put some evoo on your asparagus ... wrap about 3 of them in a slice of bacon.. bake them till tender.. .. yummm

didnt get a trim... did get the salad though..

dinner was talopia and mashed cauliflower

Here's the recipe, but it is NOT low carb!

Raw Banana Cream Pie

Crust ingredients:
1 cup raw cashews (can buy from Trader Joe's)

1/4 tsp Celtic Sea Salt (regular table salt is poison to your body!)

and grind well
Add the rest of the filling ingredients and blend til everything is creamy and smooth.
Pour cream filling into crust. Smooth out with the back of a spoon.
Cover and place in freezer most of the day or overnight to firm up.
Remove from freezer at least 10 minutes before serving. Slice while still frozen.

Some, like my dh, like this while still frozen, but I like to let it thaw (after slicing) to get more of a real banana cream pie texture.

We've served this to guests several times and everyone loves it and wants the recipe.

A nurse on the pediatric ward, before listening to the little ones' chests, would plug the stethoscope into their ears and let them listen to their own heart. I will be making this tomorrow..
Attention shrimp lovers!!
Try this quick way to make fabulous shrimp.

Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste

I think there is something wrong with my scale. It says I've lost 0.2 lbs since the date on my avatar. That can't be. I've been eating like a pig this month due to outside stressors I allowed to get to me. Not an excuse...just need to figure out how to deal without reaching for food.

With that said, I'm back on the low carb wagon as of today.

As for the scale...a friend of mine was in the hospital recently and they weighed her 10 lbs heavier than my scale says...I've been to the drs office recently and it was 8 lbs heavier but that was fully clothed and after eating all day, so I don't know. Doesn't matter, really, since I really only use the scale as a gauge and not as "holy writ."

Hey Everyone! Hope you are having a great beginning for your week!

I heard something the other day that FINALLY made it into my brain! It said that we should not use our cravings, the appearance of food or the taste of food as part of our decision to consume. The first thing we should consider is "Will this provide healthy fuel for my body?" I had the opportunity to try this out at church on Sunday.

Our church always has coffee, tea, water, pastries and/or cookies in the Foyer. For this reason, I choose to come in through the kitchen door instead of the front door, because I can usually avoid being tempted! This past Sunday they also had two large plates of pastries in the kitchen, so I did have to pass right by them on the way to the sanctuary. I made it into the service, but kept thinking about those darned things for the next hour.

Just as I was about to give in and grab something I would have regretted, I decided to finish drinking the water I'd brought with me. When that was gone, I pulled out a packet of my own healthy tea and went to the Foyer to get some hot water for it. There were still muffins on a platter out there, but I opted for a tangerine instead. I got the hot water for my tea and went back into the service.

A considerable number of people in our church are becoming more health-minded, which is why the tangerines were there. Now, I don't really need to eat at church. I don't think any of us need to! But when the food is there and I "can't" have any of it, I feel deprived. So having a healthy option there was a blessing to me.

I THINK I can now pass up French fries for the rest of my life. When I was reading about the trans fats in those things, I thought about putting that garbage in my body as fuel. It didn't bode well!

I don't think I will feel deprived passing up most white breads (or the molasses-laced stuff they try to pass for "whole wheat" bread) anymore. Once I learned about the process for stripping all the nutrients from the flour and then bleaching it with toxic chemicals, it just didn't sound good anymore.

Apparently my best-learned lessons come from the School of Hard Knocks. I can hear something over and over and over again, but it takes awhile to really get it in my brain; and usually only after I've messed up again and again. Go figure.

I think thats with most of us... at least for me too..lol.. good choice with the tangerine..

What a day.. started out gloomy and gray out.. put me in a blue mood.. wanted to lay in bed all day and watch TV... but I thought.. NO.. so.. got myself all prettied up.. went to Meijers to exchange some vitamines.. then to Menards... bought a wheelbarrow...:P... then went to lunch.. Chinese place.. did well...went to a few flea market kinda places in town.. dropped some stuff off at the house.. then went to Lowes and got some veggies for the garden spot.. during this time.. the sun came out and ws just beautiful for the rest of the day.. went home.. cleaned up the back yard a little.. then had to get cooking,,,, Made some of the low carn cheddar biscuits.. .. for my grab and go brekki... then made dinner.. chicken thighs with motz cheese rolled inside then wrapped in bacon,. delish... also make twice baked taters for the fam.. then zuchinni fried .... delish.. have some for left overs...

boy I am tuckered out.. so sweet dreams friends
