Reflection . . .

190 pounds to lose
I need a walker to walk distances
Arthritic knees with a promise of a knee replacement within 4 years
Arthritic back, narrowing spinal canal, bulging discs . . . blah blah blah and yada yada yada . . .

I have been fighting this beast for so long. Will I win this time? Will I conquer or be conquered?

I renewed my gym membership for 2 years back in March and then promptly disappeared again.

Recently I received an epidural steroidal injection to help with the inflammation so I can move a little better . . . it took a tad bit of the edge off, but being this heavy, it was not miracle fix. The doctor who did the injection told me right before he walked out the door that this wasn't going to fix anything; that is was only going to help for a little while. I know, I KNOW!

I have been wishing to go to the gym . . . I have been wishing to eat better . . . I have wished, wished, wished, wished, wished . . . but wishing ain't getting. Then something clicked in my head on the Monday, the 6th . . .

I have often said that I wished I could eat like a normal person, or that I wished I could eat normally. Without going into a lot of detail here, I'll translate – put simply, I wanted to be able to eat without thinking and not have it affect me. Well, on Monday I started thinking about all the damage to my body and how it is affecting me . . . how I have allowed this damage to escalate to the point of needing a walker and injections and it occurred to me that I have a "high maintenance body." Some people are high maintenance in that they need the newest gadgets and yet others are high maintenance in that they have to have a lot of sparkle and frills . . . now, I’m a plain and simple kinda gal, not into frills and gadgetry, but when it comes to my body, because I haven't been treating it with respect, it is rebelling. Now, due to the neglect, it will always require diligence to see to its upkeep.

With this light bulb moment I started to formulate a plan. I am hoping to post my triumphs and setbacks here to learn and move forward in taming the beast. And I’m not shooting myself in the foot by acknowledging there will be setbacks. I’m thinking being realistic here is better than being delusional.

.. well said..I have always been in awe of you when it comes to saying things he right way... my thoughts get jumbeled sometimes.. a lot of times really... as you know..lol..

this week , I do not feel like I have lost... guess we will see tomorrow.. my feelings inside me feel like the flame is starting to fizzle ... and I do NOT want that to happen.. so I will be working on that.. I haven't gone of course.. I do NOT want to go off course.. but you know how that HIgh is when you start anything new.. ? ...then after a while it fizzles?

I love how my sugar levels have gone down and my blood pressure is better.. I do NOT want that to go back to being bad.. because that would mean I would need meds.. I do NOT want to take meds.. I want to beat this.. and the only way to beat it is.. eating right.. soo...

with that said.. the hubby is ready for beddy bye.. I must go..

wish me luck in the weigh in in the am..

NO NO! NO Fizzle! How can we make this more fun? Do we need to start making meals together again? Do we need to start doing games together again? No fizzies, you hear me! High maintenance means we have to work and work and work at it. It will become second nature to us if we keep doing it ESPECIALLY through the hard times when motivation is down.

With that said, I'm down 5.5 pounds this week. I didn't change my avatar all last month so it never showed my increase in weight. I had some pretty bad stressors that I was dealing with that made me come to a screeching halt in the eating department . . . but that's neither hear nor there. I'm back now. I'm still up 0.3 lbs from a month ago, but next week I'll be below that for sure!!

Lis, you better watch out . . . i'm on the move and I'm comin' for ya! (insert evil laugh here)

so I was right.. I am up.. but good thing is its only 1.6 ... hoping im just still bloated from the bag of pork rinds I ate the other night..

