Peel off the paper while it’s warm, and put something in the center so you can stuff it later.
Let cool, and you’re done! YAY!

Bacon taco shell:

Lay about 6 paper towels on a plate, and line up 6 pieces of bacon; about 1/4″ overlapping the edge of the next piece of bacon. I flipped the bacon so edges were alternating, but kept the meaty part to go over the fat part. It always seems that one edge seems a bit wider.
Cover with 2 paper towels, and heat at least 5 minutes. (My microwave normally takes about 2:30 for 2 pieces of bacon for reference. This took about 5:30 minutes.)
Then, the same as with the cheese. Lay out, and put something in the center to keep the mouth of your taco open.
And repeat as needed.
and look, low carb tacos!
These were low sodium…and shrank like crazy. BUT…they worked.

Seeeeee . . . you're yelling already!

Okay . . . in a pm . . .

Whew . . . I'm worn out. Went to the gym this evening to put in a workout. I am so desparate to get my wind back. I huff and puff like a steam engine that thinks it can but can't quite make it. But I'll keep trying. It can only get better from here.

(of course, except for the asthma attack I'm having now . . . )

TACO BAKE - Linda's Low Carb Menus & Recipes

Made Linda Sue's Taco Bake tonight. It was good but would have been better if I had some salsa. The stuff in the frig was old and I didn't want to poison myself eating it.

It's soooooo disheartening when you lose a post . . . But when you lose TWO it's even worse!!!! grrrrrrr

What I was saying waaaaassssssss . . .

There is no STINKIN' way the scale said what it said this morning! It showed an 11.9 pound drop in a few days. I think NOT! Tomorrow is weigh in day and since I'm having bacon, eggs and chorizo this morning/afternoon, and then going to LIsa's house for pizza with more salty things on top, I doubt very seriously the numbers will be so kind tomorrow.

Here's a thought, Lisa . . . since we have girls night almost every saturday evening, maybe we should move our weigh in days to saturday mornings? That way we can relax and not have to worry about taking in too much sodium during girls night.

Think about it and let me know what you decide.

(I liked my first post better)

Had a wonderful time tonight, Ms. Lisa . . . or should I say, last night. Thank you so much for making our pizza and indulging us in a decadent strawberry dessert. Yuuummmmmmmm!

Went to the gym (not Jim) after I left your house. I was surprised that I could get a workout in before the day ended.

Hope your weigh in goes well tomorrow.

Oh good grief . . . woke up with a terrible migraine this morning.

Well, the scale doesn't show an 11.9 drop in weight this morning. I think when i weighed yesterday the scale was a bit whopper-jawed and a corner of it was on the throw rug. No worries, though. Still showed a 3.7 pound drop since my last weigh in. Can't complain about that, huh?

new song

lyrics

Been caught in a downpour of a rain of stones I felt like an exile in the world I had known So I sought the shelter of my own soul And stayed inside
I found no comfort in placing blameI saw the hope that lay just beyond the painThe past is a prison and I won't wear those chains And I won't hide, oh no
I will be here, I will be strongI'll face my fears when the night is longAnd still go onI will be brave, I will be boldFollow my faith to a higher roadAnd I'm not there yet but I will be, oh yeah
I could choose to keep my feet upon the beaten pathNever cross the open field for the one snake in the grassBut I'd rather risk my heart then never get the chanceTo find my way, to find my way
I will be here, I will be strongI'll face my fears when the night is longAnd still go onI will be brave, I will be boldFollow my faith to a higher roadAnd I'm not there yet but I will be
Oh yeah, I will be here, I will be strongI'll face my fears when the night is longAnd still go onI will be brave, I will be boldFollow my faith to a higher roadAnd I'm not there yet but I will be
I will be here, I will be strongI'll face my fears when the night is longI will be brave, I will be boldFollow my faith to a higher road
I will be here, I will be strongI'll face my fears when the night is longI will be brave, I will be

I've learned a few more things! This is sooooooooooo coool! Unfortunately I wasn't aware that my body was withering away to nothing because I hadn't fed or watered it since this morning. I just scarffed some grub and it was goooood . . . fish eyes would have been good as hungry as I was, but I digress . . .

Breakfast was chorizo, eggs and bacon

Lunner (yes LUNNER - combo of lunch and dinner) was pork roast and green beans with some cream cheese frosting for dessert. I am still going through diet coke withdrawals. I'm not a sweet eater as a rule, but I like the sweetness of diet coke on my tongue. I'm gonna get some sf jello to help with that. It should keep the calories down and keep the, uh . . . plumming from backing up on me. (cream cheese and peanut butter do that to me)

Okay . . . scotch eggs made with Jennie'O turkey sausage are good, but when they thaw out after being frozen, they ooooooze with liquid! You need a bib to eat them! Guess I won't be freezing these again. And the "on the go muffins" do the same thing. When they thaw out they absorb all the liquid and then dribble down your chin as you try to eat them . . . very messy . . . I need to find another kind of breakfast on the go that is lowcarb . . . something that can be frozen . . . something that can be eaten in the car with one hand . . .

I couldn't sleep so I went to the gym this morning. No one was there. I did my back rehab exercises. Might as well go to the gym to do this. They are exercises . . . and I will get reimbursed $20 for going to the gym 12 X's a month, so I'm making the most of it. Hoping it will become a habit, actually.

My ketone strips are showing a good reading again, Lisa.

I hope you have a relaxing day off today.

You had me at "Ooze with Liquid". I love the idea of Scotch Eggs! I've never tried them though. I will eventually.

Awesome job on the gym visits! I love seeing a dark ketostrip! WOO

I like the meat roll up idea. That might be the way I go . . . slap some cream cheese or laughing cow cheese on some salami for the drive into work . . . yeah, I can definitely wrap my mind around that one!

Biggest loser finale was a close one tonight, that's for sure!

Okay. . . gotta get some rest.

BTW, it's getting easier to stay away from the diet coke . . .
