Make a delicious low carb Szechan chicken stirfry last night because Tony was craving chinese -- just boneless chicken breast, peanuts, celery, chinese 5 spices, rice wine, soy sauce, brown Sugar Twin (low carb), chili sauce -- very good. Still I woke up really thirsty so I need to drink more water. Hope everyone has a great day today.

We had a pretty chill day today with Tony still recuperating. I grilled Italian sausages and served those with sauteed onions and peppers on low carb rolls along wtih steamed broccoli and salad. We are relaxing now watching a documentary on Simon & Garfunkel. I treated myself to a low carb cocktail -- a cosmo with Grey Goose, low-carb cranberry juice and a squirt of fresh lemon. Life is good!

Thanks Scalestepper! We just ate grilled chicken with an asian ginger marinade, sauteed zucchini and steamed broccoli. I am in the process of fixing Tony a dessert -- a parfait with fresh blueberries, strawberries and blackberries with homemade whipped cream. I hope things are going well with you Scalestepper! Nice to enjoy a Sunday!

Jes, Frankie, Laura and Susan -- so nice to see you all again! Happy July 1st to everyone. I like the first day of every month -- always inspires me to stay on the diet. I found a really great recipe for roasted cauliflower that I wanted to share. Preheat the oven to 400 degrees. Cut up a head of cauliflower into florets. Place in a bowl and coat with a few tablespoons of extra virgin olive oil. Sprinkle a few tablespoons of fresh romano or parmesan cheese and sprinkle with salt and pepper. Roast for 20-25 minutes at 400 degrees. This tastes fabulous and is very low in carbs and calories!

I had a good food day yesterday and I hope to have a good one today. Here is what it looked like:

Breakfast: coffee with HWC
Lunch: grilled chicken and salad greens with chopped asparagus, olives and cherry tomatoes, balsamic vinaigrette and diet coke
Dinner: three scrambled eggs, two slices of bacon, one piece of low carb toast (the toast was only 8 carbs), glass of white wine

I feel really good today. I hope to stay on this path!

Slight change in plans with my food day yesterday but it all worked out. We got to leave work early yesterday at 2:00 PM so I skipped breakfast and lunch (had coffee with HWC for breakfast) to grill outdoors with Tony.

Tony is now able to take short walks and go outside which is great! We grilled burgers and hot dogs outside and I made Bobby Flay's coleslaw recipe which is low carb and delicious (I used the bagged broccoli slaw and add mayo, sour cream, white vinegar, Splenda, Colemans mustard powder, celery salt, celery seed, salt & pepper). For dessert, we had berries and whipped cream -- all very good and satisfying!

We are going to a BBQ this afternoon so I am bringing shrimp cocktail, veggies & herb dip, spiced nuts and a lowcarb limeaid punch. I won't eat much as we are going home later for dinner. We live on the water in Boston and have a great view of the fireworks from our terrace so that is where we want to be. I have chicken breasts mariating in low carb teriyaki sauce that we will grill later. I am going to make Barefoot Contessa's low carb Eggplant Gratin -- it is so good and hits the spot when you are craving rich Italian flavors. Here is the recipe below:

Slice eggplant in rounds and fry in olive oil in a large saute pan for about five minutes (or until brown). When they have cooled down a bit, layer some of the slices on the botton of a large Pyrex dish or pan. Layer low-carb marinara sauce on top and then layer a Ricotta cheese mixture (1/2 cup of ricotta, one large egg, 1/4 cup half & half) on top that that. Sprinkle romano or parmesean cheese in between layers. When you are down, sprinkle more cheese on top and bake for 20-25 minutes at 400 degrees.

Laura, I am so sorry you are working today. I hope you get to go home and relax with your wonderful husband very soon. It is really HOT here -- already like 97 degrees -- so we left the BBQ early! We did not eat much due to the heat so we are going to start cooking dinner right away. Actually, I have the eggplant in the oven already and then will go outside to grill the chicken in a few minutes.

