Thanks Seabreezes and Magie! It turned out great! The meringue/hazelnut layers were soft and it was easier to cut than I expected. Everyone loved it. My Mom said it should be our new birthday cake.

Here's the recipe (so I don't forget for next time)

Low Carb Sugar-free Hazelnut Torte

Layers:
6 egg whites
1/2 tsp cream of tartar
1.5 cups of granulated Splenda
1.5 cups of ground hazelnuts (roasted)
2 tbsp of sugarfree cocoa powder

Filling:
3 cups of heavy whipping cream
1/4 Lindt Madagascar Chocolate bar
1/3 cup Splenda
2 tsp vanilla extract

Whip egg whites, cream of tartar, Splenda in blender until stiff peaks form. Mix the cocoa into the toasted hazelnuts and fold into egg whites.

Cover 2 jelly roll pans with parchment paper. Draw three 8" circles then spread the meringue mixture into the circles evenly. Bake for 30 mins at 350F and then an additional hour at 200F. Rotate pans after first 30 mins.

Whip the whipping cream with vanilla and Splenda until soft peaks form. Assemble cooled layers (don't forget to use a dollop of whipped cream on the plate to keep the layers from slipping around) Layer whipped cream and shaved chocolate and top with whipped cream and chocolate.

I made it the same day, but you can make it a day before.

Any filling can be used for this cake--the original recipe called for buttercream, but my Dad hates buttercream so I used whipped. I think it would be more like a cake with buttercream or even cream cheese frosting.

SIX MONTHS!

I promised to keep this blog for one year and I'm now at the half way point! I'm not sure what makes me happier--my 40+ lb weight loss OR the fact that I said I'd do this and I've stuck with it this long.

I feel that I've accomplished something and I couldn't have planned it better, as tomorrow is my birthday! WOW.

It's my BURTHDAY, my BUH-BUH-BUH Burthday!

So, I'm 42 big ones today.

I've acknowledged it, now I'm moving on.

So, here's something about me that I hate to admit but it's true and I want to shed some light on it.

Today is my birthday, but because of my sister in law wishing me HB yesterday on Facebook (because she is in Panama today) everyone saw the post and I received TONS of well wishes yesterday but TODAY is my birthday. Even though I told everyone that it was today, everyone just kept on following the last person who posted and wished me a happy birthday. To make matters worse, my mother forgot what day it was and wished me a HB yesterday, as well.

I feel all discombobulated, as if I missed my own birthday.

Silly...yep...but I'm trying to identify my feelings (my psychologist told me to do that when I saw her a few years ago).

So, without further ado:

Thanks for the birthday wishes!!!

Whew, just dodged a huge bullet!

I guess my co-workers got together and decided to buy me a cake and a card for my birthday (we don't usually do that, so I had no clue). They surprised me and then I cut the cake and to my surprise, they all tried to get me to eat the cake.

I dodged the bullet by handing out cake to everyone, then giving out seconds, then asking our students if they wanted some and then cleaning up the leftovers. By then, everyone had left my office and I just put my piece with the leftover cake (taking it home for my hubby).

I found the box in the breakroom---25 carbs per 1/10 of the cake. Meh. I probably could have tolerated it, but why? I didn't really want it.

Today is weigh in day---I am at 308.8 so I think that's lower than my stats and I'm going to update as soon as I'm done.

1 cup decaf with 5% cream
1 cup Chai tea

Lunch:
4 small roasted chicken legs (yeah, they're REALLY small)
1 oz gouda cheese

Well, it's Thursday and I've booked off Monday as a holiday. My husband is also taking that day off, as well as Tuesday in order to recharge his batteries for quarter end in May.

I've decided to have my hair done on Monday. My sister is going to do it at the shop where she works and then we're going to have lunch together. My husband will come along--it'll be fun.

I'm thinking of going fun and flirty. Blonde streaks to hide my grey hair and I'm also going to have bangs. I haven't worn bangs in more than 10 years.

Breakfast:
2 boiled eggs w/kosher salt
1 decaf with 5% cream
1 large decaf with 5% cream (from McDonald's!)

Crazy, crazy Friday in North America.

I feel for Boston this morning--they are not so far from us (Toronto). I can't imagine hearing gunshots outside my door and I certainly can't imagine the bombings that have happened.

Thankfully, they've found these guys.

Had my hair done today, had lunch with my sister, went to a government office to register for a human resources program that I require for my side jobs, had a pedicure, made my lunches for the week, made dinner and now, finally, I'm having a shower so hubby and I can spend the rest of the evening relaxing.

Today is weigh in day and I did weigh in but the scale is at a solid 310. I'm expecting my period and to be honest, as soon as day 3 arrives, I'll be taking the fertility meds, so it'll be very interesting to see the water weight that they cause.

It's widely reported that fertility drugs cause weight gain, but I'm curious to know if people who are already following a strict eating regimen experience the same weight gain. I'm betting on fluid retention, but it remains to be seen.

My friend is taking me out for lunch today (late birthday get-together) so it should be a nice day!

Breakfast:
2 boiled eggs with sea salt
1 decaf w/5% cream
1 chai tea

Lunch:
Don't know yet; probably a chicken Caesar salad

It's 2.00 pm and I'm just finding the time NOW to update my blog! I've been awake since 4 am! ARGH....

