 3 pounds and I was so careful freaking restaurant food I guess, I was really proud of myself all the crap I passed up but hopefully it will come off again, made a chicken salad with blue cheese last night and one for lunch today!

Hope you have a fun weekend planned!

Amber, I am glad the conference was a success! Isn't it interesting and fun to learn new things too? Especially since the things you are learning are going to help other people -- that's awesome. Honey, don't worry about those 3 pounds -- it is probably just water weight or maybe TOM is lurking and about to happen. You did not eat very much this past week so I really don't think you could have gained 3 pounds.

Mjgh, I am not struggling but get worried that I won't have the stamina to stay the full course on plan. I have a history to staying low carb for 10 weeks only to blow it and go off plan and gain the weight back. So I need extra support sometimes to stay the course. I am glad I aske the LC Friends board for advice because there are folks here who have really done it -- lost alot of weight, kept it off and made low carb their lifestyle. I really want to get to that point and I was worried that I would not.

Yes, I do have a good weekend planned. Tonight we are going to chill -- make a low carb dinner -- chicken cordon bleu and catch a movie. We might see the new Woody Allen movie "Blue Jasmine." Tomorrow, Tony's friend is coming to stay with us so I suggested that he have a guys night out while I have a girls night out. So me and my girlfriends are going to hit this fun restaurant in Boston called Towne. They are both single and this place is really fun, plus they have great food. I have already picked out what I am going to eat -- filet mignon and asparagus!

Gail - I also saw your questions/concerns - you are awesome and have made great progress since August! Everyone gets impatient and feels like throwing in the towel when things slow down. You are always so positive with all of us on LCF that need a boost to keep on trying to make ourselves happy and healthy with our efforts and I "thank you" for that. You will get there and so will I if we focus on the good and stay positive! For me....I know deep down that I need to count calories and carbs to lose, but alot of times I stop doing so and the weight comes back. It's just a roller-coaster ride that I continue to ride.

Susan, I totally know how you feel -- and I, too, need to count calories and carbs both. Today is a sunny but colder day here in Boston -- around 50-55 degrees. A little chilly! I have to get my hair cut and clean the house before out house guest gets here. I am looking forward to a dinner out with my girlfriends and I WILL stay on plan. Both of them are big foodies (and both are thin) so they can eat whatever they want, including dessert. I will be fine with a filet and green vegetable -- maybe I will get a nice glass of red wine or a sugar-free cocktail as a little treat. Wish me luck!
