Had a rest day yesterday. My knees were is SUCH a bad way! They feel a bit better today so I went to the gym this morning and did some cardio. It's still wearing me out pretty badly and I still need a small nap afterward, but I know with consistency this will eventually not be an issue.

Going in for my cortisone shot in my knee this morning. Had to take a 1/2 day vacation to do it, though. I HATE that! But you gotta do what you gotta do . . .

My niece is trying to help me lose some weight and she is now my "COACH." She's been keeping tabs on me the last few days to see how I'm doing. Plus I'm going to start drinking a meal replacement shake for one meal during the day starting today. She wanted me to try it, so I am.

The shot in my right knee went well . . . the doc wanted new pics of my left knee which showed significant arthritis (really? DUH!). I'm supposed to stay off of the cardio equipment this weekend. No problem. I will do delt, abs, lower back, bi's and tri's instead.

Still struggling with the eating part, though, but I'm making strides. Went to denny's last night to study (as is my usual custom) and had my "regular" meal instead of making better choices. I promptly came home afterward, got on their website and found out what my options were as to healthier choices, which I found were totally doable. So next weekend when I go to study, I will know what to get without looking at their menu and without being tempted to buy something I shouldn't.

good girl on the Dennys and getting to the gym... you were supposed to tell me when you started the shakes.. so I could too ..

guess I'll start that Monday..

pan cakes

Easy Morning Breakfast: Protein Pancakes

3 eggs (1 whole, 2 whites)
1 scoop vanilla protein powder
¼ cup of quick cooking oats
Cinnamon (to taste), but I like a lot!

Combine all the ingredients in a bowl together, pour in skillet and cook one large "pancake".

I'm a bad girl for not posting more.. .. still hangin on.. the losses have stalled.. but Im still doin my thang... just waiting for my body to realize I am in charge here not it..lol.. I will not have sugar again.. so it just needs to start losin the fat again!!..

Homemade Taco Sauce (Low Carb and Paleo)






Ingredients
2-8 oz cans of organic tomato sauce (check ingredients and use BPA free cans)
1 cup chicken bone broth
3 Tbsp Homemade Taco Seasoning
1/2 Tbsp Apple Cider Vinegar
1/4 cup water

Instructions
1.Combine all of the ingredients in a medium sauce pan.
2.Bring the mixture to a boil and reduce to a simmer.
3.Simmer for 10-15 minutes or until the sauce has reduced and thickened (stir the sauce occasionally).

Homemade Taco Sauce: 1.81 net carbs (per serving (2 Tbsp)--recipe yields about 16 servings)

Beef and Bean Taco Casserole INGREDIENTS 1 lb ground beef 1 can (16 oz) refried beans 1 jar (16 oz) Thick ‘n Chunky salsa 1 package (1 oz) taco seasoning mix 2 1/2 cups coarsely broken tortilla chips 1/2 medium green bell pepper, chopped (3/4 cup) 4 medium green onions, sliced (1/4 cup) 2 medium tomatoes, chopped (1 1/2 cups) 1 cup shredded Cheddar or Monterey Jack cheese (4 oz) 1/4 cup sliced ripe olives 1 cup shredded lettuce Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in refried beans, salsa and taco seasoning mix. Reduce heat to medium. Heat to boiling, stirring occasionally. In ungreased 2-quart casserole, place 2 cups of the broken tortilla chips. Top evenly with beef mixture. Sprinkle with bell pepper, onions, 1 cup of the tomato, the cheese and olives. Bake uncovered 20 to 30 minutes or until hot and bubbly and cheese is melted. Top baked casserole with lettuce, remaining 1/2 cup tomato and remaining 1/2 cup tortilla chips. Serves 5

well hello .. took a few weeks off and ready to jump start this weight loss again

I will do my best to get in here and post.. I am out of the habit.. but I need to make new habits.. right?

Day one...

brekki.. 2 sausage patties and 3 eggs

Lunch.. salad.. lettuce.. taco meat .. salsa.. and red wine vinaigrette (sp?)

Dinner.. fried cabbage with smoked sausage.. some chick peas.. not many

not evening snacks... had some coffee with sf pumpkin spice creamer and water the rest of the day..

day one down baby

night.. be strong!................... YOU ARE WORTH IT!!

Hello... No idea what my WOE is going to be this year. May sneak back on LC and hope my kidneys don't notice. LOL But I exercised December 31 in the house (20 minutes) and walked about an hour on January 1. I find I am craving more veggies and LOVING my salads IF I take enough time to really load them up with everything that makes them so yummy - romaine, cilantro, jalapenos, jicama, avocado, raw sauerkraut (I KNOW- I didn't think it would taste good either, but it is amazing!) and other nummy stuff.

Breakfast was sauteed spinach, onions and red peppers over 2 poached eggs with parmesan cheese. Lunch was some handfuls of nuts... not sure if I ate anything else. Dinner was above-mentioned salad and then stir-fried rice with lots more veggies.

I've missed you two! <3 <3 <3

I love a good salad as well Raini ...

matter of fact I was wishin I would have made one for lunch today.. but I didn't.

Brekki.. 2 sausages.. 3 eggs

Lunch.. 1 sausage ..3 scrambled eggs

Dinner.. will be a burger and salad....

note to self.. get my water pitcher thing so I can drink more throughout the day ..

scale was up this am..:/ but hey.. its catching up from New years eve..

Looking forward to seeing it go dowwwwnnnnn

Looks like we're having the same dinner! We found these super-yummy and really BIG beef patties at Winco. Don't recall the name but I read the label and it sounded like really good quality meat. We had them one time before and they were wonderful.

