Portia, here is the recipe for the low carb "Red Lobster" biscuits from the wonderful Kent Altena. These are fabulous and very easy to make!

Ingredients:
2 cups Carbquik
1/2 cup butter
1/2 tsp Garlic Powder
1/2 tsp Italian Seasoning
2 oz Cheddar Cheese, shredded
Pinch Salt
1/4 cup Heavy Cream
1/4 cup Water
Bake for 8-10 minutes @ 450 degrees.

They are really good. Kent Altena has some great recipes. What you could do is take two out -- one of you and one for your BF -- and then freeze the rest. That would take temptation out of sight!

It is a blessed 37 degrees here in Boston so I am hoping that some of this snow will melt away! It really caused a lot of headaches but you can't fight Mother Nature!

Ann, it is GREAT to hear from you! Fight through that stall -- you can do it! I am not going to post for a bit because Tony had what we thought was a heart attack this morning and is in Mass General's intensive care unit. It turns out he has a torn aorta but he is going to be okay.

Thanks everyone. Appreciate your prayers.

Thanks guys -- I really, really appreciate your support. Tony definitely has a torn aorta. He had a full body catscan yesterday and the doctor's also found that he has polysystic kidney disease -- which exacerbates high blood pressure. That high blood pressure is what caused the torn aorta.

There is an upside to his though. He won't need surgery to correct the torn aorta -- the cardiologist said that medication will fix that. And they caught the polysystic kidney disease early enough that it can be managed through medication and proper diet and exercise. His mom had kidney disease and it is hereditary -- she ended up needing a kidney transplant but that won't happen to Tony if he takes care of it, which he will.

He will be in intensive care through the end of the week and then regular hospitalization for a few days after that. I am hoping I can bring him home by next Tuesday, Feb. 26 because that is his birthday. I want to bring my Pisces guy home!

Thank you again for your support and well wishes. It really lifts my spirits to see so many great comments -- honestly, it means the world to me.

And, Jes, yes -- I am so grateful that he is at Mass General, literally the best hospital in the world. He is getting the best care and that gives us peace of mind.

Hi Gail. I pop into your journal now and again and enjoy reading about your low carb life. I was sorry to read that Tony was ill but it sounds like he is having the best possible care and is already on the road to recovery.
Best wishes to you both.

DQ, Cindy, Amber and Trish -- thank you so much for checking in! I love you guys so much! I know I don't know you in the physical world but please know how much your comments and thoughts mean to me -- especially at a time like this! I am truly honored to know such fabulous, intelligent, gorgeous, kind ladies.

Anyway, I actually have some good news! Tony is moving out of the intensive care unit and into a transition unit tomorrow! Yay! My Pisces King is going to be okay!!!

And his polysistic kidney disease really is not bad at all. We met with one of the top kidney specialists in the world at Mass General this afternoon -- and after numerous tests -- he said that Tony's kidneys are healthy! And if he takes medication, follows a correct diet and exercises, his kidneys will REMAIN healthy! And we don't have to give up eating low carb! Usually people with this disease cannot eat low carb because the kidneys cannot process so much protein and fat. If we eat chicken, fish, fresh veggies, berries, nuts, olive oil and a little bit of butter, we are good to go! He just cannot eat too much red meat, cheese and excessive amounts of butter, which is totally fine by me.

Now, Tony loves his steak, hamburger, salami and capicola -- but he can easily have those things once a month or a few times per quarter, which he can manage!

The only bad news is that someday he will have to have heart surgery to repair the torn aorta. However, he won't have to have that right away -- maybe in several months or a year or too. And he is being treated by a top rated cardiologist who will continue to care for him in the future. So when we do come to that bump in the road, my Pisces King is going to be in very good hands and will be okay.

And, I can take him home by February 26 -- his birthday! I am going to bake a special treat for him -- a low carb German chocolate cake, Beef Bourginon and the low carb cheddar biscuits. And of course, champage to celebrate that Tony is coming home!

Please note that his birthday meal is just a one time celebration. We are going to eat super clean in the future -- grilled chicken, fresh fish, fresh vegetables, berries, nuts and plenty of water. I am not taking any chances with his health!

Oh Gail, that is GREAT news! I think your food plan sounds wonderful and is pretty much how I try to eat anyway. I actually can't stand creamy, cheesy casseroles and the like. I love more acidic foods, with more "umami" and spice. We eat a lot of chicken, fish, lean meats and veggies. Once a week or so I will make eggplant parm or something kind of pizza-ish, but not often.

I highly recommend some of the paleo cooking websites, since they are already dairy free and lower in the grease-factor. Will PM you a favorite so I don't violate the TOS again.

So glad he is coming home.

That is a fantastic update!

My father had open heart surgery at Beth Israel there in Boston a few years back. Of course it is a frightening prospect, but having gone through that process there with him I must say it is amazing how ‘common’ these procedures have become in this day and age.

The cardiac intensive care unit was top notch, as was the cardiac recovery department. The professionals assigned to cardiac care are the best of the best. My dad recovered so much faster than the timeline they provided.

A great perk to living in a city like Boston is the world class medical care! He’ll be in good hands Gail (yours and theirs)!

Jes and Trish, it is GREAT to hear from you! Jes, you are absolutely right about Paleo and I am going to do a lot of research on it this weekend. I have a couple of friends eating Paleo/low carb and they LOVE it. Who needs all that cheese, red meat and dairy anyway? Thank you SO much for the website info too! You are the best.

Trish, I really appreciate your story about your Dad -- that makes me feel so much better knowing that you had a loved one who had successful surgery AND a successful recovery. This all seems so overwhelming so it is really good to hear success stories about people who have been through this before.

I just found out today that Tony will most likely need surgery after all -- right away. We will know for sure on Monday after he has additional tests done. If he does not need surgery to repair the torn aorta, then he can come home on Tuesday as planned. However, if he does need surgery, they will want to operate on him next week. This means that he will stay in the hospital for at least several more weeks and then have a long recuperation period. Oh well -- at least he is getting the best care in the world.

Thanks so much you guys for your advice, love and support. Please know that it means the world to me right now. xo xo xo! Have a great weekend all.

Just read...

Sending prayer's for your husband and you.

If he needs the surgery.. better to have it
now so he gets well faster and you can
have him home sooner.

On his food you'll do great. You always
fix wonderful meals. It will just be him
missing his meat.

Take care
