sweet and sour chicken

I wanna try this.. but sub stevia for the sugar. whatcha think D??

Sweet and Sour Chicken



Chicken Breading:
3-5 chicken breast
salt and pepper
1 cup cornstarch
2 eggs, beaten
1/3 cup canola oil



Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. season with salt and pepper. Dip chicken into cornstarch and coat all the way and then into eggs. Heat oil in large skillet. Cook chicken until browned. Place in baking dish. 3 chicken breasts can be in a 9x9 but 5 chicken breasts fits better in a 9x13.



Sauce:
3/4 cups white sugar
4 Tablespoons ketchup

1/2 cup white distilled vinegar
1 Tablespoon soy sauce
1 teaspoon garlic salt



Whisk until smooth. Then pour evenly over chicken. Turn chicken so the sauce gets on both sides and then put in the oven at 350 degrees for 15 minutes. turn chicken and then cook for 15 more minutes.

Low Carb Taco Bake

Low Carb Taco Bake

Prep Time: 25 mins
Cook Time: 50 mins

Crust

Flourless Brownies

Flourless Brownies

Flourless Brownies Ingredients
•12 oz unsweetened chocolate squares

•1 cup unsalted butter

•1 1/2 cups Splenda

•4 lg eggs

•4 lg egg yolks

•1 tbsp vanilla

•6 tbsp cocoa powder

Directions
1.Preheat oven to 350°F

2.Melt chocolate and butter over VERY low heat.

3.Let cool for 10 minutes.

4.Beat eggs until light.

5.Gradually beat in Splenda until fluffy.

6.SLOWLY drizzle chocolate mixture into egg mixture, beating constantly.

7.(Mixture will get VERY thick) Beat in sifted Cocoa until smooth.

8.Spread batter into a GREASED 12x16 jelly roll pan.

9.Bake for 50 minutes, or until top is puffed and cracked and tester comes Out with MOIST crumbs attached.

10.Cool for 1 hour.

11.Cut into 2 inch squares.

Loaded Cauliflower Casserole

Loaded Cauliflower Casserole
(recipe from louanneskitchen)


2 lbs cauliflower florets
8 oz shredded sharp cheddar cheese, divided
8 oz shredded Monterey Jack cheese, divided
8 oz block cream cheese, softened
4 tablespoons heavy cream
2 bunches green onions, sliced (1 1/2 cups)
6 sliced bacon, cooked and crumbled
1 clove garlic, grated
Salt & pepper to taste

Preheat oven to 350 degrees.
Steam cauliflower florets until tender.
While cauliflower steams, cream together 6 oz of the shredded cheddar, 6 oz of the Monterey Jack, cream cheese, and heavy cream.
Stir in sliced green onions, chopped bacon, and garlic.
Set aside.

Drain any liquid from steamed cauliflower and add to cheese mixture.
Stir cauliflower and cheese mixture together.
Taste for seasoning, and add as necessary.
If you want a finer texture, give a few mashes with the potato masher.
Pour into a 2-3 quart casserole and sprinkle on remaining cheddar and Monterey Jack cheese.

Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly.

Crockpot Orange Chicken

High Carb day??

Crockpot Orange Chicken

Ingredients:
2 large carrots, peeled and sliced about 1/2-inch thick
2 large red or green bell peppers, cut into 1/2-inch chunks
3 cloves garlic, finely minced
4 boneless skinless chicken breasts
2 tsp. ground ginger
1 tsp. salt
1/2 tsp. pepper
8 ounces orange juice concentrate
2 cups Mandarin orange segments or fresh orange segments
2 Green onions, chopped
hot cooked rice
Directions:
Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice in Crockpot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments and green onions. Serve chicken liquid in gravy boat, if desire

1 btl Sweet Baby Ray's sauce
1/4 c vinegar
1 tsp red pepper flakes
1/4 c brown sugar
1 tsp garlic powder
Mix everything but chicken
Place chicken in crockpot (frozen is ok)
Pour sauce mixture over chicken
Cook on low 4-6 hours

Soo... I got in the mood to try on some shirts that I have bought over the years thinking they would fit only to find out that did not.. about 15 of them actually.. :/ anywho... I am excited to say.. THEY FIT...hehehe.. only 2 of them are a little more clingy then I like.. I am so0o0o0o excited.. after 60 pounds lost you would think people would notice.. a few have .. but this really did me good.. I mean, my pants are all baggy and some shirts are falling off my shoulder.. but to look at myself.. I don't see much...Beth told me Saturday that she could really tell.. she doesn't see me every day .. maybe once a month.. so it put hope in me.. but now that I can fit in these shirts.. wo0o0oho0o0o0.. ....#EXCITED!