You getting snow? If so, would you send a little our way?

brekki today was the same as yesterday.. sausage and eggs,, I am now out of sausage..:/ and wont be getting to walmart any time soon.. there is a nice snow storm coming out way.. 6 to 10 inches/. possible 12 in some areas.. oh joy..

lunch today is another cheese burger salad.. YUM..

dinner will be chili.. .. nice for a cold day... !

Low Carb Snack Ideas Celery with tuna salad Hard boiled eggs Deviled eggs Dill pickles and cheddar cheese (no kidding, it's a great combo) 1/4 cup berries with 1/3 cup cottage cheese Nuts (keep raw ones in the freezer if you think you'll overeat them) Sunflower seeds (get them in the shell so it will take longer to eat them) Other seeds (How to Toast Pumpkin or Squash Seeds) Low-Carb Trail Mix Jerky (beef or turkey -- try to find low-sugar varieties) Low-carb shakes Cheese sticks, such as string cheese Sugar-free Jello, alone or with cottage cheese and a sprinkling of nuts Make sugar-free lime Jello with part coconut milk -- For a large package, dissolve the powder in a cup of boiling water, add a can of coconut milk, and then add the rest of the water. Low Carb Beefed-Up Meatloaf
Recipe courtesy George Stella

Prep Time 30 min/ Cook Time 75 min/ Serves 8

SHOPPING LIST
1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1⁄4 cup sugar substitute
2 teaspoons white vinegar
2 pounds ground chuck
2 large eggs
1⁄2 cup grated Parmesan cheese
1⁄4 cup red onion, diced small
1⁄4 cup roasted or fresh red bell peppers, diced
2 tablespoons chopped fresh parsley leaves
2 cloves garlic, minced
1⁄2 teaspoon dried oregano
1⁄2 teaspoon dried basil
1 teaspoon kosher salt
1⁄2 teaspoon black pepper
1⁄4 pound prosciutto, or any type of ham, thinly sliced
1⁄4 pound provolone cheese, sliced


1. Preheat oven to 350°F.

2. In a small bowl, combine the tomato sauce, tomato paste, sugar substitute, and vinegar. Set aside.

3. In a large bowl, mix together the beef, eggs, Parmesan, vegetables, herbs, and seasonings.

4. Working on a waxed paper lined sheet pan or countertop, form the meatloaf mixture into a 10x8-inch flat rectangle on the waxed paper.

5. Place a layer of prosciutto slices on top of the meat, followed by a layer of provolone slices.

6. Roll the stuffed meatloaf mixture up like a burrito and seal the edges all around by pinching the meat.

7. Place the roll, seam side down, into a 5x9-inch loaf pan. Spread a heavy coat of the tomato topping on top, completely covering the top of the meatloaf.

8. Bake for about 1 hour and 15 minutes, or until the temperature on a meat thermometer registers 165°F. Drain fat and let rest at least 10 minutes before slicing.

HELPFUL HINTS
Prosciutto is usually available at the deli counter, but you must make sure to ask them to slice it extra thin or it will be too tough.

Opted to walk across a B I G parking lot instead of riding in the car. Might not sound like much, but we had just eaten, my tummy was full and I was a huffin' and a puffin.' Until I see my cardiologist, I don't want to push too much. But it was crisp and sunny and I wanted that fresh air!

Is it too cold to post Lisa? LOL Brrrrrr......

So breakfast was 8 oz. of veggie juice: cabbage, spinach, cucumber, zucchini, cilantro, parlsey, jicama and carrots and ginger. Also added a wee bit of apple juice and some juice from fresh pineapple cores.

Must tell a funny about the apple and pineapple: So, the veggie juice on it's own is a bit much, and using a small apple or other fruit is recommended. I was really trying to watch the carbs today, but I had an apple already peeled from a recipe yesterday and Dave had set aside the pineapple core for me to use as well. I didn't want to waste them. So I juice them first, put just a little in with my veggie juice, and then put the larger portion of apple and pineapple juice in the 'fridge for DH. He came in for his lunch and I told him I'd made juice for him, and told him where to find it in the 'fridge. A little bit later I looked over and saw him drinking MY veggie juice and I about had a fit! But I did think it was funny that he was drinking the stuff without question or complaint.

Anyway, lunch was another cup of the veggie juice.

Dinner was 4 oz. of organic chicken breast sauteed with fresh mushrooms in garlic olive oil, and a salad made with finely chopped celery, zucchini, cilantro, carrots, some black beans and some corn salsa. (Yes, I know that corn is not low carb.) (Nor are carrots.)

I probably need to eat more, but today's menu was a knee-jerk reaction to getting on the scale and wanting to curl up and die. I did accomplish a couple of very important things: I did NOT snack on nuts or tortilla chips or gluten-free pretzels or any of the other things I've been grabbing lately. I need to focus on "conscious eating" and be aware of everything that I am eating.

Going off low-carb (doc's orders) felt like it was giving me license to eat "carp" (LOL) that I know better than to eat. Just because something is gluten-free does not mean it is good for me. I need to find a balance that will keep the doc happy (and I'm getting a new one on Friday, so we'll see what she is like) and that will be healthy for me and help me lose weight.

I also drank 8 glasses of water today. I need more, but this is way better than what I've been doing. However, I am worried about the leg cramps that are sure to come again. They always do when I'm drinking more water.

I exercised today, as well. And took all my supplements and fiber. So all in all, a pretty good day.