Since I have time now, I'm going to share all the things that are going on in my life....
1. Helping my Dad with the administration to settle the estate of my late Great Uncle. This includes sending emails, faxes and messages overseas to relatives who don't speak English. I have to muddle through with my limited Italian skills and Google translator!
2. Had to take an hour off work to pick up my lawnmower AND pick up documents from my parents related to this estate.
3. My IVF cycle has been cancelled for May because they neglected to tell me that my blood tests are expired. SIGH. I ASKED that freakin' question and they said it would be "all right". After work tonight, my husband and I have to have the tests taken again.
4. Tomorrow morning at 9.00 am, I have to visit a jeweler with my future brother in law to help him pick my sister's engagement ring. Then I have to go across the city to my cabinetmaker and check that my laundry room cabinets and vanity are made properly (before 1.00 pm) They will be installed Monday.
5. Also tomorrow, I have to purchase a laundry tub.
6. I have no washer or dryer right now (water is cut off because we have to install cabinets on Monday), so we can't do laundry at home.
7. Aunt Flo is arriving. I saw "arriving" because I've had symptoms for 2 days, but no dice.
8. On top of all this, a busy week at work and a very needy Mom who, when I call her EVERY DAY, complains about how terrible she feels....sigh.

If this had been any weekend last year, I would be stress eating myself into oblivion. I found myself wanting to pick up some Lindt chocolate when I passed by the bank this afternoon. I told myself that I would have that treat tonight with my husband....AND, I listened to myself!

Breakfast:
2 boiled eggs
1 decaf coffee
1 chai tea

Lunch:
4 smallish roasted chicken legs
1 oz smoked cheddar cheese
1 diet soda

Dinner:
Chicken breast stuffed with feta cheese

I was too busy yesterday to mention that I had weighed myself and even though Aunt Flo has arrived in earnest, I was down to 306.8...almost 50lbs lost!!!

I have a wedding in August, so it'll be interesting to see how much I can lose by then. I would like to buy a new dress, that's for sure. The last time I purchased a gown for a wedding, my sister was getting married and I was the Maid of Honour. Exactly 9 months later, my brother got married and instead of buying a new dress, I wore the same gown. My sister has since divorced but I still have that darned dress (I paid a fortune for it, which is why I wanted to wear it twice).

I just finished the majority of the work I had to do today, so I think I'm going to relax. I was feeling SO NAUSEATED this morning at 5.30, I had to take two Gravol and go back to bed. It was horrible!

3 eggs

None

Tomorrow is weigh in day--I think it'll be a good one (I hope, anyways!)

I'm proud to announce that I finally have cabinets in my laundry room and my new bathroom! With some luck, the plumber should come by sometime this week and hook up my toilet and washer/dryer.

Well, HELL. I weighed myself this morning and I've lost 4 oz since yesterday. I think it just may be the warm weather doing this. Every year around May, when the weather starts to heat up, my feet begin to swell and I retain fluid. I can ride this wave--no problem.

I'm definitely not eating more, so this can't be true "weight".

It's FRIDAY!

I weighed in this morning, even though it's not my "official" day. I'm at 305.8. That puts me at 50 lbs lost. I'm not calling it official until next Wednesday, though.

Weird thing happened to me last night. I went home and felt fine. I cleaned my basement (vacuumed the sawdust and cleaned up the "installation" mess). The plumber is coming next week so I wanted to make sure I cleaned up the mess beforehand.

I prepared dinner and left to pick up my husband and when I was in the car (a 3 minute drive) my stomach started to ache. By the time I arrived at the station and picked up hubby, my stomach was REALLY hurting. I went home and couldn't eat my dinner. I suspected that I was simply hungry, so I ate 4 chicken wings....that was a BAD idea. I was in pain the rest of the evening, even after taking 2 gravol. Eventually, I thought it might be a spasm, so I took one of my bedtime tranquilizers (for my night terrors) to see if it would help. Well, it DID help. The major ache stopped and I was able to sleep. Here's weirdness number two--at 2.00 am, I woke up with a splitting headache. I thought it could be due to not eating enough for dinner, but when I woke up with the headache this morning and breakfast didn't alleviate it, I knew something was wrong. Right now, I still have the headache, but I took 3 Tylenol No. 1 (with codeine) after breakfast.

I have had many weird auras with my migraines over the years---flashing lights, ringing ears and nausea but I have never had the stomach ache/spasm that I had yesterday. It was scary.

Breakfast:
2 boiled eggs
1 decaf coffee
1 decaf cofee

Lunch:
4 small roasted chicken legs
1 diet soda

Dinner:
Leftover chicken wings from yesterday (I hope!)
1 diet soda

Thanks, Seabreezes!

I felt yucky for half the day yesterday but by the evening, I was ok. Who knows? It was probably a glitch in my programming (ha!)....

My husband is at work today because it's quarter end at the bank. Since our plumber hasn't been back to hook up the water for our washer, I went to the laundromat this morning at 7.00 am and got all the bedding, pillows and miscellaneous clothing washed and dried. I now have the windows open and I'm dusting and vacuuming.

I LOVE SPRING CLEANING!!!

At noon, I have to go by my parent's place with some accounting I've done for them and then afterwards, we're having lunch (probably sushi).

Breakfast:
1 decaf coffee with half and half cream

Lunch:
A whole mess of sashimi

Dinner:
Steak on the BBQ
Fried onions (my fav treat!)

Today will be a short post without a menu update, for no other reason except that I have no clue what I'm eating today.

It's 8 am and I have finished all my important stuff for the day. Hubby is still in bed so I think I'll read my newspaper and water my plants. I have a big day of gardening ahead of me.

Yesterday I sanded a double Muskoka chair to ready it for staining. I did it by hand. Yep, today I can barely move. I had to sleep in one position last night without moving because the pain was intense---like a toothache. Back when I was 18, a doctor diagnosed the pain as fibromyalgia, but I'm still not 100% convinced. Last night, I thought I would die from the pain (literally, and I'm not a wimp!)

Breakfast:
2 boiled eggs
1 decaf coffee
1 chai tea

Lunch:
3 roasted chicken legs
5 pieces herring
1 diet soda

Dinner:
1 trout filet
leftover spaghetti squash
1 diet soda
