6 minutes on the elliptical was all my back could handle and 14 minutes on the recumbent bike. 20 minutes total . . . that's 20 minutes more than I've been putting in, so i'm happy with that.

Pepperjack Meatloaf Recipe

Ingredients
1 egg
1/4 cup chopped onion
1/2 to 1 teaspoon salt
1/2 teaspoon pepper
1/2 c crushed and seasoned pork rinds
1-1/2 pounds lean ground beef (90% lean)
1 cup (4 ounces) pepper Jack cheese, divided
1 cup salsa, optional

Directions
In a large bowl, combine the egg, seasoned pork rinds , onion, salt and pepper. Crumble beef over mixture and mix well. Press half of the beef mixture onto the bottom and halfway up the sides of a greased 8-in. x 4-in. loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 in. of sides. Pat remaining beef mixture over cheese.
Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a meat thermometer reads 160°. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with salsa if desired. Makes 6 servings.

Million Dollar Dip

5 green onions, chopped
8 oz. low fat cheddar cheese, shredded
1- 1/2 cups light mayonnaise--Greek Yogurt could also be used
1 jar Hormel Real Bacon Bits
1 pkg. slivered almonds

Mix the onions, cheese, mayo, bacon bits, and slivered almonds together. Chill for 2 hours.
Serve with favorite cracker or celery (I would use celery)

This Is To Die For!!!!! HOT CRAB AND ARTICHOKE DIP

Recipe Source: Peace, Love and Low Carb - The Cookbook - 3 Ingredients to a Healthier You!

Crab and artichoke dip has always been one of my favorite appetizers to order when dining out at a restaurant. But, it is so easy to make at home and it will save you a lot of money. It is wonderful with vegetables, low carb tortilla chips, or even in quesadillas. Just make sure no one is around when you lick the bowl...

INGREDIENTS
8 oz. Crab Meat
14 oz. Can Artichoke Hearts – Drained and Chopped
1 Cup Sharp Cheddar Cheese – Shredded
¾ Cup Parmesan Cheese – Shredded, Divided
¾ Cup Sour Cream
½ Cup Mayonnaise
3 Tbs. Green Onion - Sliced
2 Tbs. Garlic – Minced
1 tsp. Garlic Powder
1 tsp. Onion Powder
(2 Tbs. Peace and Love)

DIRECTIONS
Preheat oven to 350°

In a large mixing bowl, combine crab meat, artichoke hearts, cheddar cheese, ½ cup Parmesan cheese, sour cream, mayonnaise, green onion, garlic, garlic powder, and onion powder. Mix until all ingredients are well incorporated.

Transfer crab mixture into a shallow baking dish. I used two 10 oz. baking dishes. Bake for 30 minutes on top rack.

Spray this when you are in motels/hotels.. Don't bring these critters home with you.
Please pass on. Everyone needs this helpful hint.

Homemade Bed Bug Spray

1 cup water
10 drops lavender essential oil
10 drops eucalyptus essential oil
10 drops rosemary essential oil
3 drops clove essential oil (optional)

Put into a fine mist sprayer, shake well, and spray on mattresses, furniture, and other items that are (or could be) infested.

GLUTEN FREE!! LOW CARB!!! ALERT!!
Zucchini Lasagna

Ingredients:

1 lb 93% lean beef
3 cloves garlic
1/2 onion
1 tsp olive oil
salt and pepper
28 oz can crushed tomatoes
2 tbsp chopped fresh basil
3 medium zucchini, sliced 1/8" thick
15 oz part-skim ricotta
16 oz part-skin mozzarella cheese, shredded (Sargento)
1/4 cup Parmigiano Reggiano
1 large egg

Directions:

In a medium sauce pan, brown meat and season with salt. When cooked drain in colander to remove any fat. Add olive oil to the pan and saute garlic and onions about 2 minutes. Return the meat to the pan, add tomatoes, basil, salt and pepper. Simmer on low for at least 30-40minutes, covered. Do not add extra water, the sauce should e thick.