Famous Red Lobster Shrimp Scampi

Famous Red Lobster Shrimp Scampi
1 lb medium shrimp, peeled and deveined
1 tablespoon pure olive oil
2 tablespoons garlic, finely chopped
1 1/2 cups white wine, I use chardonnay
1/2 fresh lemon, Juice only
1 teaspoon italian seasoning
1/2 cup softened butter
1 tablespoon parsley
1/2 cup grated parmesan cheese
Directions:

1 Heat cast iron skillet and add olive oil.
2 Add shrimp and cook until tender and no longer translucent, reduce heat. Remove Shrimp and set aside.
3 Add garlic and cook 2-3 minutes. Do not allow garlic to brown - it will make it bitter.
4 Add white wine, and lemon juice.
5 Cook until wine is reduced by half. After it is reduced, add Italian seasoning.
6 Reduce heat to low, and add butter. If pan is too hot, the butter will separate.
7 Add shrimp back into sauce, add parsley, and season to taste with salt and pepper.
8. Srinkle with grated Parmesan Cheese.

Secret Fruit Salad
Serves 3-4

2 tablespoons dry instant SF vanilla pudding mix
1 pound of strawberries, quartered
1/2 pint blueberries
1/2 pint raspberries
1/2 pineapple, cubed
1 bunch grapes

Sprinkle fruit pudding powder and stir. Serve immediately or allow to sit overnight

Pepperoni Pizza Cauliflower Casserole

Pepperoni Pizza Cauliflower Casserole (Low Carb and Gluten Free) Recipe
Yield: 4 servings

Serving Size: approximately 3/4 cup

Perfect as a kid-friendly low carb side dish, or eat an entire bowl for a complete meal!

Ingredients

For the Puree
1 medium head of cauliflower
2 Tbsp Heavy Cream
1 Tbsp Butter
8 slices pepperoni
1/4 cup shredded mozzarella cheese
salt and pepper to taste
For the Casserole
12 slices pepperoni
1/2 cup shredded mozzarella cheese
Instructions

For the Puree
Clean and trim the cauliflower, breaking it into medium sized pieces. Place in a microwave safe bowl with 2 Tbl of cream and 1 Tbl of butter. Microwave, uncovered, on high for 10 minutes. Stir to coat cauliflower with cream/butter mixture. Microwave for another six minutes on high (or until tender.) Remove from the microwave and put into a high speed blender or food processor along with the 8 slices of pepperoni and 1/4 cup mozzarella cheese. Puree until smooth. Season with salt and pepper to taste. You can adjust the cream and butter to your preference for consistency.
For the Casserole
Spread the cauliflower puree into an 8 x 8 oven proof casserole dish. Cover with 1/2 cup shredded mozzarella cheese, and layer with pepperoni. Bake at 375 degrees (F) for about 20 minutes. Alternatively you could microwave this for 5 minutes. Serve hot.

I tried the 2 eggs and banana
for the pancakes. Was good.

Also tried the sweet and sour chicken
in the crock pot. Very good. Will make
this again for sure. So easy.

Yaya... glad you liked them.. .. I was gonna make the pancakes this am.. but the hubs got up before me and made eggs and bacon..lol.. but I NEED to use my bananas today.. so I'll make banana bread .. low carb of course

BIGGEST LOSER PANCAKES

Biggest loser oatmeal & egg white pancakes. They say once you try these, you will never go back. tastes like French toast!

Ingredients:

6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar.. (Stevie)
1 teaspoon cinnamon
1 teaspoon vanilla

Instructions:

In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed. Makes about 10 pancakes.

ZUCCHINI CHEDDAR BAKE-

ZUCCHINI CHEDDAR BAKE-Under 300 Calories!!!

Ingredients:

4 cups (1 L) thinly sliced zucchini (about 2 large)
2 cups (500 mL) thinly sliced cremini or white mushrooms
1/2 red onion, thinly sliced
1 tbsp (15 mL) olive oil
½ tsp (2 mL) dried oregano or basil
½ tsp (2 mL) salt
¼ tsp (1 mL) pepper
1 cup (250 mL) grated cheddar cheese

Directions

1. In greased 8-cup (2-L) shallow baking dish, layer half of the zucchini, then all the mushrooms and onion. Top with layer of remaining zuc-chini. Drizzle with olive oil; sprinkle with oregano, salt and pepper. Top with cheese.

2. Cover tightly with lid or foil and bake in 400°F (200°C) oven for 30 minutes. Uncover and bake 10 minutes longer or until vegetables are tender and cheese is bubbly.

Didn't lose any this week.. so I'm still at a 61.5 loss.. tis ok.. I know my body and I do stall.. may for a few weeks..but that's ok.. I will keep workin it

Wowza! That was posted over a month ago! So how are things going, and why is this room empty (empty...empty...empty)? See, there's an echo! (echo...echo...echo...)

I am going to TRY to post some stuff daily (yeah...right) on my old blog for awhile. I'm doing Ani Phyo's 15 Day Fat Blast, which should actually be 22 days for me because those with more than 10 pounds to lose are urged to repeat Phases 1 and 2. I'm hoping this will re-set my body, clean it out and get me ready for eating healthy after all the company and terrible (but yummy) foods we've had all summer.

I may still pop over here and post if anyone else ever shoes up...
