Sweet Chicken Bacon Wraps
Makes 12-15 wraps

4 boneless, skinless, chicken breasts
1 (1-pound) package sliced bacon
2/3 cup firmly packed brown sugar.. this girl will use splenda
2 tablespoons chili powder

1. Preheat oven to 350 degrees F.

2. Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

Had two kinda lazy days off Sunday and MOnday.. I did get some exercise in yesterday.. Leslie Samone ... I think thats her last name.. the walking videos.. and 25 push-ups against the counter.. :P

food was 2 eggs.. lunch left over bbq ribs ( home made sauce) and broccoli dish.. will have the same today.... diner was a spinach hamburger dish of Linda Sues and some tofu noodles with alfredo sauce..

dinner,,, who knows,,lol

todays eats.........

cottage cheese with splenda and cinnamon

left over bbq ribs and broccoli cass.

Banonator baby.. oh and a side salad..

just ate some cheesey bread ( lc deep dish pizza crust) and making some zucchini chips with 3 diff. flavors..

gotta run..

Pizza Casserole

1 lb to 1 1/2 lb. ground chuck (you can use ground beef, I just prefer ground chuck).. maybe sausage instead?
1 cup sliced pepperoni
2 jars or cans of your favorite spaghetti sauce
1 cup chopped sweet onion (I used Vidalia)
1/2 cup chopped green pepper
1 Tbs. minced garlic
1 16 oz. pkg extra wide egg noodles.. aka tofu noodles
8 oz. Velveeta cheese, cubed
2 Tbs. butter
1 Kraft Philadelphia Cooking Creme, Italian Cheese and Herb Flavor
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 cup grated Parmesan cheese
1 tsp. salt
1/2 tsp. black pepper
1 tsp. dried basil
1 tsp. dried oregano
1 Tbs. sugar.. aka splenda

lunch.. left over rotisserie chicken and a roma tomater

Dinner.. chinese.. this spinach dish.. salmon.. chicken on a stick.. garlic and butter shrimp and stuffed mushrooms..

B 2 scrambled eggs.. with saute'd zucchini.. green peppers and mushrooms and a slice of cheese

L.. steak .. cheesy broccoli.. and tofu noodles cooked up with onions in the steak juice..yum

D.. salad with a hamburger on it.. mayo.. sf relish and a tad of catsup.. a roma tomato..

S did have some carb smart icecream..

Hi Rebecca, Lisa and Raini. I had one bad eats day but other than that I'm plugging along. What I'm fighting right now is lack of appetite. Usually when my back flares up I eat for comfort but not this time. Now the thought of food is unappealing. I know I need to eat more. Yesterday all I had was a Wendy's salad and a slice of cheese. Today I hope to do better.

Lisa, not sure what time I will be there tonight. Sometime between 6:30 and 7:30 maybe??? Have physical therapy tonight.

Ello ducky..

I'll see ya when you get here ... or there..to my house..lol..

I wish I had the feeling of not wanting to eat.. :/ The scale has read high all week.. so I do not see that changing by the morning..

the only thing I can think is the cheesy stuff I have ate this week..:/

So, next week I am gonna get back to the basics and keep it simple.. no recipes.. just veggies and meats.. see how that goes..

I have low carb options for my Easter dinner so I am not worried a bit.. I have also will have carby stuff.. but I will not have any.. and that's ok.. I choose not to.. Easter is about Christ... not about my food addictions.. It's not a time to just pig out on what I want.. matter of fact, I'm pretty sure he wouldn't like that..

so.. That is that.. will post my days menu tonight.. have a Blessed Good Friday all!

Don't let it get you down monet!! This way of eating is a "personal taste" for your body. I can't eat cheese either (and stay in Ketosis)!

Hi Dusk!! I had an UgLy run in with SF candy. I've moved on and I'm ok with it.

So... had my appt. with my nephrologist. Lonnnngggg story.... Apparently my kidneys weren't functioning well at least all the way back to 2009 but no one seemed to pay attention to lab results. Makes me wonder about lab results when we lived in Oregon.

The good news for all you ladies- he does not think that my low carbing caused my kidney disease.

Not so good for me- he thinks I might have heart disease, which in turn could have caused the kidney disease. So I have to have an echocardiogram. Also have to have a sleep study, to see if I have sleep apnea, which could have caused heart disease. It just gets better and better, huh?

Doc is happy with my current WOE - lots of fresh veggies, veggie juice and vegan choices. I know I can't do low carb any more- my kidneys can't handle it - but I miss all the yummy recipes. But I am learning lots and lots and lots of NEW yummy recipes. Tried them out on ds and dil and they loved them! How about Chia pudding? (Ch-ch-ch-Chia pudding!) Dil scarfed it down! Banana cream pie! WOW! Lots of huge lovely crunchy salads. I will NOT feel sorry for myself!

My kidney doc has agreed that I do not have to get weighed when I go in for appointments, but asked me to weigh myself and keep a chart. I love this man!

Headed to the tub for a nice, long soak. Ahhhh......

up .2 this week... nothing to sneeze at..

I will be watching my cheese in take.. and portion.. and see how it goes.. I am still down 19.7 for the year.. .. would I like to be more down.. of course.. but hey.. it is what it is.. so0oo.. lets move on,... warm weather should be coming SOON.. so I will be getting out in the yard and start waling the neighborhood.. .. will help things move a long..

Its also time for TOM to come visit... not that I like him at all.. but .. could also be why I'm showing a gain..

Ham... a cauliflower dish. green beans..and Angel eggs... and a bit of sugar free carb smart icecream..

Made it thru a Holiday dinner low carbin..
