I am still in New York for work -- I leave this afternoon to go home. I've been staying on plan so far. Last night we went to a fancy french restaurant called Boite (an Alain Ducasse place) and I stuck to roast chicken and some red wine. I avoided the delicious looking bread at all costs! I know this plan works but sometimes it is hard. I have to say that I feel better and sleep better when I stick to low carb. Just have to keep that in mind...

Thanks Laura! Shelby is looking adorable as always! I did have a safe trip home yesterday. I just wasn't hungry yesteday when I was in New York (low carb dieting takes away my hunger for hours) so when I got home at 3:30 PM, I had an empty stomach except for one cup of coffee and water. Tony made dinner earlier and we had grilled burgers, salad with home-grown tomatoes and one ear of fresh native corn. I know -- I should NOT have eaten the corn but it didn't take me out of ketosis! I tested this morning and the strips turned pink. Mind you, the strips had been purple in the days before but ketosis is like being pregnant -- you are either in ketosis or not.

I slept beautifully last night and woke up to a gorgeous day here -- very sunny, mild and dry -- not too hot at all with a lovely breeze. We are going to out for a long walk along the ocean. I love fall and love the cooler weather -- unlike so many people. So I welcome the journey to September -- it must be because I'm a Virgo or a football fan or both!

Hope everyone has a great day today. Sometimes it is the simple things that can make you happy -- a nice day, a good cup of coffee, good company, the smile of a loved one, a simple ear of corn that doesn't knock you out of ketosis. Don't worry - I won't be eating anymore corn. Back to the under 20 grams of carbs -- I do best that way.

You too Laura! We skipped lunch and ate an early dinner around four. We grilled steak and turkey tips and had that with a peppery argula salad as well as a dish of home grown tomatoes, basil and mozzerella. I have a low carb cobbler in the oven and it will be interesting to see how it tastes. Here is the recipe:

1 cup of Carb Quick
1 cup of granulated Splenda
1/2 stick of butter, melted
1 TBS of vanilla
1 and 1/4 cup of heavy cream

Preheat oven to 350 degrees. Mix ingridients listed above and add the low carb fruit of your choice (I used blueberries) pour into a baking dish greased with butter or Pam. You can also add a dash of cinnamon and nutmeg to the batter if you wish. Bake for 35-45 minutes. When done, top with low carb/no-sugar whipped cream.

Okay, I made the above mentioned low-carb cobbler and it was really good! The texture of the cobbler isn't quite the same as a regular cobbler (with flour, brown sugar, et al) but the taste is great and it only has 6 carbs per serving. I had a small serving and was still in ketosis this morning so I consider this a win/win all around! Tony loved it and he has a sweet tooth so I had to think of something to make beyond he usual low-carb parfait (which is really just fresh blueberries or raspberries with whipped cream).

I feel so much better on low carb -- truly I sleep better and feel more energetic and alert. I really need to stay on it this time. I have a BIG birthday coming up next Tuesday, Sept. 3 so I hope I can stay on this regime and really get the weight off once and for all.

We are in the process of making a glorious low carb feast! Grilled marinated steak tips, grilled lobster tails, argula salad, and grilled veggies (zucchini, onion, eggplant, tomato, peppers) served with champagne. Yum!

Julia, thanks for asking! He is doing much better. He can now go on short daily walks as well as swim in the pool to build his strength up. We think he can go back to work next month too so we are overjoyed and grateful. How is your Dad? How is he holding up?

I am eager to start on low carb this week. Lets hope I have the staying power to stick to it. I really want to make it work this time!

He seems to be doing really well. The doc is very pleased, and now that football season is here life seems back to normal. Great news about tony - I now you are so happy for normal, too!

Thinking of you Gail...so glad to hear Tony is doing good. You've definitely been on a journey and such a strong warrior. I know you can do this! I've found a miracle in the 5:2/fast plan - low carb. There's a thread in Other Plans, we'd love you to join in with us. It's eating 5 days normal and fasting 2 nonconsecutive 500 calories days, each week. Lots of info on Google. Anyhoo, good luck!

Julia -- thank you for your words of encouragement! Scalestepper!! I am so happy to see you, Scalestepper! I have been reading alot about the 5:2 fast plan -- everyone raves about it! People do super well on it too. I am going to check out your thread -- thank you for inviting me. It sounds like a great option.

Ladies, I just got back from a business lunch - this is a great seafood place next door to my office, right on the water called Legal Harborside. Of course, everyone I work with (including the new client we met) is young, skinny and gorgeous -- I love them anyway though (LOL!). Of course, they all ordered divine looking lunches -- fat lobster rolls with piping hot fries, seared tuna on a bed of Asian noodles, fish tacos with tortilla chips -- you get my drift. I stayed on plan with an ultra-healthy, clean-tasting swordfish salad.