I just made an icy cold vodka gimlet and boy was it good -- and low carb. I kept the martini glass in the freezer. In a cocktail shaker, I mixed one ounce of low-carb simple syrup (water with Splenda boiled on a hot stove until the Splenda disappers and then kept in the fridge), one ounce of fresh lime juice and one ounce of Ketel One vodka. Shake in the cocktail shaker and serve in a frozen glass. Really good.

We are now watching "The Queen of Versailles" movie which is cracking me up. I first saw part of this on the Bravo Network -- very interesting look at how some people live.

We just had our big meal for lunch -- will most likely skip dinner. We hung out by the water and grilled burgers and hot dogs. Very satisfying and now we are back inside, watching movies. It is so HOT out and I am terrifed of sun damage/skin cancer. That is why God made self-tanner, you know? Wishing everyone a great day!

Ugh -- I cheated last night. I fixed Tony a small ice cream sundae and I had two bites of it. Good Lord it was good and I am not really a "sweets" person, I am more of a salt person. Like I can binge on chips and Mexican food and not necessarily candy. Arggh!

Back to the drawing board. I have to figure out what we are going to eat today. Today is a busy day -- need to get on the elliptical for an hour as it is too hot to do any exercise outside. Then I have to get a pedicure and my nails done as well as catch up on some work. Don't really feel like cooking -- I've been cooking alot lately. Thinking of going to this seafood place and picking up fresh lobsters for us.

We did! We made lobster rolls using low-carb buns and had that with salad! So good! How was your Saturday, Joy? I hope it was good. It is so HOT here in Boston -- it is already 93 degrees and it is not even 10:30 AM yet. We just got back from the supermarket -- going to make a chicken broccoli stirfry for later. I wish I could exercise outside but it is do damn hot. Instead I will do an hour on the elliptical and watch a re-run of Mad Men or The Real Housewives!

Yum those lobster rolls sound great! We've had a weird heat wave this last week so I definitely understand not wanting to exercise outside! My treadmill isn't getting much use either because we don't have A/C!

Oh, and that low carb vodka gimlet sounds delish! I will definitely be trying it!

Low carb gimlets are great. The secret is sticking the vodka in the freezer so it gets really cold. You also want to put your glass in there. Making low carb simple syrup is a breeze -- just add a few packets of Splenda to a cup of boiling water. When the Splenda dissolves, take it off the burner and let it cool (I usually pour it in a glass and stick it in the fridge). Then squeeze the juice of two fresh limes in it and you have limeaid. Mix that with cold vodka over ice and voila!

You can make a lemon drop cocktail the same way with lemons.

We made the best chicken broccoli stirfry today and I want to share the recipe. Combine 2 TBS soy sauce, 1 TBS orange juice (I know it is carby, I just bought one small orange and squeezed out a tiny bit and threw the orange away), 1 TBS rice wine vinegar, 1 TBS sesame oil, 1 TBS Brown Sugar Twin, 1/2 TBS cornstarch and a smattering of red pepper flakes in a bowl and whisk carefully and set aside. Saute boneless/skinless chicken (chopped in 1/2 pieces) in peanut oil until cooked and set aside on a plate. Add more peanut oil to the wok and saute 4 cloves of garlic, 3 TBS of ginger and 4 chopped green onions for one minute. Add chicken and 2 cups of blanched broccoli (just microwave broccoli for about 3 minutes if you don't want to blanc). Add sauce and stir until thick and bubbly. We served this with Miracle Rice and it was really good -- like really good high end Asian food.

We both had a deep craving for Asian food and this satisfied it with minimal carbs!

Same to you, Joy! Great to hear from you. I have struggled with eating these past few days -- low carb rolls are not my friends. I ate turkey burgers with a low carb roll and homemade cole slaw but the scale won't budge. I need to go back to being breadless.
