I'm recording my cheesecake recipe here because it's the best one I ever made:

Ensure all ingredients are at room temperature!

1 8" springform pan
2 8oz cream cheese
1/2 c of strong black coffee
1 vanilla bean
4 tbsp of good cocoa
Equivalent of 2 cups splenda (I used liquid)

Crust:
1 1/2 c almond meal
3 tbsp butter
1/2 tsp pumpkin spice
2 tbsp cocoa
5 drops liquid splenda

Frosting:
8 oz cream cheese
1 cup sour cream
10 drops liquid splenda
3 tbsp cocoa

Press crust into sprinform and bake 15 mins at 375 F.

Mix cake ingredients (all except eggs) until smooth. Add one egg at a time, mixing only enough to incorporate. Scrape edges after each egg. Bake at 375 F for 50 mins with a pan of water in the oven. Let stand in oven with door open until cool.

Mix frosting ingredients, spread on cooled cake.

Day Seventy-Nine:

I weighed in this morning and my weight is still about a half pound up from my stats. Drat. Thank goodness I'm seeing my doctor on Friday morning. I really need to know what is happening to my body.

As promised, I'm sharing my menu:

Breakfast:

2 boiled eggs with a sprinkling of sea salt
16 oz decaf coffee w/ 2 tbsp of 5% cream

Lunch:

1 slice of home made meatloaf
2 leftover chicken legs
1 can decaf diet soda

Dinner:

1/2 pork loin stuff with feta and tomatoes
1/2 c. string beans
1 can decaf diet soda

(I know what I'm having for dinner--if I add anything, I'll come back)

Day Eighty-One:

I'm at my doctor's office for an appointment regarding my heart palpitations. They cleared up as soon as I ovulated but I still think it's safer to have it checked.

Last night I dreamed that I ate a plate of spaghetti and I was so disappointed in myself. In my dream, I was thinking of how badly the carbs would affect me. I'm really glad it was only a dream!

Breakfast:
2 boiled eggs with kosher salt
16 oz decaf coffee

Lunch:
1 slice home made meatloaf
Sugar Free ketchup
1 diet soda

Dinner:
1 trout filet
1 diet soda
* might snack on dark chocolate

Hi Melles, did you learn anything at the doctor's?

Your menus look great. I'd almost say you're not eating enough! I know when I was doing atkins alone I was eating more than that. I'm no expert but I'm thinking maybe your body thinks you're trying to starve it and hanging onto each pound for dear life. Just a thought...

Wishing you great success in the new year. I can't believe we're already into 2013!

Day Eighty-two:

Cleaned up the Christmas decorations today and repotted some house plants. Just out for some lunch with my husband.

Breakfast:

2 eggs
4 strips reduced sodium bacon
16oz coffee with 5% cream

Lunch:

Salmon sashimi
Smoked salmon
Grilled octopus

Dinner:
No dinner--lunch was plentiful and eaten late.

Hi Jan!

My doctor's appointment was uneventful. I'm perfectly healthy--sugar and blood pressure normal...thyroid is normal...no anemia...heart rate normal. The heart palpitations are likely stress but if I have them again they're putting me on a holter monitor for 24 hours.

I do eat when I'm hungry so I'm not too worried about going into starvation mode.
I did lose weight---this morning I was 327. Hope it sticks! !!!!

Yay for the weight loss! Your persistence is paying off! Its so hard to stick with it when the scales don't cooperate. But eventually the weight has to come off if we hang in there. I'm convinced that staying the course and not giving up is the only way to success. This is something I have to remind myself all the time!

Well, sticking to the plan regardless of what the scale says is NEW for me. This is exactly the reason why I've fallen off the wagon and gained more and more weight EVERY SINGLE TIME I've tried to get back on. I REALLY believe that I will stay on track this time because I feel committed to giving an update EVERY DAY. Even if no one is reading, I feel compelled to update.

This may sound strange, but it's not just the daily posts that keep me on track, it's the simple fact that I NUMBER them. Every day, I get to reflect that I have been ON TRACK for *whatever* number of days. That alone makes me feel good about myself. Somehow, I REALLY believe that if I stick with the blogging, I'll stick to the plan.

I really hope that others will find some kind of inspiration from my posts, but even if they don't, I know that this was worth it for ME.

I've been on the wagon 82 days--no binges. I haven't eaten a dozen cupcakes for almost 3 months! For me, that's nothing short of a miracle and I'm darn proud of myself.

You absolutely should be proud of yourself! I am so impressed that you have stuck with this through....so to speak lol....thick and thin!!