You have to be a warrior to stay on this diet!

Cfine, thanks for the great advice and the lovely compliment -- you made my day! As an overweight, middle-aged woman, I don't get many compliments on my looks (althought Tony says nice things about how I look all the time -- he is good about that).

Staying on plan so far. Last night we had grilled chicken fajitas with a homemade low carb salsa (tomatoes, a little onion, cilantro -- very clean tasting). We had only one low carb tortilla each (11 carbs per tortilla). It worked out because I kept carbs low all day.

Keeping my fingers crossed to stay on plan all week and then some. Thanks for the encouraging words of advice all! Much appreciated!

Good morning everyone!
Last night, we made a really good low-carb chicken stir fry and I wanted to share the recipe:
Ingridients:
Boneless, skinless chicken cut into strips
Bunch of broccoli
Two cloves of garlic
3 TBS fresh ginger
2 scallions, chopped
2TBS vegetable oil
1 TSP sesame oil
2 TBS rice vinegar
2 TBS oyster sauce
2 TBS soy sauce
1 TBS cornstarch (the only carby thing in this -- you can reduce the amount of use xanthan gum instead. You need it to thicken the sauce).
Whisk soy sauce, rice vinegar, sesame oil, corn starch and oyster sauce and set aside. Put vegetable oil in a wok over high heat and cook chicken for 10 minutes. Add ginger, garlic, scallions and cut up broccoli and cook for another three minutes or until broccoli turns bright green. Add 1/4 cup of water and then add the soy sauce mixture, cook for another minute until sauce thickens.

It is so good that I did not even crave rice with it -- and I am a big rice craver, LOL! I woke up and was still in ketosis so the cornstarch really did not effect me.

That does sound good. I'm thinking about making "crack slaw" for dinner this weekend - which also has a nice asian-y taste too it (sesame oil!) but doesn't make me want rice.

So good and so easy - a one dish meal!

1 lb ground beef
salt and pepper
2 tablespoons toasted sesame oil
2 garlic cloves, minced
3 green onions, sliced
14 ounces coleslaw mix (if you don't want the carrots use the angel hair cole slaw or just shred up a head of cabbage)
2 tablespoons low sodium soy sauce
1/2 teaspoon sriracha sauce (this will be pretty mild so add to taste or you can use pepper flakes to taste)
1 (1 g) Splenda quick pack (I leave this out)
1/2 teaspoon ginger paste (you could also use 1/2 teaspoon fresh minced ginger or ground ginger)
1 teaspoon white vinegar (any kind really)
sriracha sauce (to garnish)
Directions:

Brown ground beef and season with salt and pepper to taste.

Remove from pan and set aside.

Heat up sesame oil and sauté garlic, onions, and slaw in sesame oil until cabbage cooked to desired tenderness.

Stir in the soy sauce, Sriracha sauce, Splenda, ginger and vinegar.

Add back in hamburger. Mix well and serve!

Serve with additional Sriracha sauce on the side for people who want to add spice.

OMG Julia -- Tony will LOVE this. He loves spicy or flavorful ground beef dishes like this so THANK YOU for posting the recipe!

Hey, I have some good news today -- I got promoted at work! My wonderful friend (who is also my boss/owner of the company) took me out for drinks after work to celebrate. A bunch of friends and colleagues joined us for drinks a while later -- we were sitting outside on a high-level roofdeck overlooking Boston Harbor. It was really lovely. I got home and Tony had prepared on on-plan meal of grilled chicked and grilled vegetables (tomato, red onion, red & yellow pepper, asparagus). Nice way to start the long weekend!

Thank you Julia and Laura! I feel like I have an extra boost of confidence and one that I hope will keep me focused on this plan. So far, so good. Last night, we ate grilled chicken and veggies as I mentioned earlier. I did have two cocktails to celebrate but they did not knock me out of ketosis. I had vodka gimlets made with fresh lime juice and I usually do fine with those.

As for eating today, I am probably going to do this:
Breakfast: coffee with HWC, splenda
Lunch: grilled swordfish salad
Dinner: eggs and sausage

Laura, hope you have a GREAT vacation! We will be thinking of you. Tony is outside now, grilling burgers for dinner. We have having them with Greek salad and grilled onions/peppers. It is cloudy and muggy here but I am still enjoying the weekend. Hope you are too. Labor Day weekend is always lovely and bittersweet.
