I woke up today with renewed strength and vigor! I was able to drive past all my fast food favorites this evening after work and made it home to a healthy dinner. YAY ME!!!!

had chilli tonight... salad with tuna.. cottahe cheese and tomato for lunch.. and a special K cereal..

still not all the way low carbin.. but I got some menus to work with next week.. grocery list already made and portions gonna be made up and froze.. its gonna be go0o0o0od ... recipe for the new frozen dinners they have out

Saturday works for me too, LOL. But could we all meet here instead?

Breakfast was raw steel cut oats with coconut milk and cinnamon. (Soak the oats in water overnight and they are like cooked in the a.m. but better for you!)

Lunch was a raw vegan taco salad at AmeRAWcan Bistro. Yum yum yum!!! The "meat" is made from chopped walnuts that have taco seasoning added to it. Lots of yummy veggies in this.

Dinner was @$%#^%&^#%^. That's secret code for hamburger at Jack in the Box because poor dh was super hungry before we got home. His own fault- he was pouting at the vegan restaurant (not his choice to go there) and would only order a bowl of soup. Turned out he loved the soup, but didn't get enough to fill him up.
I won't suggest we go there anymore, even though he agreed we could go once a month and that was four months ago. This is the first time we have gone since he said we could go every month!

Anywho.... bought lots of spinach, celery, cilantro, cukes, zucchini, kale, Atkins entree's and one CarbMaster yogurt to get me through the next week or so.

Also learned how to block annoying and illegal telemarketers from calling our cell phones. It was necessary after one called us all day, hanging up on us every time! Felt good to block them, and it worked!

I have been so good with my eating it's scary.

Even was able to go to the gym tonight for 20 minutes.

I think she has been through a lot of workshops and training to get that good! I can't even get anyone to answer an email about classes!

Here's what I'm bringing tonight . . .

2 lbs lean ground beef
fat free sour cream
my medium salsa
I think I would like to put some corn in it, so I'm bringing a steamable corn pouch
fat free cheddar cheese
shredded lettuce

how many are we feeding?

do you need taco seasoning? I have an old recipe that dottie from this site posted years ago . . . it's seriously good. YOu want me to make some up and bring it?

well darling... we are feeding my family and Lana and darian... but Lana is bringing cheese and I said low fat..but you may bring it anyway just in case.. I have 1 and a half heads of lettuce.. I have mild salsa..:P .. and sour cream.. don't remember if its ff or not..lol.. being as i was low carbin it.. prolly not..

not sure if Korb will be there or Alina.. but Chris.. Kayden and prolly D will have burritos..

I have 2 taco packets.. but thats up to you.. ...

Creamy Broccoli Chicken... (Atkins frozen dinner )

Broccoli.. 6 cups
chicken breast.. boneless 4 6 oz.. cut into 3 pieces each
chicken broth 2 cups
heavy cream 1/2 cup
garlic.. 3 lg cloves.. minced
grated parmesan or Romano cheese...1/3 cup

In sauce pan.. cool broccoli in boiling water until crisp- tender.. about 4 minutes... drain and transfer broccoli into a large bowl. Heat oil in a nonstick pan skillet over med. heat... add chicken and saute' until done. about 5 minutes on each side. Transfer Chicken into the bowl with broccoli. Add broth , cream, and garlic to the skillet and boil until the sauce slightly thickens, about 5 minutes. add chicken, broccoli, and cheese into the sauce and cook while stirring until heated through and well coated with sauce. Makes four servings, Enjoy immediately or freeze in a microwave safe containers to enjoy later.

servings 4...calories 420.. protein.41.. fat 25 carbs 9 ( 5 net).. fiber 4.. sugar 2

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Quick Cheesy Chicken

2 TBS of olive oil
4 ( 6 oz each) chicken breast
1 cup marinara
4 oz mozzarella cheese
4 Tbs. Parm
1 bag baby spinach

heat 1 tbs of oil in a oven proof skillet; add chicken and cook about 3-4 minutes on each side, until no longer pink. Top each breast with 1/4th cup sauce, 1 oz parm.. bake @ 400 degree oven until cheese melts...

meanwhile, saute spinach in 1 TBs oil and salt and pepper to taste. Assemble 1 chcien breast plus 1/4 of the spinach for each perfectly portioned meal. enjoy or freeze.

servings..4 calories 370.. protein.. 40gr.. fat 0 shol 100mg..carbs 13 ( 8 net) fiber 5 and sugar 4

Oooooo! Thank you for these, but one quick question: The fat grams on the cheesy chicken recipe . . . . . . with 2 TBL of olive oil and the added cheese . . . could you check to make sure the recipe says 0 grams of fat . . . it seems like there would be SOME fat in it.. Just a bit confused here.

oops. 25 fat and 0 trans.. sorry.. 0 was all I saw last night before bed..:P.. but you can use fat free cheese of course..

I have been reading.. studying.. about low carb nutrition for how many years now???? I may not have stuck with it.. but I know how it works...: lol this is me sreaming not laughing..lol

Hard to bite your tongue and keep quiet sometimes, huh? I just love people telling me ALL about nutrition, vitamins, meds, you name it. Like where did they get THEIR degree???

Went to a juicing party today. The juice was good, but mostly fruit. I came home really hungry, 'cuz that's what fruit does to me! LOL Give me my spinach and kale.

Raini.. did I tell you that my hubs has decided to eat better??? woot woot.. This excited me to no end..

just out of the blue... yayayayaya

hes doing good too..

menu for the day.. ran out of time in the am.. so I had some options to grab and go..

Atkins frozen brekki.. delish

Atkins froen meal.. meat loaf one.. delish..

Atkins bar... snack..lol

and dinner was an Atkins recipe.. creamy broccoli chicken that I posted on here.. delish! and a side salad..

Chris had.. no brekki.. ( thats normal).. he came home and made an omelette..for lunch..

and had what I had for dinner.. then said he wasnt full... and asked for another salad..

ok.. gotta run..

hiya . . . cooking . . . sorta . . .

not only are my bread crumbs gone, but also my paprika!! I checked the bag thingy before I left the register and even the cashier did. I double checked the basket after I put things into the car . . . I went out twice to search the car . . . I can't check my receipt because I took the trash out early early early this morning. I wonder what ELSE is missing! Grrrrrrrrrrrrrrr . . .