Cheesy Zucchini Enchiladas
Gina's Weight Watcher Recipes

Ingredients:
cooking spray
1 tsp olive oil
2 cloves garlic, crushed
2 medium scallions, chopped
1/4 cup cilantro, chopped
2 medium zucchinis, grated
kosher salt and fresh ground pepper
1 1/2 cups grated reduced fat mexican blend cheese (Sargento)
4 Large Low Carb tortillas
chopped scallions (optional)
chopped cilantro (optional)

Enchilada sauce:
1 garlic cloves, minced
1 tbsp chipotle chilis in adobo sauce (optional for more heat)
1 cups tomato sauce
1/4 tsp chipotle chili powder (to taste)
1/4 tsp ground cumin
1/2 cup fat free vegetable broth
kosher salt and fresh pepper to taste

For the enchilada sauce: in a medium saucepan, spray oil and sauté garlic. Add chipotle chile, chili powder, cumin, broth, tomato sauce, salt and pepper. Bring to a boil. Reduce the heat to low and simmer for 5-10 minutes. Set aside until ready to use.

Spray a baking dish with nonstick spray. Preheat oven to 400 degrees.

In a medium nonstick skillet, sauté garlic and scallions in olive oil over medium heat for about 3 minutes; add zucchini, salt and pepper to taste and cook about 4-5 minutes.

Remove from heat and add 1/2 cup cheese; mix well.

Divide zucchini between in each tortilla, roll and place seam side down in baking dish.

Top with enchilada sauce (you might not use all) and remaining cheese and bake until hot and the cheese is melted, about 20 minutes.

Ingredients:
-2 Ripe Bananas, Mashed
-1/3 C. Reduced Fat Peanut Butter
-2/3 C. Unsweetened Applesauce
-1 Tsp. Vanilla
-1/2 Tsp. Salt
-1/2 Tsp. Cinnamon
-Dash of Ground Cloves
-Dash of Ground Nutmeg
-1 1/2 C. Quick or Old Fashioned Oats
-1/4 C. Nuts (I used dry unsalted peanuts.)
-1/4 C. Semi Sweet Chocolate Chips
-1/4 C. Reduced Fat Unsweetened Shredded Coconut (Optional)

Directions:
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. Mix together the bananas, peanut butter, applesauce, vanilla, and spices. Add in the oats, nuts, chocolate chips, and coconut; stir until well combined.

Spoon a rounded 2 tbsp. of the cookie mixture onto the lined baking sheet, leaving an inch or two between each and flatten slightly. I placed a few more chocolate chips on top of each cookie. Bake for 20-30 minutes and allow to cool slightly.

Cauliflower Tots - Low Carb and Gluten Free...

Cauliflower, Cream, Butter, Egg Whites... and a pastry bag...or a Ziploc bag with the corner cut off

Microwave Cauliflower, Cream, and Butter for 5 minutes. Add Cheese and process with cheese and seasoning. Fold in whipped egg whites. Chill for 30 minutes - then fill the bag with the mix. Squeeze out onto a pan and bake for 10 minutes at 375.

Now this is a good tasting "Frosty"!!!

I personally didn't care for the Wendy's imitation frosty recipe that was all the craze a few days ago...I didn't like the banana in it and wanted mine to be a little bit more creamy, so I "tweaked" the recipe and even my son loved it...NO added sugar...LOW carb and DELICIOUS!!!

to make both of these I took
1/2 cup of Unsweetened Almond Milk
2 Tbsp of Heavy Whipping Cream
put them in my Ninja and blended them until they were good and creamy and thickened a little then I added
2 tsp of Vanilla Flavoring
1-2 tsp of unsweetened cocoa (I used a tad bit more than 1tsp)
2 tsp of Stevia
and about 15 chunks of ice and blended some more...topped with cool whip

5 Carbs and 125 Calories Each glass

**you could also add all natural peanut butter or PB2 protein powder for a chocolate peanut butter flavor

Dr. Atkin’s Revolution Rolls
Makes 3 Buns (top & bottom) or 6 Halves

Ingredients
3 Large Organic Eggs
3 Tbsp. Organic 4% Cottage Cheese (we like Kalona SuperNatural ~ it’s grassfed)
1/4 tsp. Cream of Tartar

Directions

Separate the eggs into two bowls, one with the whites (be careful there is no yolk or shells) and one with yolk. With an electric mixer, beat the whites on high, until frothy. Continue beating and slowly sprinkle in the cream of tartar. Beat until stiff peaks form. Beat the yolks with the cottage cheese for about 30 seconds. Gently, carefully, with a light hand, fold the yolks into the whites. It does not have to be “mixed” but incorporated. Line a cookie sheet with parchment paper and then make six mounds. Bake at 300 for 1 hour. Cool on wire rack.