I must remember what one of Rubys docs said to her.. you can still gain weigh eating healthier foods.. I also had an atkins oatmeal bar a few times this week.. and its higher in carbs.. and my carb count has been over 20.. so it seems to me that I need to keep it simple.. when I go adding a lot of things in this lifestyle.. I either gain or stall..sooo..

although in my head my spark is a little dim.. I will not go back to the way I used to eat.. so no fear D... Im in it to win it.. It is my life.. we never know how many years we will be here on this Earth.. and I have waisted so many already not being able to do the things I would like to do.. so with that said.. ITS ALL GOOD... :P

MARYLAND CRAB CAKES: (You can also use Canned skinless boneless Salmon instead of Crab for Salmon patties)
INGREDIENTS:
1 large egg
2½ tablespoons mayonnaise (I like Hellman’s Real)
1½ teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay seasoning
¼ teaspoon salt
¼ cup finely diced celery (you’ll need one stalk)
2 tablespoons finely chopped fresh parsley
1 pound lump crab meat*
¼ cup Parmesan Cheese
1 – 2 oz pork rinds crushed
Canola oil

DIRECTIONS:
1. Line a baking sheet with aluminum foil.

2. Combine the egg, mayonnaise, Dijon mustard, Worcestershire, Old Bay, salt, celery, and parsley in a large bowl and mix well. Add the crab meat (be sure to check the meat for any hard and sharp cartilage) pork rinds and parmesan; gently fold mixture together until just combined, being careful not to shred the crab meat. Shape into 6 crab cakes (about ½ cup each) and place on prepared baking sheet. Cover and refrigerate for at least 1 hour.

3. Preheat a large nonstick pan to medium heat and coat with canola oil. When oil is hot, place crab cakes in pan and cook until golden brown, about 3-5 minutes per side. Be careful as oil may splatter. Serve immediately with tartar sauce or a squeeze of lemon.

Quick Tartar Sauce

Ingredients:
1 cup mayonnaise
1 tablespoons dill pickle relish
1 tablespoon minced onion
2 tablespoons lemon juice, to taste
Salt and freshly ground black pepper, to taste

CALIFORNIA OMELET BITES
PACKED WITH PROTEIN

What you’ll need:
4 whole eggs
12 egg whites
2 cups diced cooked chicken
12 slices bacon
1/2 red pepper, chopped
1/2 green pepper, chopped
2 cups chopped fresh spinach
1 avocado, cubed (optional)
Salt and pepper
Nonstick cooking spray

How to make it:
1. Preheat the oven to 350°F.
2. Cook the bacon in a pan over medium heat only until it's cooked through, but not crispy, about 5 minutes
3. Spray a muffin tin with non-stick cooking spray and place one piece of the bacon in each tin, wrapping it around the outer edges.
4. In a medium bowl, scramble the whole eggs along with the egg whites. Add a dash of salt and pepper. Add the chopped red and green peppers, spinach, and diced chicken. Combine thoroughly and then pour the mixture into each of the muffin tins lined with bacon. (Tip: A soup ladle will transfer the mixture without spilling.)
5. Bake until the eggs are fluffy and slightly browned on top, 30 to 35 minutes,

Well, this weekend turned out well with my eating. But because I couldn't cook, I'm a little worried about the week . . . any suggestions, y'all? Something easy and not too time consuming since I am on overtime starting on Monday . . .

Cheesecake Popsicle

Ingredients
(8) 5-ounce Dixie Cups
popsicle sticks
8 sheets graham crackers, crushed( low carb sub crushes wallnuts or other nuts.)
2 tablespoons butter, melted
2 (small) packages sugar free cheesecake instant pudding mix
4 cups milk
sliced strawberries and blueberries
Instructions

Crush your graham crackers into small pieces, using a food processor, blender, rolling pin--whatever you've got!
Stir in melted butter to combine.
Combine pudding mix and milk, whisking together until smooth.
Add a small layer (a spoonful or so) of pudding mix to the bottom of your cups.
Next, add a layer of your graham cracker "crust" (again, about a spoonful).
On top of your graham cracker crumbs, layer in a few sliced berries. Fill cups up the rest of the way with the remaining pudding mix.
Insert Popsicle sticks and freeze until set.

CAULIFLOWER TORTILLAS!!!
(how awesome is THIS???)



Ingredients:

1 medium head of cauliflower (all the florets)
3 eggs OR 4 egg whites
^ yup, that’s it!

