Happy Resurrection Day!

Had a buffet lunch at the only restaurant here. Not low carb. Not vegan. Not healthy. Not too good, either! 'Nuff said! I'll just be having a green smoothie for dinner, and back to juice tomorrow.

RED LOBSTER BISCUITS
Description:
Ingredients:
8 ounces of cream cheese
4 large eggs
2 cups of pork rind flour
1/2 cup Parmesan cheese
1 tsp baking powder



1/2 cup shredded Italian cheese mix
1 cup shredded cheddar cheese
1 tsp pepper
1 tsp garlic powder
1 tsp parsley

How To Prepare:
preheat oven to 425 degrees
bring eggs and cream cheese to room temp. mix until well blended. add the dry ingredients, spices, and cheeses to the wet mixture
and blend, mixture will be thick. grease the muffin tines and mound the mixture in (lemon size) bake at 425 for 12-15 min. remove from oven and brush with melted butter

Number of Servings:
12
Carbs per serving - include all nutritional information if known:
about 1.5

Nope.. I sent her the recipe... wasnt sure if we could post it out in the open..lol.. so0o0o0o..

ate a little off course today.. just had some rice and corn stuff from the Japanese place.. pother then that.. I'm good.. food wise....

Hello All-

I'm feeling really good. I've either been walking or bouncing on the Rebounder for exercise, and my body loves the fresh organic foods I've been eating. Tonight I am making Fettuccine Alfredo. I found some pasta made from whole grains and no wheat. No other additives, either. You gotta watch out for those! (Anytime it says "enriched" on the label, that is their secret code for "We already took all the good stuff out, so now we are putting fake, genetically modified ingredients back in to make it look healthy.") I'll top off the pasta with freshly steamed broccoli and sauteed mushrooms. And, as always, we eat the BIG healthy salad first!

My weight stayed the same this week, which made me VERY thankful. I guess all the exercise helped me not gain weight from the Easter buffet and a bad day off-island. I'm back on track now and truly motivated. (Just need to tel dh to stay away from me with his darned 1/2 price Easter candy! It's one thing if I see him eating it and I ask for some; but he walks up to me and offers it, and that's not cool!)

Glad to see everyone is doing well. BellaRose, let me know if you try those biscuits! I'm going to be trying some made with organic buckwheat groats in a few days, but they probably won't taste as good as the Red Lobster ones.

Lasagna Soup

Lasagna Soup

Ingredients Add to grocery list


1 lb ground chuck
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 teaspoon thyme
1 tablespoon firmly packed brown sugar ..will use splenda
1 (32 ounce) box chicken broth
2 (14.5 ounce) can petite diced tomatoes
1 (15 ounce) can tomato sauce
2 teaspoon Italian seasoning
1/2 teaspoon salt
2 cup broken lasagna noodles ...will not add
1 (5 ounce) package grated parmesan cheese
2 cup shredded mozzarella cheese

Directions



In a large Dutch oven, combine ground chuck, onion, bell pepper and garlic. Cook over medium-high heat for 8 to 10 minutes, stirring occasionally until beef is browned and crumbles. Drain well.

Stir in thyme, brown sugar, broth, diced tomatoes, tomato sauce, Italian seasoning, and salt. Bring to a boil over medium-high heat; reduce heat and simmer 20 minutes. Add noodles, and simmer until noodles are tender. Stir in Parmesan cheese.

Preheat broiler. Ladle soup into 8 to 10 ovenproof bowls. Evenly sprinkle with mozzarella cheese. Broil soups, 6-inches from heat, 3 to 4 minutes, until cheese is browned and bubbly.

GRRRR!!! There is a lady on the island that is always losing and gaining weight. I am happy for her when she is losing, but that's all she talks about. Once she was bragging about her weight loss and she said (about the blouse she was wearing) "Look at how huge this blouse is on me! I should give it to you, because it would probably fit you better."

I come HERE to talk about weight loss! I don't try to have people notice me or talk about it all the time here. I've lost just 16 pounds (yes, I'm happy for every one of those!) but I don't talk about it anywhere but here. Now I get to listen to this gal, and our paths cross at least three times a week, since we attend three of the same things every week.

A very dear friend and I, once upon a time, were in WW together. She was losing faster than I was (everyone seems to!) and everywhere we went (and I mean EVERYWHERE!) she pulled out before and after photos of herself for strangers. At fast food restaurants, grocery stores, you name it. Then she became a WW instructor and borrowed back big clothes she had given me to show how big she used to be. I had to sit in her class and have her hold up the huge jeans she used to wear that were now mine. I felt awful.

I wish I could lose faster, but I've always lost pretty slow. Now with this one lady here losing weight, I'll have to have my nose rubbed in it every time I see her. She's nice enough, but not too bright.

I WANT other people to lose weight! I wouldn't wish obesity on anyone, honest! I just wish that weight loss wasn't the topic of conversation everywhere I go. Except here. Cuz that's what we're here for... to lose, to share, to encourage.