And because I know someone will ask, I calculated the nutrition information for a whole bun (that is a top and a bottom) = 85 calories, 6g fat, 1g carb, 8g protein

ALL NATURAL PANCAKE RECIPE... NO PROCESSED ANYTHING!!

- 1 ripe banana
- 2 whole eggs

That’s it. Just mix together in a bowl and make sure the banana is all mashed. Then spray your pan with some "spray & cook" or coconut oil. On a low to medium heat, scoop some of the batter into the pan & give it about 20-30 sec, flip, and done! Serve and eat!

*Some advice would be to make them small so its easier to flip

Under 250 calories, nearly 14g of protein! No processed anything! These pancakes are gluten free, low calorie.

chris powell waffles

Ingredients

•1/2 cup cottage cheese
•2 eggs
•1/2 cup water
•2 teaspoon olive oil
•1 teaspoon vanilla extract
•1 1/3 cup oatmeal
•1 teaspoon baking powder



Cooking Directions

Put oatmeal and baking powder in food processor or blender and process until powdered.

In a food processor blend cottage cheese, eggs, water, vanilla, and olive oil until smooth.

Mix the dry and the wet ingredients to form a batter.

As the mixture stands it will thicken and it may be necessary to add more water, (a tablespoon at a time), to a get smooth, not lumpy, consistency.

Cook in a waffle iron according to the iron’s specifications. Powell’s waffles take about 4 minutes each.

Nutritional Data: 313 Calories, 18g Protein, 29g Carbs, 4g Fiber, 2.5g Sugar, 13.4g Fat

A Low Carb Diet Meal Plan
What foods you should eat depends on a few things, including how healthy you are, how much you exercise and how much weight you have to lose.

Consider all of this as a general guideline, not something written in stone.

The Basics
Eat: Meat, fish, eggs, vegetables, fruit, nuts, seeds, high-fat dairy, fats, healthy oils and maybe even some tubers and non-gluten grains.

Don’t Eat: Sugar, HFCS, wheat, seed oils, trans fats, artificial sweeteners, “diet” and low-fat products and highly processed foods.

Foods to Avoid

You should avoid these 7 foods, in order of importance:

Sugar: Soft drinks, fruit juices, agave, candy, ice cream and many others.
Gluten Grains: Wheat, spelt, barley and rye. Includes breads and pastas.
Trans Fats: “Hydrogenated” or “partially hydrogenated” oils.
High Omega-6 Seed- and Vegetable Oils: Cottonseed-, soybean-, sunflower-, grapeseed-, corn-, safflower and canola oils.
Artificial Sweeteners: Aspartame, Saccharin, Sucralose, Cyclamates and Acesulfame Potassium. Use Stevia instead.
“Diet” and “Low-Fat” Products: Many dairy products, cereals, crackers, etc.
Highly Processed Foods: If it looks like it was made in a factory, don’t eat it.
You MUST read ingredients lists, even on foods labelled as “health foods.”
Low Carb Food List – Foods to Eat
You should base your diet on these real, unprocessed, low-carb foods.

NO DOUGH PIZZA!!!!!!! This one is a WINNER!!!!
Gluten Free, Low Carb, Diabetic Friendly!!!!!!
For when you absolutely want pizza but not all the carbs!!!!!!!

Crust
1 (8 oz) package of full fat cream cheese, room temperature
2 eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 cup grated parmesan cheese

Topping
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
toppings - pepperoni, ham, sausage, mushrooms, peppers
Garlic powder

Preheat oven to 350.

Lightly spay a 9×13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.

Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 8-10 minutes, until cheese is melted.