Instructions:

Preheat oven to 375 degrees
Use a food processor, blender, or hand grater to grate the cauliflower into a crumb-like texture
Microwave the cauliflower for 5 minutes, stirring a little halfway through
[If you don’t want to use a microwave for Step 3] Move the grated cauliflower to a pan and add 1/4 cup of water. Cover the pan and steam over medium-high heat for about 8-10 minutes. Just make sure to stir half-way through to avoid the cauliflower from burning. Keep in mind that you will have a bit more water to squeeze out.
Place the now-cooked cauliflower in a kitchen towel, that is on top of a sieve, on a bowl (wow, that was confusing.. look at the pictures below). Make sure to drain as much excess water as possible.. there is surprisingly A LOT of water in cauliflower
Mix the drained cauliflower and eggs until smooth
Place the mixture on a baking sheet into circles at about 1/4” thick.
Bake for 10 minutes. Flip. Bake for another 5-7 minutes. This is important to dry out the tortilla
Move the tortillas to cooling rack to cool, so the bottom does not become soggy.

Turkey & Veggie Balls (high protein low carb)

450g of extra lean ground beef
776 g of extra lean ground turkey
1 stalk celery
1 medium carrot
1 medium onion
1/3 c. egg whites

1/2 tsp. salt
1/2 tsp. garlic powder
1 tsp. cumin
1/2 tsp. thyme
1/2 tsp. pepper
1 tsp. chipotle pepper

1. Get a chopper, you will thank me later.

2. Chop veggies and mix in with all ingredients in a large bowl.

3. Preheat oven to 350degrees, bake 20+ minutes til cooked thoroughly.

Makes 32 meatballs.

Per Meatball:
60 calories
0 carbs...(?? even with carrots?? ) 3g fat
8g of protein

ZUCCHINI CHEDDAR BAKE-Under 300 Calories!!!

Serves:
6
Cooking time:
Ready in 50 min
From:
Taste of Home
Ingredients:

4 cups (1 L) thinly sliced zucchini (about 2 large)
2 cups (500 mL) thinly sliced cremini or white mushrooms
1/2 red onion, thinly sliced
1 tbsp (15 mL) olive oil
½ tsp (2 mL) dried oregano or basil
½ tsp (2 mL) salt
¼ tsp (1 mL) pepper
1 cup (250 mL) grated cheddar cheese

Directions

1. In greased 8-cup (2-L) shallow baking dish, layer half of the zucchini, then all the mushrooms and onion. Top with layer of remaining zuc-chini. Drizzle with olive oil; sprinkle with oregano, salt and pepper. Top with cheese.

2. Cover tightly with lid or foil and bake in 400°F (200°C) oven for 30 minutes. Uncover and bake 10 minutes longer or until vegetables are tender and cheese is bubbly.

Minute Microwave Lasagna in a Mug (low Carb)
3 Tbsp pizza sauce (no-sugar added. I use store brands)
3 Tbsp cottage cheese or 2 Tbsp pesto
1/3 cup fresh spinach or greens
2 diced green olives
4 slices pepperoni
1/2 cup shredded mozzarella cheese
Layer in pizza sauce. Top with pesto or cottage cheese. Add a layer of pizza/lasagna toppings. Add cheese. Press gently. Microwave on high (my microwave is 1000 watts) for one minute. Let cool slightly. Serve.
Makes 1 serving.
Share. Maybe.
Make extras ahead and refrigerate the rest for another day.

Still plugging away.. .. down 54.3 ... not losing as much now.. but anythings better then nothing or a gain , that's for sure!! I'm in this for the long hall, so that's ok..

Got a pool put up at home.. lovin swimming and the summer weather.. Hope to get in there a few times a week and do some more walking.. problem is the MIL wants to walk with me.. I don't care that she does.. but I wanna walk with my ipod on.. and she wants to yack.. :/ makes me not want to walk.. music is better for exercise.. :P so I think I'll tell her.. if you can keep up , you can walk with me, but Ima Jammin..

blood sugars and pressure are still doing great!!.. lovin that part the best..

ok gonna get.. be safe and live life this summer.. cause winter will be here before we know it.. booo..lol..