Keep blogging and keep doing what is working. I'm not online all that much these days, but I check your blog every chance I get. I'm sure there are a lot of us out here keeping up with your progress.

But you are right. Do it for YOU! And always believe in YOU! you are special and thank you so much for sharing this journey with us.

What a great Sunday this is! I managed to get all my housework finished yesterday so this morning I was able to wake up, watch some TV (have any of you watched "Catfish" on MTV? It's great!) and take care of some of my side work.

Right now, I'm in the clear except for doing my weekly shopping. I think I'm going to make chicken to take for lunch this week. I'm in the mood for it.

Today's menu is going to look a bit thin--I woke up late and ate breakfast, but I think we'll probably skip lunch and have a nice dinner. Only problem is, I can't figure out what to have.

Breakfast:

3 fried eggs
2 strips bacon
2 cups of decaf with 5% cream

Lunch:

*skip*

Dinner:

I'm thinking stuffed chicken breast with roasted green beans....

I'm still checking your progress! I love the thought that you think numbering your days is helping you.. I'll have to try that! Keep up the great work. I can only dream of accomplishing what you have. I'm not talking about the pounds lost, I am talking about the behaviors. You keep it up and the pounds are bound to drop off! Soon you'll have to change your stats if the new low sticks!! Oh, and I am so glad you are healthy! Your body is just being stubborn I guess! Keep it up honey!

Well, I weighed in this morning (not the official day) and it looks like my loss has stuck. I'm not counting my chickens before they hatch--the last time I said this, I gained 7 lbs overnight.

I'll wait until Wednesday to declare that I'm officially in the 320's and hope for another 2 lbs so I can call an even 30 lbs.

I'm taking the week of the 14th off, so this week is going to be brutal at work. I've called in my boss' daughter to help me (thank GOD she's available) so I'm hoping I'm not too stressed by the end of the week.

Today's Menu:

Breakfast:
2 boiled eggs with kosher salt
16oz decaf coffee with 5% cream
1 cup green tea w/splenda

Lunch:
3 roasted chicken legs (small)
1 oz mozzerella cheese, cut in cubes
1 diet soda

Dinner:
1 chicken breast with cheddar cheese and salsa
1 diet soda

Another doozy of a day at work today. I'm getting started as early as I can to minimize the rush. Boss' daughter did very well yesterday and I'm having her come in again tomorrow.

Today's Menu: (one day before weigh in!)

Breakfast:

2 eggs boiled with kosher salt
1 cup of decaf coffee
1 cup of green tea

Lunch:
4 roasted chicken legs
1 oz mozzerella cheese
1 diet soda

Dinner:
Pork loin stuffed with feta and tomatoes
1 diet soda

Well, today was weigh in day and I'm VERY,VERY proud to say that I have now officially lost 30 lbs! I weighed in at 325.4 which is the lowest I've been for about 3 years.

Very busy at work today, but I'm still bursting!!!

Breakfast:
2 boiled eggs with kosher salt
1 cup of decaf coffee with 5% cream
1 cup of green tea

Lunch:
4 roasted chicken legs
1 oz mozzerella cheese cubes
1 diet soda

Dinner:
1 chicken breast with salsa, bacon and cheese
1 diet soda
3 tsp garlic mayo

Have a great low carb day, everyone!

I'm so tired today.

My husband takes a commuter train to work and I drop him off in the morning and pick him up in the evening. Usually he's home by 7.30 so it's not an issue, but last night he had to work late and I picked him up at 11.00 pm. To make matters worse, we watched "Catfish" until midnight. ARGH. Why did I do that? I'm exhausted today (after 5.5 hours of sleep)....

Not good for my weight loss....

Breakfast:
2 boiled eggs with sea salt
1 cup of decaf coffee with 5% cream
1 cup of green tea

Lunch:
4 chicken legs
1 oz mozzerella cheese
1 diet soda

Dinner:
1 veal chop

Hi Melles! Wow! Yay! Whooppeee!

I knew you'd hit that 30 lb loss mark on Wednesday!

30 lbs is a LOT! Think of 6 five lb bags of sugar. You are doing really really good.

And I bet that because you're not losing it too fast, it is going to stay off this time! You are trying new things this time around, and they are working! I have found this is one piece of the puzzle for me. Keep trying until you find what what works.

WTG Congratulations! Picture a new goal weight number in your head, it doesn't matter what number, just be sure it is one you know you can reach. Then set a new one...rinse and repeat
